Try using cocoa powder to dust the surface when you're rolling out chocolate doughs. It keeps them from sticking as well as flour does, but doesn't show.😉
I got a big kick out of this. I worked in a cookie factory for thirty years and I was the creamer on the Oreo line. They mixed it upstairs in the mixing room, dropped the dough down the hopper to the bake shop where they rolled it out in a temperature controlled area and sent massive belts of rolled, cut and baked cookies down the line. It was a twenty minute journey through the oven at a graduated temperature setting, then another ten minutes from the oven to the creamer, me. I ran the machine that put the cream on each cookie. The weights of the creamed biscuits were checked on the regular. Sometimes when the cream was too dry, the tops would fall off. It was a hassle. But it was a really fun job. I have since retired. Yours looked good. The biscuit colour was perfect. They just needed to be a little thinner. You were right not to flour that dough up because it would have made a mess of that dough. Sometimes flour would get on ours, and we had to throw those out. They went to pig food. Love the rolling pin. ❤️
The Bosch is incredible! Family of 8 here. Could not be without it. Can make 250 cookies at one time. Make base dough, then divide and put different flavors in. Best part is the lid, no mess like the kitchen aid!
Hi! I made Oreos over the weekend and they're a huge hit! One modification that I made was to roll out the filing and cut it to the same size as the cookies. I'm not going to mention that I doubled the filing and made them double stuffed. 😉

Wow that is a great idea. I'm lactose intolerant. I just try to "suck it up" and just eat stuff anyways which is such a horrible mindset to have, and my health suffering because of it. So now im definitely going to make these!
If the Oreo dough ever became sticky when you roll it out, you can simply use a dusting of the black cocoa powder instead of flour to prevent sticking.
Hi Becky! If you whip the butter for 7 to 10 minutes before you add the other ingredients, the yellow almost disappears and makes a really fluffy buttercream 😊
I own a 7 qt. Kitchenaide, Bowl lift . And also a 3.5 quart tilt head. I own all the attachments, and multiple bowls for each mixer. I’ve never been happier.
I have a Bosch, and am a former KitchenAid 5 quart mixer owner as I gave it to my daughter. I throw rocks at the KitchenAid (just kidding). There's so many nice features that the Bosch has that the KA didn't have. Bosch has a much larger capacity but still makes small batches as well. It has a wonderful bowl-scraping attachment, powerful motor, and I love that the access is from the top. PRO TIP: use a kitchen scale! For about $10, you can get a digital scale that will come in handy for SOOOOO many things. I always use it when making sauerkraut and I've never had a batch fail. Ever. A scale takes the guesswork out of recipes. Great job on your goodies 😃
I've had both Kitchen Aid 6 Qt and Bosch Mixers while raising a large family. The Kitchen Aid motor would bog down whenever making large quantities of dough for breads. The Bosch never had any issues. I've had both machines for more than 20 years, used nearly every week, and they're still going strong. I love the Kitchen Aid for doubling recipes, the Bosch for tripling or more. You inspire us to try new things; love your channel!
This is so helpful to know! I have a 6qt Kitchen aid too and know that they can't handle really big batches. I come from professional kitchens and we always used Hobart there (but they are extremely expensive!) so I'm glad to lean about the Bosch. I'm going to take a look at them now.
Is there only one size Bosch? 6.5 quart…seems like it wouldn’t hold much more than the kitchen aid. Perhaps having the lid keeps it all contained better though.
My daughter makes oreo cookies. She shapes the dough into a log, refrigerates the dough then cuts thin discs for the cookie. They turn out just right. You might try that method next time.
That’s what I do for sugar cookies, butter cookies and snickerdoodles. They are so easy and uniform that way, and no need to use cookie cutters or rolling anything out. Plus if you wished you could freeze the logs and just slice enough for a snack or dessert each time, so people don’t overeat and have fresh baked cookies
Bosch hands down! I bought mine 40 years ago and I’ve never had issues with multiple batches of cookies, not to mention that I fed my family on home made WW bread all their life. Mix it together and it kneads it Better than hand kneading, 10 min and it’s ready to rise. Again, Bosch, hands down! Really enjoying your channel!
I had the Kitchenaid mixer. when it finally stopped working after 20+ years I bought a Bosch. I love my Bosch. It can handle large batches. Adding ingredients is much easier because you aren’t trying to maneuver around the motor casing and beater. You can also buy different attachments for the Bosch such as the food processor. I highly recommend it. Thank you for the recipe. I can’t wait to make these with my daughters.
I’m a loyal KitchenAid owner! Bought my mixer in 1988 still going strong. I owned a tea business, made literally thousands of scones….plus any tea related recipe you could imagine. She never let me down!
You're lucky to have an older one! If it ever does die, you're going to have a big letdown when you see the quality of the newer ones. Mine is currently sitting in a thousand pieces on my kitchen table because the gears went bad and nobody will repair it so we're doing it ourselves with youtube and oem parts.
You can always freeze any dough that you don't want to prepare; it freezes beautifully too! Once the cookies come out of the oven, take another sheet tray and place on top of the cookies pressing gently. This will flatten them out and press some of the air out of them. I do this with my custom cookies to so they are flat.
My husband knows it’s you when I casually say “Becky says…” 😂 I know KA mixers are wonderful but they’ll never outrun a Bosch! I bake in huge quantities all the time for my family and the Bosch is still a workhorse after 10 years. I LOVE IT! 🍞🥖🥨
You are absolutely right. I am a baker, and at home I use a Bosch MUM that is over 25 years old. It grates, kneads, whips, minces whatever is needed, often in large quantities. No breaks, no malfunctions. After 20 years I could still buy and attach the new ice cream maker, bc they made it compatible with such an old machine, not just the new models! That is how you keep a customer.
It’s funny going back and watching this because this was the first video I ever saw of yours on my main page months ago and it got me hooked. Now I’m rewatching everything from the beginning. I had already done from a year to current but you were a natural delight from the beginning.
When our children were at home, I got a Bosch mixer so I could make dough for 6 loaves of bread at a time. I LOVE my Bosch! I have never had a Kitchen Aide but I have always been troubled by the challenge of getting ingredients into the bowl without contaminating the mixer head. The Bosch bowl is like a donut with the 'hole' of the donut the center spoke on which the attachments sit. Getting ingredients into the bowl is much easier. It is relatively easy to store the mixer under the counter as well. The height of the Kitchen Aide makes that unlikely in most kitchens. I've had my Bosch for nearly 30 years and I would not exchange it for another brand.
I never even had the concept of using a machine for making bread growing up, my mum and nanna's had kenwood chef's and they basically sat in their cupboards collecting dust - all I ever saw them use was their hands and i've done the same thing lol. About 8-9 years ago I bought a cuisinart food processor, and like the stand mixer (which i inherited in a near new state), it's sitting in the cupboard as well! I'd be interested to know if using machines instead of feeling (ie manual labour) is a predominately American thing or if it's just as mainstream elsewhere in the world.
At the time of the Bosch craze, there was another brand, DLX. It was made in Sweden. I’m still glad I bought it and would never trade it either. (bought 1995ish) I have many attachments for it. Even a blender lol Kitchen Aid could never hold a candle to the commercial grade kitchen centers. Ppl just don’t know about them unless they homeschool lol
@@helenlecornu1651 I made 6 loaves of bread at a time. I COULD knead that and my son got to where he could too, but the dough kneader was so much better! I made rolls, crusts, bagels, English muffins, challah. Plus pasta. WELL worth the expense and washing the bowl n kneader hook was worth it too. Oh YES. Now my food processor (which the DLX was one too but I had Cuisinart I used more often), I loved for the few things I did with it. But that had more parts so didn’t get the use it deserved. I’ve never regretted a single kitchen appliance I bought. I use all of them! But if u don’t cook much, they can become clutter, for sure.
Yes to a Bosch! They are the ultimate kitchen work horse. You can mix up 5-6 loaves of bread per batch. You can also do a double or triple batch of cookie dough. They even have separate dough whisks for cookie dough. They are the BEST dough mixer around. My Mom has had hers for nearly 40 years. She had to replace the dough whisk once, and the bowl once because the whisk broke, and scraped pieces of plastic off the bowl.
@@mollyl8704 No, smaller actually, and much shorter. The motor is basically a base that the bowl attaches to. They have a "compact" size, but I have only used the larger "universal" size. The only thing about the Bosch mixer that is discouraging is the price tag. They are around $450.00. It's a big investment!

I like that rolling pin. I use my sheet pasta attachment to roll dough for crackers. I use a similar recipe and just use a pizza cutter to cut them into little squares and a knife tip to make a small dot in the middle so they look like Cheezits.
Hi Becky! I absolutely love watching you! For the amount of baking you do, you might consider a large food grade silicone pastry mat. They are non-slip so your parchment paper will easily stay in place and they're so easy to clean up.🙂
Claire's book "Dessert Person" is a great cookbook. As a pastry lover and cookbook collector, her book is great for advanced baker and not intimidating for a beginner baker. Her recipes are what I would call tribute to classics pastries while proposing a wider range of flavour. It's exactly what I was looking for rather than having the same classic flavours we see everywhere.
For beginning bakers or people who just aren't as confident, try her Almond Poppy Seed Cake. It's not only incredibly simple (it's assembled just like a box cake), but also phenomenally delicious!
I just have seen the Bosch on Frugal Fit Mom’s channel. She uses it all the time and prefers it to her regular Kitchenaid. I like the lid! It keeps everything from flying out.
@@debbiebarnes4688 definitely have to find what works for you. I don’t pull my shield out like ever.. but sometimes will use a damp tea towel if I think it’s gonna be a problem. Usually overfilling the bowl is the main cause. Or turning on too fast. Or needing to not make a mess… because you barely have time to make the recipe… let alone scrape butter off your walls… so naturally everything is extra messy 🤪

Absolutely LOVE our Bosch! I use it weekly to make bread. Not only does it hold more, the built in lid contains the heat and makes for easy rising, and it has better power than my Kitchen Aid... very easy to burn out the KA motor when mixing heavier doughs.
I keep commenting on THE WADS channel telling her she needs to try your homemade vanilla recipe because she’s always talking about how expensive it is to buy, and it is. Plus homemade is always better! I have only made it once since I found your video and I’ll never be buying it from the grocery store again!
I was a bridal registry consultant for several years. I’ve never owned a Bosch but from the information I learned from several brides and some online research, the kitchen aid is not designed for breads/doughs that are stiffer. A KA is designed for looser doughs. A Bosch has the motor and power for bread doughs and such. I even had brides return their KAs because the engine burnt out. So KAs have their purpose, but Bosch seems to have the power. Would recommend for the baking level you do. By the way, love the channel!
Actually, I went to visit the KA company, people just have to learn to make dough the right way in it. Your speed should never go past 2 when making bread. I have use KA for 40 years and my moms KA and Bosch and we were always getting her Bosch repaired.
Kitchen aid profession 600 watt will handle it all. They have. Variety of mix’s to meet everyone’s needs. Need lower cost, get cheaper KA. Need strong one, get pro-600 watt (non-tilt head)

Your patience is inspiring! The last time I made anything even remotely “fussy“ was cupcakes for the soccer team snack and frosted decorated sugar cookies at Christmas. I guess my point was to do it with my grandkids, but as I believe many a mom/grandma has experienced somehow you end up frosting everything alone at midnight. They just lose interest even if it sounded good to start with. LOL 😂😂 I swore I would never make anything more delicate than a bar cookie in a 9 x 13 pan ever again. You have caused me to think twice about that! Josh is such a lucky guy.

A suggestion: pick up an oreo disk, ice it, and while still in hand, turn it upside down onto the second disk. That way, you are only handling the cookie once and the icing stays fresh until you are complete. Great job by the way!
I have had a Bosch for about 15 years and I gave my Kitchen Aid to my daughter a few years ago. The one thing you have to get used to is the Bosch has a center post for the hook. So you have a doughnut shaped bowl versus the regular bowl for the Kitchen Aid. It is very powerful and will power through bread dough and cookie dough without overheating. One thing with cookies, I stop the mixer before the dough is almost mixed and finish it by hand to keep from over mixing it. Also, you can get a food processor and blender attachments. I never use the blender because I have a Vita-mix but I do use the food processor. It is on the smaller side but works very well. The one thing I like is the Bosch is much lighter than a Kitchen Aid and I can store it in a cupboard when not using and take it out very easily. Hope this helps.
I've always had Kitchen Aide, but my stepmom has had a Bosch. In using both I have to say that I 100% prefer the Bosch for many reasons. Bosch is more powerful, cleaner to use because the lids lock on so nothing comes out at all, is much lighter to lift up and move, is more compact for cupboard storage and is easier to clean. I've already planned to get the Bosch Universal Plus mixer very soon as an 'upgrade' to my Kitchen Aide. Hope this input helps you. Btw, I enjoyed your video as always. 😁
I'll never give up my kitchenaid mixers! I do recommend getting a paddle attachment with the side scrapers on it though. You don't have to keep stopping and scraping the bowl with that paddle attachment. Huge time saver for me! I got mine like 12 years ago and it's still going strong.
I've had mine for over 15 years and I love it. My grandmothers have had theirs as long as I can remember. I love Bosch spark plugs for my Mustang though...

I had a kitchenaid for years (20 + years) and the motor finally quit. I went with the Bosch and do not regret it. I love that it doesn't have the arm that drops down and gets in the way when adding ingredients. I also love that you can add a scraper attachment that keeps the sides scraped down as you mix. My only hesitation is that the paddles are hard plastic and I worry that they might break. So far so good, they have performed well, I just hesitate with plastic.
Completely understand your hesitation (my friends mom was hesitant about that too apparently) she's had hers for 5 years now and no problems! Hopefully that easies your mind!
The Bosch is amazing. My husband bought me mine because I make lots of breads. The Bosch has a better motor for that. It also has a huge capacity which is amazing for making large batches of cookie dough.
You cook so many great things. I love baking. My hot tip would be to cream your butter and sugar longer. Especially for the frosting, whip your butter until it’s much lighter in colour, it will make a much better frosting.
Hi Becky, I just wanted to refer back to one of your previous videos. It's only natural that you don't need much honey in your banana bread recipe. Honey has three times the sweetness of sugar. So for any recipe you can divide the amount of sugar by 3 to convert it into honey ( I admit it's easier to do with the metric system than with cups). The only thing to remember is that honey retains moisture so it's great for cakes but not so much for shortbreads. Bisous from France

I really loved her gourmet copycat recipes on bon appetit. Brad's It's alive was also fun, it made me want my own fermentation station haha. I'm glad Claire has her own channel now. She seems less stressed when she's baking and like she's having fun with it which is nice.
I have a Bosch and I love it! I have had the same one for almost 21 years and it is still going strong! The motor is strong and I can fit up to 16 cups of flour along with the rest of the ingredients needed when making bread! There are several attachments and I feel like it is a step up from the kitchen aid!
Homemade powdered sugar is super easy. Just put it in a blender and blend it till itʻs as smooth as you want. I dont buy powdered sugar anymore i just make it as i need it.
Just watched this again for the goldfish crackers! My daughter, 2, says "Becky! Becky! Watch Becky" 😂 I got my Bosch for Mother's Day and I LOVE it! So much nicer than the KitchenAid. You can d enormous batches of cookies and 9 loaves of bread! It mixes so much more thoroughly than the KitchenAid can. I think you would be really happy with it!
One of the things that Claire Saffitz does when cookies or candy are not dry enough is to dehydrate them for a bit. Maybe you could try that with the cookies and crackers. Great video!
When she opened the circle cutters I was like YES! I have the same cutters. They're awesome. You never know when you need a different size & no worries about breaking a glass by using it and hoping you don't press to hard. I've used them for everything from biscuits to russian dumpling dough to cutting out the core on apple slices I was dehydrating.

The downside to enlarging a recipe is the measurements for the ratio of dry vs fat changes drastically when you go past doubling it in size. Doubling in rounds of two would have been better. Bosch, depends on the model. Try to get the more solid ones, do your research. Otherwise, yah, KitchenAide has not released in the USA a larger version, that I am aware of. Either are good, just make certain you get the solid cast metal ones.
I had a Bosch 25 years until we, as seniors, had to downsize. Then I gave it to a newly wed as it was going strong. Love, loved it. I made 6 loaves bread each week and it handles it like a dream. The I also used it with all my other baking. I had a blender attachment, well used, the food processor attachment and everything worked excellent. I miss it greatly but on a limited income I cannot replace it, which I would do. I kept my Kitchen Aid and regret not keeping the Bosch instead. I highly recommend Bosch over the other mixer!
I just made these today Becky. I improvised on the entire recipe. No goldfish cutout so I used a square like a cheese it. I only had jalapeño pepper jack cheese because I’m still doing the pantry challenge. They turned out pretty tasty considering I’ve never made a cracker before. Thanks for sharing.
i was in the middle of working when i seen the notification for this video and i shouted "yes!! becky's video is finally uploaded" i was so excited!! i love the little fish although i don't have that much time and was wondering maybe i could do the same recipe but make it more like a cheese it but a little larger so i could put tuna or chicken salad on it. yumm!!!! so exited!!!
My advice with the oreo dough is to roll it out and then chill them. This is what I do for gingerbread dough. I roll it out first and then chill it, then cut it, then bake it. :) To keep it from getting sticky, just roll between parchment paper like you attempted to do in the beginning. Then put it on a cookie sheet and stick that in the fridge for an hour or in the freezer for 30 min. Then cut out and go!
I have an 8.5 quart cooklee mixer and absolutely love it. It’s bigger and has a stronger motor than my kitchen aid. It’s way cheaper too. The cooklee mixer is cheaper on Amazon now than when I bought it. And it comes with a shield so nothing falls out of it when mixing and you can use kitchen aid attachments.
Hi Becky! I cook everything from scratch as you do. Therefore, I highly recommend the larger Kitchenaid. The new ones even have a glass bowl if you want one. I always make several batches and have yet to have an issue. 32 years and counting! I actually have two Kitchenaid's now since I inherited my mom's. It is so much fun to work with two!
Becky I would possibly consider getting a Kenwood Chef mixer, it has a bigger bowl and a higher power motor. or you could biy a second hand commercial mixer such as a 10 litre hobart mixer.
My husband just got me a Bosch mixer, I’ve had a kitchen aid for 20 years! I’m blown away by the difference in power first off. I don’t struggle with my large batch of cookies or bread anymore! I’ve had it for close to 2 months & I use it almost daily. Get the Bosch mixer🤣 you won’t regret it I promise!
I've used both Bosch and Kitchen aid. I have used a Bosch my whole life, so when I used the kitchen aid, I hated the big mess it spewed out all over the place all the time! I love that you can make 5-6 loaves of bread in one batch with the Bosch. I used it for everything! Cookies, breads, frosting, whipping cream, chicken blends, etc. I love my Bosch! I love that you made these snacks and want to try them myself. I have had my Kitchen aid for 29 years and it is still going strong. Looking at the Bosch mixers I notice the bowls are plastic. I like the stainless steal bowl of the KA. The center shaft and split accessories seem like they would make it harder to scrape down the bowl. I'll stick with my KA and I'm so glad you got a Vitamix, they're amazing.

I have had both. I blew out my KA when I was baking 6 loaves of bread a week. My family bought me a bosch...20 yrs and still going strong. Lots of use with a family of 11. These look like great recipes.

I have an Electrolux/Ankarsrum mixer, after I burned through 2 Kitchenaids and one Viking mixer. I have had it 15 years and it is truly a workhorse. Mine was manufactured in Sweden under the Electrolux name, but the name of it has changed to Ankarsrum. It's fabulous for large baking, especially for a family. In Europe, they are passed down generation to generation and they are made with US plugs. You'll love it, and it lasts forever. I found the top arm mixer couldn't hold up to large quantities needed to be mixed. Good luck and God bless.
Another idea you could try for the frosting is to tint it for holidays. I know that Oreos sometimes will use spring colors and sometimes red for Christmas.

I absolutely love you!! If we lived closer we would be best friends. I try and make most of my family's food from scratch. I used to be a professional chef and baker for 10 years. My language is feeding people. Just a thought if you make the Goldfish and Oreos again you should try rolling them out using your pasta attachment. You will get them nice and thin and very consistent.
I love my Bosch. Wouldn’t trade it! It can whip, make cookies, and knead. They also have attachments to do lots of other things. It lasts so long! It has a strong motor too.
Claire is such an inspiration! Too bad about the whole Bon Appetit debacle, but oh well. Dessert Person is a delightful book and show, and I'm so happy to see more people who also love it!! The book is nothing like the experimental things she did on Bon Appetit, but still an excellent and solid desserts cookbook from many points of view (recipe testing, common sense with the steps, twists and substitutions, etc). Highly recommend, especially if you're into baking more classic desserts.
Yes. I loved that show. I was shocked when it fell apart. I’m still not comfortable about what little they shared of what happened or how it was handled. I only know it ruined it for me as a faithful subscriber/viewer. There is a weird phenomenon about TH-cam bloggers. They are easy to get attached to and it’s a blow when they turn out yucky or disappear..or to be liars. I’ve also experienced watching someone get great success and completely change. My longtime favorite homestead channel has become 80% infomercial with his success and new ventures. I decided to stop watching as it agitates me. His success is wonderful but I’m not there to buy stuff. Every single channel wants Patreon now or merch to sell. They sell, link, affiliate, redirect, etc. endlessly. Half the video sometimes. I realize the censorship of the last few years has changed the TH-cam landscape, too, so everyone harps a long list of where to find them on other channels. As if I have time to go to 10 or 15 separate sites a day. 😂😂Maybe Zuck’s Metaverse will take over soon. The omnipotent one-stop-shop! I will be in the garden. 🤎
You are so fun to watch, sometimes to the point of cracking me up! There were several moments when I thought "that's not going work", like when you overloaded the mixer, but then it all turns out great! I love that you are not afraid with recipes. That is the most inspiring thing I get watching you .. the courage to take some risks in the kitchen. What's the worst thing that can happen, right?
I think Becky would just serve leftovers or pull out a freezer meal. At least most of the time. She might have an easy backup plan to prepare from scratch the rest of the time. Not saying she would never order a pizza, but in the time spent waiting for it she could have a home-cooked meal on the table instead. 😆 But of course, few of us could pull that off so the average person would definitely order a pizza, lol.
I have to say, you've inspired me to get back to meal prepping! I'm definitely guilty of falling into delivery and frozen pizza. Anyhow,I have questions! Do you start seed inside to be ready to plant after last frost? What is your set up like? Specifically, how does the space inside translate to space outside? Like how much space do you need inside to fill a raised bed? I noticed you have lots of raised beds in your garden. Did you build those? Prefab? Lumber type? Do you rotate crops? Our garden did terribly last year and I'm looking for ideas to remedy some issues. How do you multitask? I'm constantly juggling ten things and am curious how other people work the most efficiently. I don't expect you to answer all this personally, but I think they'd make great videos! P.S. In the most loving way possible, don't cut directly onto stone counter tops if you can avoid it. Along the lines of the omnivore book you mentioned, a few years ago I told myself I can eat as much bread as I want IF I made it myself. At first, I ate more than regular bread because nothing really compares to fresh out of the oven crusty bread. However, over the whole year, I ate less bread and was more conscious about how much I ate, knowing I would have to bake more for tomorrow if I ate too much tonight. It would be interesting to try it with other foods too, then do it with everything for a month and progress to a year. I'd be up for that challenge
Love this. If one did it as an OMAD (one meal a day) I believe it would totally work. “One meal” is deceiving, though, because it’s actually an “eating window” of 4-6 hours of your choosing just so you’re consistent. My chubby hubby just drops weight like crazy when we do this. All he could eat fro 4-7pm (and morning bullet coffee). When I added keto guidelines, miracles happened.
Not a good idea for me. :( I found a fantastic no kneed recipe with minimal rising time. I can have fresh bread in less than an hour. I now make just the equivalent of 1-2 large rolls.
I'd love to try this for a month. I cook everything at home already and if I knocked out all "white" foods (no pasta machine, probably little to no bread etc) it should doable for me. Then again, I have a husband. He enjoys a glass of wine. (Wonder how well I could do that🤔 make wine)
When Claire makes snacks rule things on Gourmet Makes, she often ends up dehydrating the items, maybe that would help the texture of the fish crackers without over baking
My friend has gone through 3 kitchen aide mixers, the motors burn up, in 30 years, and still on the same Bosch. Bosch has an amazing grain mill also. To make your own flour from wheat berries.

You asked advice about boche, though it an amazing product, it lacks the versatility that kitchenaid has. Upgrade to an professional series kitchenaid. The kitchenaid can even be converted to an off-grid machine should you choose to live that way.
Plus the boche does not have all of the attachments to be used like the kitchenaid.

Try using cocoa powder to dust the surface when you're rolling out chocolate doughs. It keeps them from sticking as well as flour does, but doesn't show.😉
I got a big kick out of this. I worked in a cookie factory for thirty years and I was the creamer on the Oreo line. They mixed it upstairs in the mixing room, dropped the dough down the hopper to the bake shop where they rolled it out in a temperature controlled area and sent massive belts of rolled, cut and baked cookies down the line. It was a twenty minute journey through the oven at a graduated temperature setting, then another ten minutes from the oven to the creamer, me. I ran the machine that put the cream on each cookie. The weights of the creamed biscuits were checked on the regular. Sometimes when the cream was too dry, the tops would fall off. It was a hassle. But it was a really fun job. I have since retired. Yours looked good. The biscuit colour was perfect. They just needed to be a little thinner. You were right not to flour that dough up because it would have made a mess of that dough. Sometimes flour would get on ours, and we had to throw those out. They went to pig food. Love the rolling pin. ❤️

Hi! I made Oreos over the weekend and they're a huge hit! One modification that I made was to roll out the filing and cut it to the same size as the cookies. I'm not going to mention that I doubled the filing and made them double stuffed. 😉

You could also try dairy free cheese like snacks.
If the Oreo dough ever became sticky when you roll it out, you can simply use a dusting of the black cocoa powder instead of flour to prevent sticking.
Hi Becky! If you whip the butter for 7 to 10 minutes before you add the other ingredients, the yellow almost disappears and makes a really fluffy buttercream 😊
I own a 7 qt. Kitchenaide, Bowl lift . And also a 3.5 quart tilt head. I own all the attachments, and multiple bowls for each mixer. I’ve never been happier.
I have a Bosch, and am a former KitchenAid 5 quart mixer owner as I gave it to my daughter. I throw rocks at the KitchenAid (just kidding). There's so many nice features that the Bosch has that the KA didn't have. Bosch has a much larger capacity but still makes small batches as well. It has a wonderful bowl-scraping attachment, powerful motor, and I love that the access is from the top. PRO TIP: use a kitchen scale! For about $10, you can get a digital scale that will come in handy for SOOOOO many things. I always use it when making sauerkraut and I've never had a batch fail. Ever. A scale takes the guesswork out of recipes. Great job on your goodies 😃
I've had both Kitchen Aid 6 Qt and Bosch Mixers while raising a large family. The Kitchen Aid motor would bog down whenever making large quantities of dough for breads. The Bosch never had any issues. I've had both machines for more than 20 years, used nearly every week, and they're still going strong. I love the Kitchen Aid for doubling recipes, the Bosch for tripling or more. You inspire us to try new things; love your channel!
This is so helpful to know! I have a 6qt Kitchen aid too and know that they can't handle really big batches. I come from professional kitchens and we always used Hobart there (but they are extremely expensive!) so I'm glad to lean about the Bosch. I'm going to take a look at them now.

Is there only one size Bosch? 6.5 quart…seems like it wouldn’t hold much more than the kitchen aid. Perhaps having the lid keeps it all contained better though.
My daughter makes oreo cookies. She shapes the dough into a log, refrigerates the dough then cuts thin discs for the cookie. They turn out just right. You might try that method next time.

My mom would do that for snickerdoodles...roll a log,freeze it, then slice half an inch or so circles, then cut them into quarters. No muss, no fuss.

That’s what I do for sugar cookies, butter cookies and snickerdoodles. They are so easy and uniform that way, and no need to use cookie cutters or rolling anything out. Plus if you wished you could freeze the logs and just slice enough for a snack or dessert each time, so people don’t overeat and have fresh baked cookies

Bosch hands down! I bought mine 40 years ago and I’ve never had issues with multiple batches of cookies, not to mention that I fed my family on home made WW bread all their life. Mix it together and it kneads it Better than hand kneading, 10 min and it’s ready to rise. Again, Bosch, hands down!

I had the Kitchenaid mixer. when it finally stopped working after 20+ years I bought a Bosch. I love my Bosch. It can handle large batches. Adding ingredients is much easier because you aren’t trying to maneuver around the motor casing and beater. You can also buy different attachments for the Bosch such as the food processor. I highly recommend it.

You're lucky to have an older one! If it ever does die, you're going to have a big letdown when you see the quality of the newer ones. Mine is currently sitting in a thousand pieces on my kitchen table because the gears went bad and nobody will repair it so we're doing it ourselves with youtube and oem parts.

You can always freeze any dough that you don't want to prepare; it freezes beautifully too! Once the cookies come out of the oven, take another sheet tray and place on top of the cookies pressing gently. This will flatten them out and press some of the air out of them. I do this with my custom cookies to so they are flat.
After out of oven put on oreo shape.
Sounds right, I'm sure the makers of OREO press the image into them right after they come out of the oven. Probably a little smaller to start as well.

You are absolutely right. I am a baker, and at home I use a Bosch MUM that is over 25 years old. It grates, kneads, whips, minces whatever is needed, often in large quantities.
No breaks, no malfunctions.
After 20 years I could still buy and attach the new ice cream maker, bc they made it compatible with such an old machine, not just the new models! That is how you keep a customer.

It’s funny going back and watching this because this was the first video I ever saw of yours on my main page months ago and it got me hooked. Now I’m rewatching everything from the beginning. I had already done from a year to current but you were a natural delight from the beginning.
When our children were at home, I got a Bosch mixer so I could make dough for 6 loaves of bread at a time. I LOVE my Bosch! I have never had a Kitchen Aide but I have always been troubled by the challenge of getting ingredients into the bowl without contaminating the mixer head. The Bosch bowl is like a donut with the 'hole' of the donut the center spoke on which the attachments sit. Getting ingredients into the bowl is much easier. It is relatively easy to store the mixer under the counter as well. The height of the Kitchen Aide makes that unlikely in most kitchens. I've had my Bosch for nearly 30 years and I would not exchange it for another brand.

I never even had the concept of using a machine for making bread growing up, my mum and nanna's had kenwood chef's and they basically sat in their cupboards collecting dust - all I ever saw them use was their hands and i've done the same thing lol. About 8-9 years ago I bought a cuisinart food processor, and like the stand mixer (which i inherited in a near new state), it's sitting in the cupboard as well! I'd be interested to know if using machines instead of feeling (ie manual labour) is a predominately American thing or if it's just as mainstream elsewhere in the world.

At the time of the Bosch craze, there was another brand, DLX. It was made in Sweden. I’m still glad I bought it and would never trade it either. (bought 1995ish) I have many attachments for it. Even a blender lol

@@helenlecornu1651 I made 6 loaves of bread at a time. I COULD knead that and my son got to where he could too, but the dough kneader was so much better! I made rolls, crusts, bagels, English muffins, challah. Plus pasta.
WELL worth the expense and washing the bowl n kneader hook was worth it too. Oh YES.
Now my food processor (which the DLX was one too but I had Cuisinart I used more often), I loved for the few things I did with it. But that had more parts so didn’t get the use it deserved.
I’ve never regretted a single kitchen appliance I bought. I use all of them! But if u don’t cook much, they can become clutter, for sure.
Yes to a Bosch! They are the ultimate kitchen work horse. You can mix up 5-6 loaves of bread per batch. You can also do a double or triple batch of cookie dough. They even have separate dough whisks for cookie dough. They are the BEST dough mixer around. My Mom has had hers for nearly 40 years. She had to replace the dough whisk once, and the bowl once because the whisk broke, and scraped pieces of plastic off the bowl.
Are they a lot larger than the kitchen aid?
@@mollyl8704 No, smaller actually, and much shorter. The motor is basically a base that the bowl attaches to. They have a "compact" size, but I have only used the larger "universal" size. The only thing about the Bosch mixer that is discouraging is the price tag. They are around $450.00. It's a big investment!

I like that rolling pin. I use my sheet pasta attachment to roll dough for crackers. I use a similar recipe and just use a pizza cutter to cut them into little squares and a knife tip to make a small dot in the middle so they look like Cheezits.

Claire's book "Dessert Person" is a great cookbook. As a pastry lover and cookbook collector, her book is great for advanced baker and not intimidating for a beginner baker. Her recipes are what I would call tribute to classics pastries while proposing a wider range of flavour. It's exactly what I was looking for rather than having the same classic flavours we see everywhere.
For beginning bakers or people who just aren't as confident, try her Almond Poppy Seed Cake. It's not only incredibly simple (it's assembled just like a box cake), but also phenomenally delicious!
I just have seen the Bosch on Frugal Fit Mom’s channel. She uses it all the time and prefers it to her regular Kitchenaid. I like the lid! It keeps everything from flying out.
Kitchenaid also has a shield to prevent stuff from flying out, but most the issue came from Becky overfilling her little mixer.

Usually overfilling the bowl is the main cause. Or turning on too fast.
Or needing to not make a mess… because you barely have time to make the recipe… let alone scrape butter off your walls… so naturally everything is extra messy 🤪

I have a Bosch with many attatchments, so one appliance for blender, food processor, mixer.
Absolutely LOVE our Bosch! I use it weekly to make bread. Not only does it hold more, the built in lid contains the heat and makes for easy rising, and it has better power than my Kitchen Aid... very easy to burn out the KA motor when mixing heavier doughs.
I tried to make homemade goldfish and oreos maaaany moons ago - yours look 1000x better! You make me want to make everything from scratch. lol

I was a bridal registry consultant for several years. I’ve never owned a Bosch but from the information I learned from several brides and some online research, the kitchen aid is not designed for breads/doughs that are stiffer. A KA is designed for looser doughs. A Bosch has the motor and power for bread doughs and such. I even had brides return their KAs because the engine burnt out. So KAs have their purpose, but Bosch seems to have the power. Would recommend for the baking level you do. By the way, love the channel!
Actually, I went to visit the KA company, people just have to learn to make dough the right way in it. Your speed should never go past 2 when making bread. I have use KA for 40 years and my moms KA and Bosch and we were always getting her Bosch repaired.
Kitchen aid profession 600 watt will handle it all. They have. Variety of mix’s to meet everyone’s needs. Need lower cost, get cheaper KA. Need strong one, get pro-600 watt (non-tilt head)

Your patience is inspiring! The last time I made anything even remotely “fussy“ was cupcakes for the soccer team snack and frosted decorated sugar cookies at Christmas. I guess my point was to do it with my grandkids, but as I believe many a mom/grandma has experienced somehow you end up frosting everything alone at midnight. They just lose interest even if it sounded good to start with. LOL 😂😂 I swore I would never make anything more delicate than a bar cookie in a 9 x 13 pan ever again. A suggestion: pick up an oreo disk, ice it, and while still in hand, turn it upside down onto the second disk. That way, you are only handling the cookie once and the icing stays fresh until you are complete. Great job by the way!
I have had a Bosch for about 15 years and I gave my Kitchen Aid to my daughter a few years ago. The one thing you have to get used to is the Bosch has a center post for the hook. So you have a doughnut shaped bowl versus the regular bowl for the Kitchen Aid. It is very powerful and will power through bread dough and cookie dough without overheating. One thing with cookies, I stop the mixer before the dough is almost mixed and finish it by hand to keep from over mixing it. Also, you can get a food processor and blender attachments. I never use the blender because I have a Vita-mix but I do use the food processor. It is on the smaller side but works very well. The one thing I like is the Bosch is much lighter than a Kitchen Aid and I can store it in a cupboard when not using and take it out very easily. Hope this helps.

I've always had Kitchen Aide, but my stepmom has had a Bosch. In using both I have to say that I 100% prefer the Bosch for many reasons. Bosch is more powerful, cleaner to use because the lids lock on so nothing comes out at all, is much lighter to lift up and move, is more compact for cupboard storage and is easier to clean. I've already planned to get the Bosch Universal Plus mixer very soon as an 'upgrade' to my Kitchen Aide. Hope this input helps you. Btw, I enjoyed your video as always. 😁

I'll never give up my kitchenaid mixers! I do recommend getting a paddle attachment with the side scrapers on it though. You don't have to keep stopping and scraping the bowl with that paddle attachment. Huge time saver for me! I got mine like 12 years ago and it's still going strong.
I've had mine for over 15 years and I love it. My grandmothers have had theirs as long as I can remember.

I had a kitchenaid for years (20 + years) and the motor finally quit. I went with the Bosch and do not regret it. I love that it doesn't have the arm that drops down and gets in the way when adding ingredients. I also love that you can add a scraper attachment that keeps the sides scraped down as you mix. My only hesitation is that the paddles are hard plastic and I worry that they might break. So far so good, they have performed well, I just hesitate with plastic.
Completely understand your hesitation (my friends mom was hesitant about that too apparently) she's had hers for 5 years now and no problems! Hopefully that easies your mind!
The Bosch is amazing. My husband bought me mine because I make lots of breads. The Bosch has a better motor for that. It also has a huge capacity which is amazing for making large batches of cookie dough.
You cook so many great things. I love baking. My hot tip would be to cream your butter and sugar longer. Especially for the frosting, whip your butter until it’s much lighter in colour, it will make a much better frosting.

I just wanted to refer back to one of your previous videos. It's only natural that you don't need much honey in your banana bread recipe. Honey has three times the sweetness of sugar. So for any recipe you can divide the amount of sugar by 3 to convert it into honey ( I admit it's easier to do with the metric system than with cups). The only thing to remember is that honey retains moisture so it's great for cakes but not so much for shortbreads.

I have a Bosch and I love it! I have had the same one for almost 21 years and it is still going strong! The motor is strong and I can fit up to 16 cups of flour along with the rest of the ingredients needed when making bread! There are several attachments and I feel like it is a step up from the kitchen aid!
Homemade powdered sugar is super easy. Just put it in a blender and blend it till itʻs as smooth as you want. I dont buy powdered sugar anymore i just make it as i need it.

I got my Bosch for Mother's Day and I LOVE it! So much nicer than the KitchenAid. You can d enormous batches of cookies and 9 loaves of bread! It mixes so much more thoroughly than the KitchenAid can. I think you would be really happy with it!
Hi Becky, I have a 5qt Kitchen Aid and a 6 qt Kitchen Aid. also the Bosch Universal Plus. For large batch baking the Bosch is much better !

One of the things that Claire Saffitz does when cookies or candy are not dry enough is to dehydrate them for a bit. Maybe you could try that with the cookies and crackers. Great video!
I agree. Claire used the dehydrator a lot to make things crispy. Miss her making those videos.

When she opened the circle cutters I was like YES! I have the same cutters. They're awesome. You never know when you need a different size & no worries about breaking a glass by using it and hoping you don't press to hard. I've used them for everything from biscuits to russian dumpling dough to cutting out the core on apple slices I was dehydrating.

The downside to enlarging a recipe is the measurements for the ratio of dry vs fat changes drastically when you go past doubling it in size. Doubling in rounds of two would have been better. Bosch, depends on the model. Try to get the more solid ones, do your research. Otherwise, yah, KitchenAide has not released in the USA a larger version, that I am aware of. Either are good, just make certain you get the solid cast metal ones.
I had a Bosch 25 years until we, as seniors, had to downsize. Then I gave it to a newly wed as it was going strong. Love, loved it. I made 6 loaves bread each week and it handles it like a dream. The I also used it with all my other baking. I had a blender attachment, well used, the food processor attachment and everything worked excellent. I miss it greatly but on a limited income I cannot replace it, which I would do. I kept my Kitchen Aid and regret not keeping the Bosch instead. I highly recommend Bosch over the other mixer!
I just made these today Becky. I improvised on the entire recipe. No goldfish cutout so I used a square like a cheese it. I only had jalapeño pepper jack cheese because I’m still doing the pantry challenge. They turned out pretty tasty considering I’ve never made a cracker before. Thanks for sharing.

i was in the middle of working when i seen the notification for this video and i shouted "yes!! becky's video is finally uploaded" i was so excited!! i love the little fish although i don't have that much time and was wondering maybe i could do the same recipe but make it more like a cheese it but a little larger so i could put tuna or chicken salad on it. yumm!!!! so exited!!!
My advice with the oreo dough is to roll it out and then chill them. This is what I do for gingerbread dough. I roll it out first and then chill it, then cut it, then bake it. :) To keep it from getting sticky, just roll between parchment paper like you attempted to do in the beginning. Then put it on a cookie sheet and stick that in the fridge for an hour or in the freezer for 30 min. Then cut out and go!
I have an 8.5 quart cooklee mixer and absolutely love it. It’s bigger and has a stronger motor than my kitchen aid. It’s way cheaper too. The cooklee mixer is cheaper on Amazon now than when I bought it. And it comes with a shield so nothing falls out of it when mixing and you can use kitchen aid attachments.
I think the idea someone had about running the dough through your pasta machine is an awesome idea

Hi Becky! I cook everything from scratch as you do. Therefore, I highly recommend the larger Kitchenaid. The new ones even have a glass bowl if you want one. I always make several batches and have yet to have an issue. 32 years and counting! I actually have two Kitchenaid's now since I inherited my mom's. It is so much fun to work with two!
Becky I would possibly consider getting a Kenwood Chef mixer, it has a bigger bowl and a higher power motor. or you could biy a second hand commercial mixer such as a 10 litre hobart mixer.
My husband just got me a Bosch mixer, I’ve had a kitchen aid for 20 years! I’m blown away by the difference in power first off. I don’t struggle with my large batch of cookies or bread anymore! I’ve had it for close to 2 months & I use it almost daily. Get the Bosch mixer🤣 you won’t regret it I promise!
I've used both Bosch and Kitchen aid. I have used a Bosch my whole life, so when I used the kitchen aid, I hated the big mess it spewed out all over the place all the time! I love that you can make 5-6 loaves of bread in one batch with the Bosch. I used it for everything! Cookies, breads, frosting, whipping cream, chicken blends, etc. I love my Bosch! I love that you made these snacks and want to try them myself. I have had my Kitchen aid for 29 years and it is still going strong. Looking at the Bosch mixers I notice the bowls are plastic. I like the stainless steal bowl of the KA. The center shaft and split accessories seem like they would make it harder to scrape down the bowl. I'll stick with my KA and I'm so glad you got a Vitamix, they're amazing.

I have an 8 quart Kitchen Aid and love it! It’s 1Hp versus watt and it runs very quiet compared to other kitchen aid mixers
I have had both. I blew out my KA when I was baking 6 loaves of bread a week. My family bought me a bosch...20 yrs and still going strong. Lots of use with a family of 11. These look like great recipes.

I have an Electrolux/Ankarsrum mixer, after I burned through 2 Kitchenaids and one Viking mixer. I have had it 15 years and it is truly a workhorse. Mine was manufactured in Sweden under the Electrolux name, but the name of it has changed to Ankarsrum. It's fabulous for large baking, especially for a family. In Europe, they are passed down generation to generation and they are made with US plugs. You'll love it, and it lasts forever. I found the top arm mixer couldn't hold up to large quantities needed to be mixed. Good luck and God bless.
Another idea you could try for the frosting is to tint it for holidays. I know that Oreos sometimes will use spring colors and sometimes red for Christmas.

I absolutely love you!! If we lived closer we would be best friends. I try and make most of my family's food from scratch. I used to be a professional chef and baker for 10 years. My language is feeding people. Just a thought if you make the Goldfish and Oreos again you should try rolling them out using your pasta attachment. You will get them nice and thin and very consistent.

I love my Bosch. Wouldn’t trade it! It can whip, make cookies, and knead. They also have attachments to do lots of other things. It lasts so long! It has a strong motor too.
Claire is such an inspiration! Too bad about the whole Bon Appetit debacle, but oh well. Dessert Person is a delightful book and show, and I'm so happy to see more people who also love it!! The book is nothing like the experimental things she did on Bon Appetit, but still an excellent and solid desserts cookbook from many points of view (recipe testing, common sense with the steps, twists and substitutions, etc). Highly recommend, especially if you're into baking more classic desserts.
Yes. I loved that show. I was shocked when it fell apart. I’m still not comfortable about what little they shared of what happened or how it was handled. I only know it ruined it for me as a faithful subscriber/viewer. There is a weird phenomenon about TH-cam bloggers. They are easy to get attached to and it’s a blow when they turn out yucky or disappear..or to be liars.
I’ve also experienced watching someone get great success and completely change. My longtime favorite homestead channel has become 80% infomercial with his success and new ventures. I decided to stop watching as it agitates me. His success is wonderful but I’m not there to buy stuff.
Every single channel wants Patreon now or merch to sell. They sell, link, affiliate, redirect, etc. endlessly. Half the video sometimes.
I realize the censorship of the last few years has changed the TH-cam landscape, too, so everyone harps a long list of where to find them on other channels. As if I have time to go to 10 or 15 separate sites a day.

There were several moments when I thought "that's not going work", like when you overloaded the mixer, but then it all turns out great! I love that you are not afraid with recipes. That is the most inspiring thing I get watching you .. the courage to take some risks in the kitchen. What's the worst thing that can happen, right?
You order pizza when your meal flops! I had to do that a couple of times.
I think Becky would just serve leftovers or pull out a freezer meal. At least most of the time. She might have an easy backup plan to prepare from scratch the rest of the time. Not saying she would never order a pizza, but in the time spent waiting for it she could have a home-cooked meal on the table instead. 😆 But of course, few of us could pull that off so the average person would definitely order a pizza, lol.

Do you start seed inside to be ready to plant after last frost? What is your set up like? Specifically, how does the space inside translate to space outside? Like how much space do you need inside to fill a raised bed?
I noticed you have lots of raised beds in your garden. Did you build those? Prefab? Lumber type? Do you rotate crops? Our garden did terribly last year and I'm looking for ideas to remedy some issues.
How do you multitask? I'm constantly juggling ten things and am curious how other people work the most efficiently.
I don't expect you to answer all this personally, but I think they'd make great videos!
P.S. In the most loving way possible, don't cut directly onto stone counter tops if you can avoid it. It's terrible for your knives, and you have some pretty nice knives. Take care of them!

Along the lines of the omnivore book you mentioned, a few years ago I told myself I can eat as much bread as I want IF I made it myself. At first, I ate more than regular bread because nothing really compares to fresh out of the oven crusty bread. However, over the whole year, I ate less bread and was more conscious about how much I ate, knowing I would have to bake more for tomorrow if I ate too much tonight.
It would be interesting to try it with other foods too, then do it with everything for a month and progress to a year. I'd be up for that challenge
Love this. If one did it as an OMAD (one meal a day) I believe it would totally work. “One meal” is deceiving, though, because it’s actually an “eating window” of 4-6 hours of your choosing just so you’re consistent. My chubby hubby just drops weight like crazy when we do this. All he could eat fro 4-7pm (and morning bullet coffee). When I added keto guidelines, miracles happened.
Not a good idea for me. :( I found a fantastic no kneed recipe with minimal rising time. I can have fresh bread in less than an hour. I now make just the equivalent of 1-2 large rolls.

I'd love to try this for a month. I cook everything at home already and if I knocked out all "white" foods (no pasta machine, probably little to no bread etc) it should doable for me. Then again, I have a husband. He enjoys a glass of wine. (Wonder how well I could do that🤔 make wine)
When Claire makes snacks rule things on Gourmet Makes, she often ends up dehydrating the items, maybe that would help the texture of the fish crackers without over baking
My friend has gone through 3 kitchen aide mixers, the motors burn up, in 30 years, and still on the same Bosch. Bosch has an amazing grain mill also. To make your own flour from wheat berries.
