    There is a fourth method.
I learned it from an ex-navy cook, cooking eggs for a large number of people.
It works for single eggs too.
Start the egg in the pan as normal, when the egg is part cooked add a little water and cover with a lid.
The top white steams cooked and the yoke remains runny.
A perfect egg, completely cooked and looking great.

@@redmangoaty sunny side up does not require a lid. Putting a lid on top causes steam to cook the top of the egg getting rid of the sunny side ups signature bright yellow yolk.

@@redmangoaty I believe it's over easy. The condensation would make the egg soft. A sunny side up egg is crispy.

The way I do it is with a flip. I get the bottom cooked like you, but before the top is set I flip it. It needs to be quick, but, you do like, a minute 30 to 2 then another minute on the other side done throughout and soft throughout. Do 2 minutes a side to gell the yolk. Other than that, it's the same.
    Good stuff, mate.

I'm using method 1 with butter and on a very low heat. I'm trying to avoid salting the egg yolk because I don't like the white, firm spots on it. And at the end of the process I'm braising the egg like you demonstrated in method 3. But I'm just shaking the pan to get the job done. Well done mate.

When I do a fried egg I use the spalsh of water with the lid on towards the end (like a few others have said). But all in all you've made a very good video here about how to fry an egg - there is more to it than people think (as you alluded to near the end of your video). So thank you for these three methods. Hi, Adam. First of your many excellent videos that I can't agree with. IMHO, no part of a fried egg should be crispy. My method uses a quarter inch or so of fat, just hot enough (ie a single drop of whatever I happen to be drinking boils when dropped in); tip in the egg; spoon fat over it until the top is cooked, there's no snot and the top of the yolk is just starting to go white. Whip the egg out, drain thoroughly against the side of the pan.
No crispy bits, no undercooked white, no snot, gorgeous runny yolk. My fried eggs are legendary the length and breadth of my immediate family . . .
    (Like the butter idea, though.)

There is a technique to stainless steel egg frying and you have to bring the pan up slowly to temp then add oil or grease never spray oil from a can, then a room temp egg will give best results. I got rid of my old pots and pans and bought tri-clad stainless and i love them however, just because i have them i tend to grab my non stick pans. My mum loved her eggs crisp fried in red hot bacon grease and basted with it and that's how i learned to cook a fried egg in a well seasoned cast iron frying pan. fried bread in bacon grease with fried eggs omg yuppers xx

I just use more oil and swirl the pan to get the hot oil on top of the egg and get the snoty bits cooked off. Or use a spoon to get the hot oil on top of the egg like he did with butter. This way only a thin layer on the top of the yolk is cooked. I think flipping over kills off more of the good stuff in the yolk but not sure about that.

I cannot stand a crispy white. I don’t like the texture or the taste. I cook eggs in a lot more oil, hot at first, then add a lid and reduce the heat to virtually nothing or even turn the heat off. This cooks the egg through without the crispy bit. I also season the egg once it is on the plate.

  • @independentpuppy7520
    @independentpuppy7520 4 ปีที่แล้ว

I use method 3 but a bit different. I don't flip the egg as agree the yoke can break. I spoon over the top of the whole egg, including the yoke for a few seconds with the oil that is in the pan. I like the yoke runny but cooked a bit on top. Going to try with the butter though as bet it tastes even better than using the oil. Sorry but I don't like crispy on the white so I cook mine for less time so the white part has no crispness.

I don't have any fixed way. I do an Over-Tacky or a basted one. For a Sandwich it has to be tacky otherwise you lose half the yolk on the first bite and need to wash your shirt. Otherwise, not fussey. To be honest I prefer a poached egg on a plate. Never dared try one in a sandwich and hard boiled in a sandwich but a fried egg sandwich is decadent.

I know you'll think I'm being sqeamish and perhaps hyper-sensitive but I do abhor references to food in conjunction with mention of nasal mucus. I also take the view that things that can be eaten raw don't need much cooking. Try this, a raw egg in a pint of Guinness, pour the stout into the glass, let it settle and drink-off an inch. Then break the egg into the Guinness, it will sink to the bottom which leaves with a 'treat' as you finish the glass, not unlike eating an oyster. I once did this in a pub in London, that will remain nameless, 6 pints, 6 eggs and I left the empty egg book. Gone on I dare you. As far as cooking the eggs is concerned you could have put more 'fat' in number 1 and left out 2. Leaving you more time to empty the cat litter tray. I suspect given your location you're in 'super lock-down' just now but stay strong we're rooting for you.
