How to Make Bakes and Saltfish | St. Lucian Style

- St. Lucian bakes and salt fish, my home in a dish! I’m joined by my beautiful momsy who shares her recipe. Enjoy!
Bakes
-3 cups self-rising flour
-
¼ cup brown sugar
-2 tablespoons softened butter
*1 cup warm water
*You want the dough to be soft and pliable, if it is too stiff, add a tablespoon more of water, or likewise too sticky, add a tablespoon more of flour
Saltfish
-1lb Saltfish, (salted cod or Pollock)
-½ large onion
-1 small bell pepper
-
2 roma tomatoes
-
½ cup cilantro
-
1 tsp garlic powder
-
½ tsp cumin
-½ tsp oregano
-½ tsp complete seasoning
-
½ tsp thyme
Awesome video! Looking forward to trying thus recipe. A few questions... what can be substituted if I've only got regular flour? (If yeast, is an option...what would the measurement be?) And what temperature were the bakes fried at? Was it medium, medium high? Thank you!

I would do 2 tsp active dry yeast with the same amount of flour I used

My mom is also from St. Lucia. She make her bakes a little different but I still really enjoyed this video. She also does the cucumber salad and salt fish similar to your mom....ummm it's so delicious. Thanks for posting...
I am Lucian and making bakes have been hit or miss for me(mostly miss for many years until a friend shared a recipe).I am so happy you uploaded it.Makong bakes does not come naturally to me.

I'm Jamaican and we do dumpings which is somewhat similar to bakes but I love St.Lucian bakes more! I've had them at St.Lucian cookouts and enjoy it so much. I'll definitely try making this. Thanks!

I never use selfrisen flour, we always put put in the dry ingredients.

Im st lucian and had this every sunday morning, usually wed have some corned beef fried with onions too. But my question always was why do we call it bakes when its fried? 🤔🤔🤔🤔🤔🤔🤔

I don’t think self-raising flour has salt in it in the UK - this is the second time today I’ve heard about salt in self-raising flour 🥺

Use fresh Cod fish
Just soak down the saltfish with little vinegar it removes majority of the salt.

My brother makes great floats, however he has the hole in the center just like you which I dislike.
Epic failed I a m St Lucian and that’s not how it’s really done St Lucian style. Number #1 Cucumber salad a little oil, fresh crushed garlic, salt, black pepper, squeeze a fresh lime or lemon , some people use vinegar in there instead of lime or the lemon,and you are done . Saltfish is our national dish my grandmother did not do all that extra stuff and her saltfish was delicious. All she did boil the saltfish fish sautéed some hot oil with onions and tomato, add a little black pepper then put in your cut up saltfish . That’s it . That was not bakes , bakes are thicker and smaller, she literally made little floats. There is certainly a difference. Coming from a Lucian with a generations of Lucian blood !!!!!!
