    Thank you so much for not letting the "know it all's", (who know nothing) stop you from sharing these videos with us. My grandma on my moms side raised 12 kids in a dirt floor shack in east Oklahoma, she canned everything that would stand still long enough....lol. Breads, cakes, and milk and butter. They never owned a car or learned to drive, my grandpa had a team of mules and traded farm work to the neighbors when he or grandma needed a ride to town. They bought all of their groceries for the year (sometimes longer) and preserved it by pressure canning. Milk cows weren't always milking so grandma would can all she could to get them babies through.
    The least trustworthy organizations are telling people what is safe??... that's what is scary.

    Greetings from New Zealand. Love this, will definitely try it this year! I find the whole "canning Nazi" thing hilarious - Americans do seem to be insanely over-concerned about the safety of home preserving, in spite of the fact that those are the very practices that kept people fed before refrigeration. Over here open kettle and overflow are the primary ways to preserve. Waterbath, and in particular pressure canning, are virtually unheard of. Yet we have almost nothing in the way of illness from home preserves. In fact, more people get ill from eating food that has gone bad from being kept too long in the fridge or improperly stored in the fridge, than from home preserving.

      Dana you are so right about everything you said. I'm from NZ too and I've never heard of anyone ever getting sick. You can't even buy pressure canners in NZ. I've just bought a presto pressure canner from Amazon.

      Can you explain what "overflow" canning is? I've only been canning for a little while and still running across new terms. My preferred methods of food preservation are oven canning, and waterbath.

    This is Gary's wife commenting. I have done this at Christmas using Gingerbread mix, canning bread as gifts. It works really well. Cake mixes turn out nicely too.

    make these in the winter keeps the house warm all day and you've got goodies all year long..... I seem to always add 'extra' in them... extra nuts or fruit whatever makes it just a little better, you can even do jiffy corn bread and add chittlins n cheese n peppers...

    This is exactly how I sent cake to my son when he was deployed to Afghanistan. He looked forward to them and he said they were delicious. I’d include a container of frosting and he’d get a taste of home.

      That is brilliant and as a veteran who was deployed in some nasty parts of the world, I can guarantee you that cake was the best he had ever had prior or will ever have again quite simply because of who it was from and where he was. God bless you and your son, and thank you both for your service and sacrifices (family serves right along with the service member IMHO).

    I just opened a sealed can of banana bread from 2016. It was 😋 delicious! I will add that I had added "fruit fresh' which is citric and ascorbic acid to the batter. I think that could be key to the longevity.

      What was the size of the jar you used and how much fruit fresh did you use? I think that adding fruit fresh is a great idea.

      @@vonsquirrel8378 I was using pint and 1/2 jars. Follow directions on the fruit fresh to the amount of bananas.

    I have been baking in pt jars I make a make at 200 ml pore the mix to the mark 300deg. for the time on the box does not go pass the 1” head space put the lid and ring on as it cools the lids ping I have jars for 3 years use them at the hunting camp no problems corn bread cakes muffins thanks good luck with the water

    Yes! Canning n@azis will clutch their pearls and scream at you that everything is unsafe, like millions of people around the world aren't canning in ways that don't go along with the FDA's "expertise" on canning 😂
    If you don't want to can something, don't can it. Stop telling others what to do in their own kitchens! You go, girl! Thanks for the walkthrough!

    Today I canned for the first time "Grands" refrigerator biscuits, I tried one out of the jar for breakfast, it was as good as if I just baked it. I tried one later because I wanted to see if they got soggy from the moisture produced from putting the lid on (they all sealed by the way) and it was not soggy, I'm going to put some in the pantry and check down the road to see if they stay fresh because I live alone, if I bake a whole canister of 8 I end up feeding some to the dog or the chickens, they don't mind but I do. To buy the smaller pack is almost as expensive as the 8 pack so if this works and it appears that it will I'm going to be in hog heaven, I can go get 1 biscuit for breakfast!

    It seems to me, if the oven is at like 350 degrees for 20 to 40 minutes, any germs in the product will be killed. The jars are like 99 percent full, capped off and put back into a few hundred degree oven. If they seal with a good vacuum, where is there the time for germs to infest your product? If it is funky when you open it, don't eat it. What were people eating 10,000 years ago? Were they worried about germs? I'm sure some of them had upset stomachs, but we are here. Ok not so long ago diarrhea did kill a lot of children. But this seems very safe to me.

    I have been canning quick bread for a couple of years. Ours never lasts more than 2 months. It is fun to open a jar to go with our breakfast. Of course I don't Can enough to last a year. These are great to have on hand. I put 1 cup of batter in a 2 cup pint jar. Your taller jar would have been about 1 1/2 cups batter. Half full jars rise to the rim. Good way to use up the mixes.

    Is it possible to make yeast bread? I too have made quick breads and they are a great time saver. Like you, there is just the two of us now and one recipe gets wasted at our house, better to divide it amongst jars.

    I will definitely try this! Have you ever tried cake mixes? Someone gave me about 15 boxes and I need to use them. Hubby doesn't eat many sweets, so I'm hesitant to make cakes which I know I will eat myself! LOL As for not sanctioned by the USDA, I don't care. I've been canning since I was a kid, so I have about 50 years' experience. During that 50 years, we've canned meat in a water bath canner every single year. I have NEVER had a jar of meat spoil. We found two jars that were 9 years old which had somehow not been rotated with the new stock. Guess what? It was fine. Hubby gave a jar to one of his coworkers (who made his wife try it first LOL) and they absolutely loved it! I try not to fix what isn't broken. If it worked for 50 years, I'll trust that over a government agency any day of the week. Happy canning!

      I read recipes from the 1920's with people using steam conservo ovens, where they steamed their meat in jars for a few hours. Didn't appear to be too unhealthy.

      I made an upside down pineapple cake from box mix. Learned how over the week. Very simple. Ate one jar already. Will eat one jar a week so that's 6 weeks. If the pineapple hasn't made it soggy I will make a double batch next time. A cake mix makes 6 pints (half full).

    New sub here quite simply because you are canning cake/muffins/breads. Best banana bread I’ve ever eaten was a quart loaf I’d canned 14 months prior to eating it, and I’m still here to tell the tale. 😂. I understand safe canning and the USDA guidelines, but what people forget is just because something isn’t approved by the USDA doesn’t mean it isn’t safe-it only means they haven’t gotten around to testing it yet. Canning breads has been done for generations by home canners, and I personally fully intend to continue to do so. Great video!

      Do you know how long they store? I saw an article about the b&m canned bread from the second ww (opened in 2022) and it was still good.

      ​@@averteddisasterbarely2339if hadnt been exposed to moisture of any kind, was sealed correctly and stored correctly i dont see why it wouldve gon bad. Things go bad beacuse it's exposed to oxygen. As long as the seal never broke it shouldve been fine.

    I have gluten allergies, I usually microwave a single size portion of cake/muffins so I don’t feel like I have to eat it all or waste it. I want to try this but nuke it instead. Wish me luck. Lol

    When I was a child, back in the 1960's my mom was friends with an older Polish woman. She came to the house one day and canned (Jarred) up a bunch of stuff, by putting the items in a shallow baking dish with like 2 or 3 inches of water in it. She laid the jars on their side and baked them in the oven. They sealed just fine. No one died from eating the items in them. I forget what they canned, but I know this method is not sanctioned by the canning nazi's.

    Hello, Pam! So hoping that you see this… Quick question, please? A couple of years ago, we canned banana bread like this (a favorite recipe) and also boxed German Chocolate Cake with a can of frosting added.
    The banana bread went bad quickly. Had a weird taste. Had to throw away. The German Chocolate cake with the ca of added frosting, turned out great. Tasted very good for about 6 months. Then, for some reason, my husband opened 1 to eat. He said it really didn’t have much taste. I tasted it and agreed. Had a little bit of an off flavor too. I haven’t made any jarred cakes since. Do you have any idea what might have happened to the banana bread and also the cake?? I’m really wanting to make some cornbread and some cakes and things. Thanks so much! Hope you’re doing well. I’ve been out of things for a while, but starting up again. Last I saw, you were snowed in . God bless you ❤

      I have bamboo sticks that I use for checking cakes. The ones I use is half the size of the long ones.

    In your past video you sprayed the jar and let them set out to cool. Will they still release from the jar without spray?

    I did this last month and some came unsealed. I didn't put them in the oven at the end. They were all nasty and had to be tossed. I've never seen them put in the oven, maybe that's where I went wrong. Also I sprayed with cooking spray

      Don’t use the spray-it gets nasty in the jar, I speak from experience unfortunately. 😂

    Love the way you call them canning Nazis! They make canning scarey . I didn't want to can because I was scared by their instructions.

    Breads, cakes, muffins and butter. You can a number of items that the canning community, USDA, Ball and Kerr say are no-nos. As long as you precautions, why not do them?

    Why do you refer to other canners as nazis?
    I think it’s a great idea, and will try your recipe.
    I have to say your nazis comments a little off pudding. Can’t we be nice, we don’t need to be divided in the kitchen of all places. I almost didn’t finish the video.

    I just saw a video as to canning bread is a no no
