    For a flavor tweak, sprinkle the pineapple with coconut powder to get a piña colada snack minus the alcohol.

    When I was a kid, I seriously sprained my ankle. My doctor told me to drink pineapple juice to help the swelling. I didn't find out until many years later that it was fresh pineapple I was supposed to be drinking, for the enzyme in it that was deactivated in the canning process.

    Darcy I love your work. Ive been watching your videos for years learning how to dehydrate foods. My wife and i finally purchased one and now i find myself going back through your videos.
    I want to dehydrate a bunch of food in case the world comes to an end. I want to be prepared for my family. Seriously, love your work.

    I use canned. I’m lazy and it’s easier. Plus, I have the juice to use/drink. 🍍

    Thanks! I will do this today, as I have canned pineapple in my pantry. I dried fresh ones a couple of times, and it was very good. I dried canned one once, and it was extremely sticky, because it turned out the juice in the can had added sugar. It was way to sugary when dried. Since then I read the label for no added sugar.

      It does both wide and regular mouth, and I have yet to have a regular mouth fail the way the foodsaver attachments failed.

      Just added it to my wishlist. I have the Foodsaver attachments with a handheld, cordless sealer. I have a brake bleeder as well. The vacuum sealer in the video looks so much more user friendly and convenient.

    You can test a pineapple for ripeness by grabbing one of the leaves, about 3 down from the top and pull. If it comes out by tugging it is ripe. Yellowish pineapples are too ripe.

    My dehydrating book says always start your dehydrator fifteen minutes before putting anything in it. I notice you don’t worry about that. Guess it’s not such a big deal!

      Nope - I used to, but realized that once you open it, you lose all that hot air anyway. But it's like the idea of preheating your oven - it won't take as long to come back up to temp. But unless you're working with protein - it's not a biggie.

    Another dehydrator recipe suggested lightly rinsing the canned pineapple pieces. It helps speed up dry time, prevents possible problems with stickiness in storage.

    I love fresh. So does my sister and niece. Actually, I've never dehydrated the canned pineapple. I just know we would prefer the fresh. 😁
    But.... Today I remembered why I need to stay away. I have Type 2 diabetes and, while I was prepping a fresh one, I was so drawn I by the aroma that I found myself 'testing' to make sure it tasted good. I felt a bit lightheaded so checked my sugar level. It had shot up to 300 😳 Guess I'm going to miss out on the grilled pineapple tonight ☹️

    Use the skin to make pineapple vinegar. Use on hair, make salad dressing.

      Love it! I use most fruit peels to make different vinegars. Mostly for cleaning. I found the orange vinegar is actually the best at cleaning a black stovetop, everything else leaves streaks. I’ve even made apple scrap vinegar. 😉

      I used a mesh bag with five tiers hung outside for two years. I live in the desert so things dried quickly, even in the winter. However, the mesh didn’t hold up to our summer sun and I chose to get a Excalibur rather than the replace the mesh dryer.

    I can never pick a good pineapple. They seem too green in the store and then 2 days on the counter it could be over-ripe. I like taking the peels, cores and eyes and make tepache, it is so yummy.

    Fresh, unless the pineapple thats canned is in natural fruit juice...To pick a pineapple nice color, green tops,and if you can pull a top green leaf and it comes off easy its ripe and ready to slice...I prefer slices, but the sweetest fruit candy is watermelon and cantelope.......never used the pineapple skins due to fear of pesticides

    Darcy, do you ever add dehydrated items to a recipe you are canning? I need a red pepper and they are soooo expensive now!

      According to the National Center for Home Food Preservation, other than herbs or anything specifically called for in a tested recipe, they do not recommend using dehydrated goods in canning (because they haven't been tested). Would I? Rehydrated fully - yes, even though it might be considered 'rebel' - it's a practical thing that I could see me doing. Have I? No. I've been a single-ingredient canner, so haven't done any multi-food canning.

      Thanks for your prompt reply! After I wrote I thought with the holiday I shouldn’t expect a reply for a few days so I went ahead and rehydrated some red pepper strips and added them to the recipe. Since it’s not approved I put on the lid “R only” so only I eat it, I won’t give it away. The red peppers look pretty in the dish. I opened a jar and had some for lunch. Was delish and I feel fine!
      I love your channel! Since I started watching your channel I have not wasted produce. If it looks like I won’t use it all, it goes in the dehydrator!

    When vaccum sealing how do you lnow how long it takes to seal

      You can listen for the pitch to change to a higher pitch and then stay there for a bit (you heard it in the video, I just didn't let it play out in editing), and this particular vacuum sealer is about 30 seconds-ish for most jars.

    That is called an Oral Allergy. Look it up as there are Oral allergies 1 &2. They group them to different fruits etc. watermelon cantaloupe celery banana etc

    Can you dehydrate fruits and vegetables (on separate trays) together? Will they take on the flavor of the other things you are dehydrating together? Like, don’t dehydrate onions with lemons? 😊

      Keep like foods together. That's the best recommendation. You can mix, but I wouldn't do aromatics (peppers, onions, garlic, cabbage, etc.) with fruit.

    Hi Darcy. I bought 2 pineapples so I could dehydrate them. I decided to do only 1 at a time so I could practice. Some are crunchy, some a little brown and some so chewy and tough I don't dare try to bite them haha. (They are delicious though) I sliced them pretty thin. Do you think that's the problem? And maybe too much drying time? Thank you :)

      You can't over dry them for storage. But if you only want them to snack on, you can dry them however long you want as long as you store them in the fridge.

    Be extremely careful about canned pineapple. I had two older cans that I kept too long. They tasted great. Half an hour after eating, I was violently throwing up. The acid in the fruit had dissolved part of the lining of the cans.

      She is cutting a pineapple, not applying for the Gordon Ramsey show. I am pretty sure once it's dehydrated and eaten no one is going to remember or give a rats patutty how it was cut. But we will all remember how to dehydrate and that is what she is teaching us.
