This sounds very interesting, my local butcher has his own abattoir but here in Ireland you cannot buy sheep's feat or lungs, so I will have to try it without the lungs. I notice you didn't use the kidney, is this not traditional? Would it work if I substituted kidneys instead of the lungs?
