I don’t like to sound like a smart Alec, but I think there are some people in Melbourne who might disagree with the statement that “… it doesn’t really matter what kind of mushrooms”

Doesn't Indian cuisine also feature smoking charcoal in some dishes? It seems unusal, but it probably works well to deliver a deeper, smoky flavour.

I think the warm sugar syrup melts the choc and cooks the egg in the blender.
