I started my brewing career by making wine when I was at school. Moved on to beer, and back to doing wine now, mostly riesling, but with a difference... Firstly no oak, and I stop at the degassing step, and run it through a still, then onto oak, and turn it into brandy.... oh and most of my beer has no hops and I turn it into Single malt Whiskey

Made a Rioja a while back and it did take a couple of years for it to mellow out. A California Cab will cellar really well. A good storage temp between 7°C to 11°C will keep the Cali Cabs in good shape for at least 10 years no problem. Nicely drinkable in 3.

This brings back memories from the mid 80s when I first started drinking, the second alcoholic drink I had was 4 bottles of red wine at a party, I was so sick the next morning I vomited, but I must admit it was nice, now days the young ones get those Goon boxes and get hammered on those. Cheers 🍷
