In Alto Adige, in the Eastern Alps, the scheffnele are called spätzle and they are made basically the same way, frequently you'll find spinach in the mix giving it a nice green color and making it savory.

Laydy Mercedes is making Knöpfle as my swabian Grandmother would have said, or on swiss german Chnepfle. And she is using a tool in german called Spätzlihobel. Used also in the south west parts of Gernany, Switzerland and the most western part of Austria.

Nel nord Italia, quasi tutte le regioni sono influenzate da ricette di altri paesi... il Gulyasch è ungherese, ma lo trovi anche in Friuli Venezia Giulia, anche se fatto diversamente... mica vuol dire che non sia una ricetta italiana... a Milano, la classica cotoletta alla Milanese, non è altro che lo schnitzel alla Viennese cucinato con diversi tagli di carne (solitamente gli austriaci usano i tagli del coscio di vitello, mentre i milanesi usano la bistecca), e la lista continua...
