Thank you for a lovely recipe. Have you ever thought of tossing the dried fruits with a bit of flour first to keep them from sinking in the cake ? Can I use sherry instead of brandy in the cake ? Appreciate the wet-hand tip for smoothing over the cake. Many people dont appreciate or like fruitcake these days but my 95 yr old mother adores it and she will really enjoy this homemade version. What a neat idea this is! I especially like how she's worried about bacteria growing on possible unclean skewers, but thinks it is a great, not to mention safe, idea to place her ear and her hair near a food item fresh from the hot oven, only to later serve the already disgusting cake once it's cooled to unsuspecting guests. This is about as tempting to eat as blood pudding with century eggs dipped in asbestos on the side.

putting the water in the baking pan, is that the same as putting brown paper around the outside of the tin?

My cake baked in 2hrs and burned a bit . Maybe my oven is off.Other wise a nice healthy tasty friutcake
