That camera should be the same thing as an OV2640 2 megapixel camera, making it potentially usable in the future. Im guessing, but i think it should work with a raspberry pi or as a replacement camera on an esp32-cam board. The winbond chip is RAM or flash memory of some sort.
Your videos are great. May I ask if they could not be improved by having an overhead camera where the focal plane is the bench, whereby everything on the bench is in focus and nothing is then in the way of the camera? Please do not think I am criticising in any way, it is only a suggestion that might help us see things more clearly or at least all in focus. Thank you. K Who

I've thought of that before and rejected it. I don't like the perspective
