    1st Gen Chinese-American here and grew up speaking Cantonese but since leaving home definitely don't hear it or use it as much. I love that you have your dad speak and then give the English translation/commentary. Trying to resurrect my Cantonese!! Thank you for all that you and your family do. ❤

    I also noticed Daddy’s neck… my grandfather had a goiter on his thyroid and had it removed. It looked very similar.

    The first thing my grandfather taught me how to cook was ho bao daan! He did it just like your dad. For the longest time, I thought ho bao daan was just what our family called it, and I never realized until now that it's shared by many Cantonese families :)

    I just made some of these yesterday! My mom taught me a very similar method, but we like to sprinkle some salt into the wok just before adding the oil. 😁 Pushing the first egg off to the side is such a simple, smart idea to start cooking a second! I'll have to try that as it would definitely make the cooking time shorter 😋

      Practical technique. The reason of adding salt first is to minimize oil splash if there is water from the vegetables or meat adding into the wok.

    This is really close to the spanish huevo frito! We baste the top with a spoon to set the white and leave the yolk completely runny. In this instance a regular frying pan is better as the round sides of a wok will make the egg and the oil go to the bottom and make it more difficult to pick the oil up.

    Could you share your insight about making Cantonese soup. The many different kind of soup like those according to the weather and different kind of special functions. For example some soup for the skin, some soup for the lung, some soup to improve immunity., some good soup for young kits. Etc....

    This was a very useful presentation . My grandma made eggs in this manner. I did it using a more western method, but I think I'm going to incorporate more from what I learned on this video.

    I alway eat them with a splash of soy sauce over rice! The umami in it compliments the sulfurous compounds in eggs so incredibly well!!!

    A good son like you need to build your dad a special cooking/filming station so he doesn't have to work with his arms and shoulders all lifted all the time. Love your content, makes me miss my dad. All the woks I have was purchased for me by my dad, but he's been gone for almost 10 years now.

      Yes, the big lump on his left side. It’s particularly noticeable around the 00:00:40 mark.

    Hi Lau's I love your dad's cooking too and thank you for sharing his cooking techniques however, I couldn't help but notice a lump on the left side of his throat. Please get it looked at as it might be Thyroid issues. At the 0.39 mark of this video, the lump looks big.
    Please get him checked out for THYROID NODULE.

      Hi Randy & Daddy Lau, we love and enjoy all of your cooking videos.
      My wife (much younger than Daddy Lau) had a lump on her throat with thyroid issue too. She had an operation in 2017, removed the lump, and had a short period of radiation to treat a trace of cancerous cells. She's feeling OK, now. Pls take him to check it out.     Doctor here. That lump is like one of two common things that usually occur in the ages. One is just a calcium deposit. The other a tumble.

    I always see people use oil in cooking videos, but I’m not sure what kind. I use olive oil but what kind of oil is that?

      Probably corn or canola. Something with a reasonably high smoke point. Olive oil doesn't get hot enough before starting to smoke.

      Cantonese like to use corn or peanuts oil but anything with higher smoke point still fine.

      Avocado oil smoking point is 500. Please use it for cooking.

    Curious, how does a person live 30-50+ years in a country
    and never learn to speak the language?

      They are usually living in a Chinese speaking neighbourhood, and do not use English much.

      Yes, it applies to those who stay and work in their ethnic neighborhoods. I know so many living in NYC which includes Russians, Chinese, Hassidic Jews, Puerto Ricans and other Latinos. I'm sure there are other ethnic groups I haven't met but they're there. My parents were amongst them. The reason for them was because they had to immediately find work as soon as they immigrated to the US. So it was much easier to find the Chinese associations and stay within them to find a place to live and work and the opportunity to learn the country's language was almost nil. I used to ask my parents that too about how in the world they still couldn't pick up the English language since I couldn't imagine myself going to a foreign country and not learn to speak the language. Anyway, this issue applies pretty much exclusively to the immigrants who have children to support as soon as they arrived. They couldn't take the time to stop to learn the language as the primary focus was to make a living and give the better opportunities to their children.

      @@lilyew4905 Thanks for the response. I believe it is more than what you suggest, and there is a PREFERENCE by these individuals to not engage with the local culture.
      This is seen in many different ethnic groups.
      Basic curiosity in an individual to explore their local environment
      over decades of living there, would give them the knowledge of
      some basic words and communication skill,
      and there is none of this.
      That only happens, when the people are trying to avoid that
      interaction or exploration of their new home.
