    I really like your take on cooking these dishes, all of which are my favorites. For Dinuguan, the version i use to cook it is with coconut milk (gata). SUGGESTION: For fish sauce, try NAMPLA brand (from Thailand). Its salty with a little sweetness, which gives a lot of flavor, without the fish saltiness overpowering the final taste of the dish.     Dinuguan is my favorite dish ever that I can eat lunch and dinner. Here in iloilo our dinuguan some put unriped jackfruit (langka) optional. And a little bit sweet

    Yumm...but after eating i will need to check my lipid profile and uric acid hahahaha.
    One more thing i always observe, we filipinos we always say "thank you po salamat po " at the same time. We really are very respectful and appreciative.

    extra tip: you could actually fry all of those first and let it cool down before mixing it with dinuguan sauce
    I tasted it once, the chef said it’s not neccesary but tastes much better.

    my mom's technique in cooking dinuguan, after sauteing the meat.garlic and onion leaves, slowly pour the strained blood, start stirring slowly (dont stop until its done) even after adding the vinegar and salt.

    Mesentery or mesenteric fat holds organs to abdominal walls. Intestines are straight, but appear to wind up or down in twists and turns inside the abdominal cavity due to the flower- or ruffle-like shape of the mesentery that holds it (hence, ruffle fat is another name for it). So yes, your suki gave you a piece of the pig's intestine instead of the mesentery that held it. Mesentery, as chicharon bulaklak, is mostly fully rendered of its fat after deep-frying, and is not as unctuous as chicharon bituka.

    You can also put kamias and/or upo and also you know if you don't want ginger you can just take that out, Ilokano style

    If u plan on doing the dinuguan again, i would recommend using sampalok mix instead of the vinegar.. taste much better... avoid using water when cooking just use the blood instead so the sauce is thicker other wise it will turn out to tinumis

    the one you bought is the large pork intestine...it should be the small intenstine that has the "mesentery" aka chicharon bulaklak..that holds the small intestine together...

    You should slice or cut the intenstines like opening it so when it cooks in the fryer it will shrink like a flower

    I love dinuguan but I'm a little squeamish when it comes to pig's intestines because I'm thinking about the poop inside of it, hopefully it was turned inside out so that it is cleaned thoroughly. The other innards are okay. Nice cooking and looks so scrumptious.

    Okay watching this and the editing reminds me the first time I cooked dinugu-an and as the editing and sound looks was exactly I felt while preparing and cooking. That was my first and definitely last time to cook dinugu-an. But dont get me wrong dinugu-an is one of my fave filipino food, just the preparation is a no-no for me. 😁

    there is really a part of the pig innards that’s for chicharon bulaklak only, it’s kinda fatty and has these connected petal like thing. but intestines work as long as it’s not cut to small pcs i think coz it would shrink and just form a flower afterwards hahahaha

    Here in zamboanga aside from the vinegar we are also using oregano leaves to prep the blood. And we usually boil first the all internal organs with oregano leaves,again. So that it will not smell so nasty. Love your vlogs anyways.

    batangas goto ...just add diced onion, calamansi, sili and fried garlic afterward! chicharong bulak partners well with the batangas goto .

    i use maskara ng baboy (pork cheeks) in making dinuguan.🐷 i haven't tried adding in the vinegar while browning the meat. i always add it in towards the end.🤔 will defo do your technique next time... it's tastier for sure.👍

    For more exotic type of dinuguan, you can add the innards too Erwan. That's the province style. We do it right after butchering the pig. 🤣🤣🤣

    Dinuguan is one of my fav food. in our place, the pork's blood is mixed first with grated coconut meat. press it hard then collect the blood with the coconut milk.
    also the pork intestines tastes better than just pork meat. its the best actually.
    hope you try that recipe too. @erwan

    Hi erwan! What's the difference between adding the meat first before the onion and garlic and adding the onion and garlic before the meat? I'm just curious because I've seen you do those things in your vlogs. I wonder if it has something to do with the taste of the meat?

    The first time I ate dinuguan my body temperature instantly got so hot. Not like a fever just like a primal sensation from eating pork blood for the first time or something. It was delicious though!
