This recipe and technique is divine. I've never heard of yeast cake before today. This seems like the best of both worlds. Like a hybrid cross between a cinnamon roll, vanilla cake, bread and honey with buttery nuts and apples. What's not to love! I've recently started making breads using yeast and have been leaving the dough sit overnight. Never worked with yeast before. Always been intimated by the little critters. Plus, to 'knead or not to knead'??? It seems like an Art form. But, I'll be making this recipe and it looks fantastic. Clever as ever! Thank you for sharing.
Wow!!! This is a very nice coffee cake. As I'm eating it every night, I keep thinking I've had this before. Tonight I put a spoonful of apricot jam on it. Oh my heavens. Stephanie thank you again for sharing this lovely recipe with us. My mind floated back to my childhood. My mom was pulling out apricot coffee cake. We waited just a few minutes for it to cool only slightly. She serve it with homemade whipped cream. It was so yummy. Turns out this is the taste I remember. My mother passed away many years ago. And unfortunately when she passed, one jealous relative grabbed her cookbooks and through them away. Both my grandmother and mother baked wonderful desserts. I love to bake also. I love it when I come across a recipe that brings on a flood of good memories of both my grandma and mother in the kitchen baking together. I feel so very blessed to have found you. Normally, I would add a lemon-cream cheese glaze over top but the apples will give it that tartness to counter the honey/brown sugar. It’s made of silicone. Lately I haven’t been able to find it anymore and I’m not sure why because they are great.
