    1 stick of butter
    1 large onion sliced thin
    2 cloves garlic, crushed
    1 can of dark beer
    10 sausage rolls

    These were the best brats I ever cooked. I used cream cheese for the bun spred. Officially on my top 5 list.!!!!!!

    We did brats like this out icefishing this past winter. All I had was a large cast iron skillet on my portable propane stove. Put in butter, beer, red onions and brats. Slow cooked em until nice and brown like the Doctors were. Put em on a bun with some of the carmelized onions and so good. Some of us did put broen mustard on.

    I just made this on my balcony grill. I didn't have any beer on hand so I used hard apple cider served them with a home made potato salad. Can't get much better!

    Superb technique, made me change my method. As what DRBBQ says is correct, if you start by simmering raw brats in the onion/beer mix, you're flavouring the liquid with the Brats, not the other way around. Love it.

      David Hughes , that's the way I cook my banger and mash with onion gravy but I use vegetable or chicken stock .

      i disagree TOTALLY; cooking the meat in the fluid first is the best way for me. they've been using this method to flavor meats and vegetables for centuries. The brats dont really have much of a flavor to give off because they are in the casing. this is becoming the new hip way to cook them but I dont like it. the brat comes out the texture of a boiled hot dog; I want it the other way around. again, to each their own.

    @Thorralf83 - he did not smoke them, he gillled them. He then let them steep in the onion mixture to create more flavor. Its a pretty simple concept. Also, he is a pit master - he uses his own techniques - grill smoke, and the like.

    Thanks for the recipe , I had a couple of neighbors smell it cooking . One barely has teeth and the other was working , as soon as he found out I was making beer brats , he came straight home . 😄 I knew I would need to make extra , so I grilled 14 and still have 12 left for the next time . Thanks again , they were delicious and both neighbors loved them . I used a gas grill and put a smoker box on the grill and it gave the aroma as a wood fire . Tender , juicy and delicious . 😋 Best darn brats I ever had .

    Just tried this method today. It will be “The Way” from now on. I cut my onions thick and didn’t precook them too much before I finished the brats in them. Delicious! Thanks Homie!

    Nice! We always cook our's in butter, onions & beer on the stove on low heat for about 20 minutes before putting on the grill & they always come out great every time, but I'm gonna try this method. Thanks.

    Nice webers. I'm from Wisconsin and this is how I like my brats. I'm 100% with you on Brat Soup. Put the brats in the beef after browning them. What other sausage do you boil first?? Italian sausage, encased breakfast sausage, no one boils those first. Yes, it can make the casings "tenderized" and your house smells goof afterwords, but I prefer the "brat tub" will beer, butter, onions, & smashed garlic at the end. Then they can just sit in there and you can eat them at your leasure.

    Saw this earlier in the week, and I have to say "God bless you man!!" Best ones I've had, definitely a do over. Just takes a while, but the anticipation, and the extra beer, was worth it.

    Hey firecooker, I do not want to be some kind of a smart alec, but I am a real german, living in germany and I also can guarantee that in my country nearly noboby uses a smoker for original german Bratwurst. I bet that just less than 5% of the germans know what a smoker is. That should not be against to your creative invention about cooking german meals with your own note. In germany we use a pan, or we "grill" it, which means just a roast over a coal blaze and nothing more. my best wishes too u

    I have spent a month trying different recipes from the right side bar. All were good, but predictable. This is my technique after 40 years of doin' it the other way. I did change some things due to me using a kamado
    1) onions, butter and beer the same except for the heat source. I use my outdoor propane stove for heating and finishing the total cook. I found that a wood burning added to much smoke flavor to the brine.
    2) after the coals are ready on the in the Kamado. I run the brats indirect for about 20 minutes to impart a tad of smoke. I then grill them over direct heat until they are grilled. (they are still not done at this point) then add them to the brine for finishing as directed for a great braise.
    Just an after note. I choose not to go sandwich style. ( I had no rolls or bread in the house oops) put two on a plate with some basic sides, salad ,nothing great, and then put a couple of sprinkles of my basic BBQ rub on top. What a great way to change a sort of boring menu.

    I do a beer and onion/ garlic bath first, simmer for a while over charcoal inderect, then finish the brats and onions over hot coals at the end to get good grill marks, turns out amazing👌

    hey Doc! Think one could add green or red bell pepper with those onions? Or does it take away too much of the amazing butter/onion flavor?
    Just asking as i remember "state fair" sausages with onion green pepper sauce on a hogey bun all too well.... Thanks for response when you have time, i'll try this for sure!

    Boil brats in beer first. I know this is an older video but first time I've seen it. Always boil the brats in the beer first to make sure they're cooked. If you want to add them to your mixture later, fine

    I cold soak my brats for 2 hours in Killian's Irish Red, THAN pour all of that into a pan of sauteed onions, garlic, and olive oil. Simmer on low for 30 minutes and serve with sauerkraut, mashed potatoes, brussel sprouts, and wash it down with the rest of the Killian's Irish Red in your favorite stein. WUNDERBAR!

    im from new zealand south of Australia can some one explain to me what Bratwurst is?
    To the untrained eye they just look like sausages....

    I dont like this method; I like to cook it into the beer bath first and then grill it. in fact I'm shocked I see so many videos using this method; it isn't wrong but I like the other one better. They've been using liquid to infuse flavors into foods for centuries.
