This is certainly a old-fashioned way of making this dish, don't think it would be accepted by customers in restaurants this century, and to serve it on a side plate is unprofessional, I think it time to hang your apron up and make way for the young generation chefs 👨🍳👩🍳
Maybe instead of being a fuckwit you could offer your wisdom. You obviously think you’re better than the chef, so please enlighten us with your wisdom. This is a great recipe for traditional lamb shanks, and imo, the best. No bullshit, just lets the flavour of the lamb shine.

Why on earth would you add in the garlic when searing the meat? It will just burn and add a bitter flavor...
