Hi Mary, I LOVE crepes--my friends from France taught me how to make crepes, and I've made them regularly since then. They are very easy, and Lisa, my friend, just put 1 cup of flour, 1 egg, 1 cup of milk, and 1 tablespoon of oil or butter together with some salt, stirred it up, and voila! She would oil up a cast iron pan, like you, and between every crepe she had a little cloth that she dabbed around with oil on it to keep that pan nice and smooth. The same cooking technique as you, and she liked to roll them with fruit and some maple sugar or syrup (we're in VT), but I think your idea of making a syrup with maple syrup extract is a great idea. I've also heard that simple syrup made with daylily blossoms can be a nice substitute! I'm going to try crepes with the sourdough discard, I think that's a great idea.🌻
Ohh pumpkin is my favorite squash. I love it savory or sweet. Pumpkin soup is probably my most favorite soup other than pea soup and of course pies I can’t wait to try these but I just made biscotti yesterday using your first recipe so I have to wait till they’re gone. Thanks for sharing.

I made pumpkin soup few days ago and even used some of it as dip. Happy to know that baked cookies can be made with pumpkin too. 🤩🤩🤩
