You know, Wii U emulation on Switch will be possible in the future because the developers of CEMU are working on an Android port, so touchscreen will be an option too
They are certainly doing all of them at some point on some console, even Wii U. There will be a point were the Switch Ports/Remakes no longer sell much as they are replaced by newer entries into their series. However they won't drop a Switch One emulator just then. It all takes time. See the purpose of this service is not to provide you with the games you want to have. The purpose is to bait you into a subscription and keep you subscibed. That's why they delay all of this behind time. Just like Sony is only giving away two Playstation+ games each month. If Nintendo were to release everything at once, people would just play their dream games, then cancel their subscription. The best strategy is to always release something that's acceptable and fine, but never great for everyone. I also expect them to treat each Pokemon generation like a full emulator release, so only the oldest unreleased generation, and once per year, and alternating with the still missing console emulators. So I don't think we see much of this stuff before the Switch 2. Maybe GameCube and Pokemon Red/Green/Blue/Yellow/Stadium1 & 2, the rest you will likely have to wait along time. And many of the games you listed weren't even developed by Nintendo, so they don't have the rights for them. They may occasionally get one in, like with Banjo Kazooie, which was developed by Rare and is their IP, which they formerly owned. I do think they want Tooie and Diddy Kong Racing (which uses characters from Banjo and Conker and as such they cannot do it even though they own the rights to that game still), too. Not sure about Conker, might not fit their company image anymore.
Using Lakka, I was able to play windwaker all the way through (set video driver to vulkan for best performance, lower and increase emulated CPU speed depending on the section of the game for best performance) and am in the process of completing TP too (lowering emulated CPU actually hurts TP's performance, but the game so far runs smoother than wind waker suprisingly).
So it's true about GameCube not running well while emulated on Switch. Some guy told me the process was easy and that all games worked just fine. Thankfully, I knew better.
im getting my oled switch OLED switch jailbroken, so i can play playstation games, SM64 Rom hacks, and even Super mario odyssey mods. so, it is still possible.
This gives a bit of insight, but I'm still unsure if I can just have Switch Oled modded and emulated with all kinds of nintendo gen games. I guess I might need the GameCube or Wii as well if they aren't great in emulation or available as remasters.

hi @TritonusRaven i have a problem when i run dolphin emulator on ubuntu, i installed the last update, i installed the overclock but every time i try to run a game on dolphin it doesn't work, shows only a black screen, and i don't know how to fix this. now i will try to reinstall everything, otherwise i will try to use LAKKA, can you help me abaout this problem?

They're Wii and GameCube titles but my guess is Path of Radiance has a better chance to be playable. Will need to try them out to be sure.

Can't beat real hardware so the best would be to get a Wii to play both Wii and GameCube games.

I'm using the Citra core on RetroArch. I don't have any experience with Lakka so I'm using Dolphin on Ubuntu for Gamecube.

If you want to run NES games without RetroArch then Switch Online with CaVE Database Manager is an alternative.
Came across a better option, found a NES to GBA converter, them run NES games using mGBA app from homebrew.
