How to Make A Christmas Cake (Part 1)

    Ingredients
    200 g (7 oz) plain flour
    200 g (7 oz) unsalted butter or margarine, softened
    200 g (7 oz) sugar (brown is best for flavour)
    200 g (7 oz) currants
    200 g (7 oz) sultanas
    200 g (7 oz) raisins
    100 g (3½ oz) glacé cherries, halved
    50 g (2 oz) candied (mixed) peel
    4 eggs
    Grated zest of 1 lemon
    1½ tsp mixed spice
    ½ tsp cinnamon
    ½ tsp nutmeg
    ½ tsp salt
    Optional extras
    150 g (5 oz) dried cranberries
    50 g (2 oz) flaked almonds
    50 g (2 oz) ground almonds
    ½ tsp almond essence
    Instructions
    Preheat oven to 150°C.
    Cream together the butter and the sugar.
    Add the eggs one at a time with a tbsp of the flour. Beat the mixture well between each egg added.
    Seive in the flour, spices and salt. Add the lemon zest, almond extract and the ground almonds. Beat well.
    Mix together all the dried fruit and nuts in a large bowl. Add the mixed fruit into the cake mixture and stir well.
    Grease an 8″ (20 cm) cake tin and line with baking paper. Pour the mixture into the tin. (For a 10″ cake tin you will need help!)
    Press the mixture down well and smooth the surface with the back of a spoon. Bake in the middle of the oven at 150°C for 2-2½ hours.
    After 2 hours check the cake with a skewer. If the skewer comes out clean, your cake is done!
    Allow to cool on a wire rack before removing from the cake tin.
    Titli’s Tips
    Use a cake tin with a pop-up bottom or a springform tin - it’s so much easier to get the cake out of the tin!
    For a 10″ cake bake at 150°C for 1½ hours, the turn the oven temperature down to 140°C and cook for no more than an extra 1½ hours.

    A lot of Christmas cake making seems to involve alcohol, so I'm excited to see your alcohol free options! :)
    My mum would always soak the fruit before putting it in the cake. She used to use brandy or sherry but we found out tea works just as well.

    When I was a kid we used to even have a Christmas tree put in our house as my younger brother who is Autistic used to ask so many questions as to why what eh sees in school doesn’t get celebrated in the house. We used to regardless of Eids used to have a big Christmas as well, but it doesn’t made any of us Christian. Every religion shares the same message which is love and peace so please people just because Titli made a cake stop judging her. Love and peace to all!

    I just made this cake for the first time. I started a week ago making my own mixed peel, your recipe, and candied cherries. the batter smelled so good I tried some, oh my goodness!!!! wonderful!! thank you soooo much for all of your hard work.

    redone cake it's in the oven now to wait and pray. did all as in your recipie and have to say couldn't resist scraping some form the bowl and tasting it. YUMMY! and of course I made a mini one for myself! same time lol! I added 1 tsp brandy to the creamed butter mix and creamed it all in then. Thanks now the wait begins.!

    On a bit of a roll with your traditional Christmas recipes! I made this cake again this year but I soaked the fruit in brandy ahead of making and then fed with brandy, as we quite like the taste. Gave it about 5 or 6 weeks to mature. A really really nice cake which, just like the pudding, is probably the best we've had. On the list for next year's Christmas already. Thanks so much for posting the videos.

    well im a muslim too but i've been to a christian school and alot of my friends are christian so i celebrate christmas with them. its all about love and sharing..which i think every religion preaches. luv u titli

    Haha I love this vid! mad as a box of frogs you are! Tip: if you want to stop the cake doming in that way then make a circular indentation in the middle of the mixture before you put it in the oven. That way, when it rises, it will be at the same height as the sides.

    Oh! I just love Christmas Cake. My grannie used to make the best. I was wondering if you were going to soak the fruit in brandy or whiskey, but I have an idea that may be next. A friend of mine wraps her cakes in cherry brandy soaked cheesecloth for about six weeks, then gifts them to some lucky people.

    hey titli i was planning on making this for christmas! but forgot so im making it today,My mum didnt want to buy all the fruits so we bought a bag of mixed fruits is that ok? also im making them into cake pops because for christmas i got a cake pop tray!
    Sorry but 2 more things, 1.is it ok to put only flaked almonds in and 2.do u add chilli powder cuz that would be delicous!

    As somebody who doesn't celebrate Christmas for religious reasons:
    It's just a nice family fest. Eating and having fun. Call it what you want. And "Christmas Cake" just sounds better than "Undefined Winter Holiday Cake".

    I like to add dried cranberries into my cake. You can add other stuff too instead of the peel and cherries, like chopped dried apricots.

    Does it really matter? I'm an agnostic from a catholic family, and still celebrate Christmas....it's more about getting together then anything else...and dinner table brings us together no matter anyone's personal beliefs. It may not have religious significance for me, but that won't stop me from making dinner for everyone just cause I like seeing their happy faces...lol =) I assume it's the same among most of us.

    I am a muslim too , she only shared her recipie with us , we can do it anytime through out the year it doesnt mean we should not eat anything related to cristmas we only are not allowed to "belivie in it " weeeee caaaan always eat and anytime in any month if its halal :)

    Hi Titli, I was just wondering if you have any recipes for Alcohol-free Mulled Wine or maybe some alternatives? My Mum loves Mulled Wine at Christmas but can no longer drink Alcohol due to the medication she is on for her Rhumatoid Arthritis. I don't see many recipies around TH-cam so I was wondering if you had any ideas as I know you don't drink drink Alcohol yourself . :) Thanks! I love both your cooking and gardening channels! :D

    HI TITLI!!! first things first me and my kids LOVE watching you from over here in Switzerland. I'm english born and raised till I was 8 so this recipe is abit of home for me at this time of year. BUT this is the first time I'm trying the Christmas Cake...and...this may sound silly but...without Bakingpowder AND without beating the egg whites...how does it rise???

      It doesn't rise very much at all, and it's not really supposed to. The rise comes from trapped air.

    This is not "dessert" and is not meant to be eaten in one day. It's eaten in thin slices with tea or coffee in place of the normal biscuits, muffins, Mars bars, etc that a lot of people seem to have with coffee nowadays.

    LOL Some ppl can be 'funny'. I'm Muslim and I love whenever Christmas comes near cause I enjoy most of their food. Log cakes, Peppermint Mocha Ice Blended, Toffee Nut Latte, or anything that taste Christmas-ey will always be my favourite...even thanksgiving food too! Come on guys, it's just food. We're not going to lose faith as long as the food is Halal and not 'shubhah', right? It's just our friend's celebration. The food is good too!

    I've been making xmas cake for the last 30 years or so. Of course, I use brandy. One of the few times, I use alcohol. Though not from any taboo. The brandy is used to soak the fruit overnight. In addition, I also use molasses and mixed fruit peel. In all my cake making, I've never had them curdle? I'm not even sure how that would look? I also use a stand mixer. Switching from the hand one, some years back. It has an ability to start really slowly. Long and slow, like a woman ... he heh!

    Pasteurised orange juice has been heated to kill the bugs and alcohol-free white wine is white wine from which all the alcohol has been removed.
