  • Hilah shows you how to store produce so it stays fresh as long as possible! Two biggest enemies of fresh produce are ethylene gas and wetness. Learn some simple tips to keep your garden-fresh produce vibrant.
    High ethylene gas producers: Bananas, avocados, tomatoes, mangos, potatoes, stone fruits (peaches, nectarines, apricots) pome fruits (apples, pears, quince)
    Ethylene-sensitive produce: Potatoes, sweet potatoes, onions, corn, greens, green beans, cucumbers, cruciferous vegetables (cabbage, cauliflower, broccoli)

    Actually, vegetables release ethylene gas. In fact, ethylene gas, along with moisture, cause most vegetables to deteriorate. Here are a few common vegetables that actually do release ethylene gas, asparagus, broccoli, brussels sprouts, cabbage, carrots, cauliflower, cucumbers, green beans, lettuce and many more. Mike ☺

    The trick to not crying when cuttign onions is not to form an emotional bond. For example it helps if you don't give your onions names.

    I've kept onions in the fridge for years now, and it's my preferred way to store them. I normally don't store much else in the drawer with them, and the last for months. I learned the water "vase" and loose bag trick a couple years ago for cilantro and it's been a life-changing trick.

    • @HilahJohnson

      I guess when you think about it, the crisper drawer is the closest thing we have to a root cellar in these modern times!

    • @trishfitzpatrick2066
      @trishfitzpatrick2066 5 ปีที่แล้ว +2

      Keeping onions in the chill chest causes the sweetness (yeah, they DO have an element of sweet) and moisture to turn to starch which blunts the flavor severely. A clever trick used to be putting each onion down the leg of a cut off pantyhose (knotting it between each one), hanging the unit in a closet or pantry for dry darkness, then using scissors to release each one for use. But pantyhose aren't so popular anymore. A net bag is handy to do the same.
      They can be stored in ANY kind of box (shoe box, eg) and put in a draw or cabinet (as long as there's no plumbing/moisture involved).

    My Grandparents used to put charcoal in their root cellar and fridge. Old timer's trick, the charcoal absorbs odour and excess moisture plus fruit and veggies gases.

    Many people in this comment section have a very mistaken idea about onions. Storing them in the refrigerator causes them to turn starchy and bland. They belong in a dark, dry, COOL place. Our onions today are very little like those of old times where a hole in the ground was used for storage. Technology has worked its magic so that we get MUCH BIGGER and sweeter onions that have a limited shelf life along with the old style yellow version which is hotter and lasts longer. Still, the storage needs are NOT met in a chill chest! You're sacrificing a huge amount of flavor that way.
    The idea of putting towels in plastic bins for greens is okay but using a 2 gallon ZipLock bag with several paper towels is far more convenient since it takes up far less space in the fridge. Plus, when you are done using those paper towels, let them dry out and they will be perfectly okay to clean up spills and messes as a second use.

    I've found that storing onions and potatoes together also tends to get the potatoes sprouting eyes and turning green earlier than if I'd kept them separate as well as turning the onions into overripe mush. I'll have to try the cold onion trick too, I'm always dripping with tears when I cut them.

    I agree with just about everything here. Great video, Hilah!
    I also store my onions in the fridge. We buy them in bulk, wrap them individually in newspaper (mostly just separates them, I think), and store the in the crisper of our "extra" fridge. They last pretty well in a dark cabinet, but with our humidity here, the fridge seems to give a few more weeks and more consistent results.
    I've personally found a paper bag doesn't work that well with button or cremini mushrooms. The package they come in seems to give me a pretty good window, whereas a bag seems to make them shrivel. It makes sense -- why would producers pack them in a way that decreases shelf life (pre-sliced aside)?

    • @hilahcooking
      @hilahcooking 8 ปีที่แล้ว +1

      Yeah, for the mushrooms I guess it just depends on how quickly you're going to eat them. Sometimes it takes me a week to cook them and I'd rather have them a little dried out than gone squishy. I've accidentally dried them completely before, forgetting them in there for a month. They were still a good addition to my stock pot, though! :)

I store onions in a ice cream bucket and I put on top of my fridge. I don’t get a lot because I don’t like rotten onions so I don’t store in fridge it get jam packed and forgotten.

      +Hilah Cooking if you cut apart every banana and put a piece of plastic on the tip covering it perfectly those will last a few extra days, thou they'll get dark on the skin quite fast, still perfect on the inside which is what matter

      Oh, okay. It's funny that just in the last couple years I have seen grocery stores start selling banana bunches like that, with the stems wrapped up in plastic. I store ripe bananas in the fridge, too, and you're right they look unappealing (un-a-peel-ing!) but the insides stay fine for a few days. I do the same with ripe avocados if I need to buy myself a couple days, too.

    Needs correcting: Ethylene gas producers next to Ethylene sensitive produce is a big no no. Veges for example include items like tomatoes, onions, peppers, lettuce... that fall into 1 or both those categories. So there's more here that makes this is incomplete to follow, yes some is good but follow with caution. Not all veges & not all fruits necessarily should be in the same drawer or not always refrigerated. Ex apples & bananas never put together. Both fall into both categories above. Temp control is important too.
