Monique girl, I made this cake a few weeks ago for the residents I cook for at my job. Let me tell you that this is THE ABSOLUTE BEST CAKE I have ever made. I scaled it to make enough for like 96 portions and it made a ton of batter. Like enough for like 3 and half hotel pans so it was plenty to serve for 2 meals(next time I'll scale it back a little bit). One of the staff members had a piece and told everyone else about it, to the point where they wanted me to make it for the Spring Fest that same week. They kept taking like 2-3 pieces at a time, also I had 2 other staff members ask me to make them one a piece. I of course told them it wasn't my recipe because I didn't want to take all of the credit. But this recipe is dangerous and should be locked away never to be released again( lol JK)

This cake was fantastic! I reduced the amount of sugar in the frosting, but kept to every other element of the recipe. The cake was moist and delicious. It’s a permanent addition to my recipe book for sure!

Whoa. You got me when you said, no buttermilk !! Make sense because I haven’t seen you use sour cream a lot. Or butter vs. butter flavored shortening. I’m def going to give this a try. Making an almost nut butter from the pecans is genius.

I grew up deep in Mississippi, but we’ve never pronounced it as pea-can where I live ( even though I know that’s likely correct ) we’ve always said puh-con, so I really enjoyed listening to you say pecan, I think it’s cute when people pronounce it that way lol
So as I was listening to her, I was thinking the same thing! I’m also from the South and have always pronounced and heard others pronounce it like you do.

I made this 2 days ago. It tasted soooo good the day it was made but after it being in the refrigerator it got a lil dense(when it comes to cake storage and texture Oil and buttermilk always yield the best results but butter makes it taste amazing). I was conflicted on how to store it(a cream cheese frosting always becomes too soft for my liking at room temperature but if I put the cake in the fridge the actual cake becomes dense because of butter hardening so it was a tough decision) Next time I'll try making it with oil instead since oil will remain the same consistency in the fridge

I like this video and I can't wait to try this recipe and compare it to my mother's. Funny story: my mother (rip) was born in Alabama. Every time I would say pecan - the way you say it - she would go crazy 😜. She would say "young lady! Pee-cans are for truckers; we don't eat them! The word is "peakon". I say all this to say that hearing the way you pronounce pecan brought some loving memories of my mother who died when I was 14. (I'm 37 now). So thanks for the recipe and the shaking of my memories.

I always make my cakes from scratch, growing up, my family would always use cake mixes for cakes and use boxed pudding for banana puddings
