It took me awhile to figure out how to do this as well. Using butter works better than the oil. I do hear that Ghee is good too. I prefer to use olive oil. I let my pan get hot on medium to high medium heat it depends if I am in a hurry or not. I put my oil in, take it off the heat and swirl the oil around. I then turn down the heat to low or medium low. Then I put my eggs in. You are going to have to play with the heat on your stove as every one is different. You have gas so it will be easier to play with than electric. I hope this helps you. 😊
Try good quality butter for taste and nonstickness. I'm curious what your results will be. I just bought a new carbon steel pan and spent time seasoning it today. Hoping it can get nonstick enough to not even need oil/spray/butter to fry an egg.
Your issue with the first couple eggs was that you touched them too early and you didn’t put enough oil in your pan. Next time more oil or ghee and let the eggs release on their own.
Much easier is to make an omelet first, then the pan becomes non stick. After making omelet, just wipe the pan clean, don't wash. Keep it aside to use later whenever you need fried eggs. Will not stick
