A little tip, use garlic that doesn't have any green little stems, and it helps if you checked the inside of the garlic cloves by cutting them and if a clove had some sort of a core remove it and use it for other stuff This way you get garlic flavor, not garlic spiciness Moreover, don't do it exactly like the video, blend it more and add the oil slooowly as if you were making mayonnaise (thin continuous string of oil) .you can add a little bit of starch but it's a bit tricky to nail down how much (not a lot though, a tiny amount flower works) at home we use eggs as a binder it gives it a bit of a fatty flavor and lessens the potency of the garlic (we like it) , keep blending and blending until it become creamy and has no texture at all Just like mayonnaise the key thing is, lots and lots of blending and slooooow addition of oil
It really is amazing stuff. In Michigan this is a cheep easy to make sauce. I found that mixing it with a spoonful of Greek yogurt or blue cheese makes the perfect wing dip. Sour salty savory and it makes my girls 🐈⬛️ smell like America

I suggest making it in a food processor and slowly adding your lemon and oil, it’ll come out way more fluffy and have more body than his final product
