World's Best Breakfast Recipe - Shakshuka AKA Tomato Eggs

    When it comes to Shakshuka, I'm a purist. I like to keep things simple and easy, focusing on the two star ingredients - the tomatoes and the eggs. The spice of the harissa (a magical Tunisian chili paste) and smokiness of the Spanish paprika are GLORIOUS alongside the sweet yet acidic tomatoes and creamy, rich eggs. Shakshuka is the ultimate breakfast or brunch dish because its all cooked in a single pan and can easily feed a crowd. Plus, its super healthy and will leave you satisfied but not weighed down.

    N.B: The measurements for this Shakshuka recipe should be taken with a grain of salt (see what I did there?!) Jokes aside, Shakshuka is something you should experiment with to find the perfect balance of spice, acidity and sweetness that works for you. Measurements will vary depending on the sweetness of the tomatoes and onion so be sure to taste and season in stages! I promise, once you make it, you will make it time and time again! Enjoy!
    Ingredients:
    1/8 cup Organic extra virgin olive oil
    8 Eggs (this recipe calls for 2-3 eggs per serving (I usually eat 3 eggs in a serving. You can easily adjust other ingredients depending on how many servings you are making)
    5 large, ripe tomatoes - chopped into 1” cubes (overly ripe tomatoes are perfect here)
    1 medium onion - diced
    3-5 cloves garlic - roughly chopped (use more or less depending on your garlic tolerance. Also, mince or dice depending on how you like your garlic. I prefer a rough chop for this recipe because the garlic will have less of a chance to burn when frying if left larger.)
    1 tsp smoked Spanish paprika
    1 ¼ tsp harissa (use more or less depending on your spice tolerance - this stuff is HOT!)
    Salt and Pepper to taste
    1 handful kalamata olives - roughly chopped and pitted (substitute any olive you like here)
    1 handful fresh cilantro/coriander - roughly chopped (substitute parsley, dill, mint, or tarragon)
    Method:
    1. Heat a large, cast iron skillet over medium heat.
    2. Add olive oil to the pan.
    3. Add onions and garlic to the oil, season with a pinch of salt and sauté for 10-15 minutes until translucent and soft - stirring occasionally so as not to burn.
    4. Sprinkle in smoked paprika and coat the onions and garlic. Toast for 1-2 minutes, stirring constantly to prevent burning.
    5. Add in tomatoes and season with another pinch of salt and freshly cracked black pepper.
    6. Toss the tomatoes with the onions and garlic. Lower the heat to a medium-low and cover the pan with a lid to trap the steam. Continue to cook the tomatoes for 10-15 minutes, stirring occasionally to prevent the bottom of the pan from burning.
    7. When the tomatoes reach the desired “chunkiness” (very technical, I know!) remove the lid and begin to crack the eggs directly into the tomato sauce. TIP: With your wooden spoon or spatula, create a small hole in the sauce and crack the egg into the hole you’ve created. This will help the egg to cook into the sauce, rather than over top of it.
    8. Cover with a lid and cook until the whites have hardened but the yolks are still runny - approximately 6-8 minutes (This is personal preference. If you prefer your eggs well done like my picky brother, cook them a little bit longer.)
    9. Remove from heat and garnish with your olives and fresh herbs.
    10. Serve and enjoy your Paleo Shakshuka.

      Sherry Roberts stock is the best. I keep my onion peels, carrot peelings and ends, and celery tips in bags in the freezer. When we have a steer butchered and have bones I cook 5 pots all day. House smells great.

    I'm Mexican and my dad used to make something like this but.no harissa instead sliced poblano (rajas) and he would add leeks to the onions and some finely chopped kale sautéed at that time and then add tons of tomatoes lastly add the eggs like you did and cover at end he would add some cilantro and green onion and some fresh cheese like a feta type and we would eat with tortillas or a really nice baguette

    He is right on the portions. I had 3 eggs and I want more now. It is very mouth watering. the fresh tomatoes, cilantro and kalamata olives gave this dish so many layers on your palette. You must try this.

    One of the best Shakshuka recipes! Just one suggestion for people with gastritis, add a pinch of sugar into the tomato sauce before adding the eggs. It has nothing to do with seasoning, and it will not change the taste, the sugar will neutralize the acid in the tomatoes. Well done, excellent job!

      Not to be a dick here but sugar does not neutralize acid - that's just wrong. It just disguises the flavour. You need a base, like baking soda. Actually in first year uni chem you know even to calculate the grams of soda required to neutralize the tomatoes. Not that hard with ph strips and a scale.

    I made this right after I watched it. I did switch it up a little, I added kale and mushrooms in with the tomatoes and I fried my eggs, as I am not into poached eggs, but let me tell you.................. They were the best eggs EVER created. If you don't eat your eggs like this you are missing out on life!!!!!!

      One variation you can start with sausage, cut the sausage in pieces and start with sausage before you put your onion into the pan. We use fresh paprika as well. bell pepper is not good, better yellow fresh paprika, or similar. Or you can cook with rice: you start with sausage but do not need eggs in this case.

    I was just in Tunisia and I found it such a fascinating country. There is so much history and the world needs to find out how fantastic their culinary is. Ojja which is their version of Shakshuka is served with this spicy sausage called Merguez which is absolutely Devine, not mention their olive oil which I personally think it tops the Italiand and Spaniards oils by 100 to 0. Their coffee and spices are out of this world.

      no billy, the heat is of course not low but medium, but the garlic and onions have turned translucent or golden brown

      Contrary to the non cooking know it alls here, you can't "sweat" onions. You either cook until translucent or brown them. You don't need to let chopped garlic set for allicin to "activate" and if you don't want to burn your garlic or onions turn freakin heat down!

    In Algeria, Morroco, Tunisia shakshuka is a very common meal that people eat for lunch or dinner. It's made with onions, tomatoes, courgettes ( zucchini) or ( and) eggplants , green peppers cooked in olive oil and spices. You Can add eggs at the end. It's delicious.

    I make this dish a lot, usually for a simple dinner. I use organic free range eggs. I cook the eggs for more time than he has but that is my personal preference. I like the whites to be totally cooked and the yolks to be oozing rather than runny. If fresh tomatoes aren’t available I sometimes use a high quality tomato sauce from the store. Delicious!

    I lived in Tunisia; this bring back memories! If you cannot find harissa, you can get about the same flavor by combining garlic, paprika (already in the recipe), caraway and coriander seeds (ground), plus some cayenne to get the hotness. I like to do my chakchouka as a main dish with green bell peppers (add them to the sauce) and merguez sausages (grill them separately and put them on top. Tks for the video. It is a glorious recipe.

    I was convinced when you added the smoked paprika but when you added the Harissa, I was in love. I prefer my eggs a little more done but this looks phenomenal, thank you

      You should be brave with your egg experience my friend! I too used to be scared, but now the French scramble is my go to method. I don't know what it is that caused raw egg to become undesirable, but having taken the leap (along with well cooked fat/marrow) I can say it purely depends on quality.

    This dish was made for me 40 years ago while I was in Dubai, I loved it. and have been cooking it since... but always the eggs are cooked, not like in this video, but i guess it's all a matter of your personal preference.

    My mom has cook this for me but without the olives and cilantro as a Mexican version of Huevos Rancheros adding fresh Jalapeno peppers instead of the chili paste. This tastes very good but now I got to try ur version with Olives and cilantro. Great video makes me think about my childhood days still living with my parents.     My father used to and sometimes still does make this for Friday breakfast,since it's a weekend in KSA. We don't put in some of the mentioned ingredients like olives, paprika,garlic etc. but still it tastes amazing! Always brings back childhood memories. And to my surprise, when I came to Pakistan, I got to eat it, but with another name, "Anda ghuttala", meaning scrambled eggs, 'cause instead of cooking the eggs just like that,they scramble the ingredients together.

      @Anne martedela ( kind of sliced salami meat) jubna or other mild cheeses, zait and zatar which is a combination of olive oil and herbs, nice warm fresh olive bread it’s all preference and for a nice and healthy pallet cleanser after I usually have sliced fruit (strawberries, bananas and kiwi) with natural yogurt with a tiny drizzle of honey 😌

    Southern Italians make this its called "L'uovo in Purgatoria " Eggs in Purgatory " Add fresh basil and parsley. (No paprika) With romano cheese on top. You can add crushed red pepper. On a nice piece of Italian bread. Hes right. It's not purgatory. Its Heaven!😋

      When I visited Morocco my hosts served me wonderful couscous with vegetables. I understand that's the national dish and most Moroccans have couscous with vegetables at least once a week. We also had this fantastic Harira soup during Ramadan. Two super healthy Moroccan dishes. :)

      Moroccan Cuisine has long been considered as one of the most diversified cuisines in the world…is a mix of Arab, Berber, Moorish, Middle Eastern, Mediterranean African, Iberian, and Jewish influences. We eat Couscous or Kesksou on Friday after the prayer. We have delicious tajines as well. And we have so many other dishes !!!!!!!!!! I am glad that you enjoyed our food in Morocco, it is the best one :).

    in Turkey we have a meal called "şakşuka" (spelled exactly as Shakshuka) but its different than Shakshuka. This meal called "menemen" in Turkish. its quite popular. we eat in breakfast and lunch.

      Isn't the word shakshuka, or chakchuka as we call it in North Africa, a Turkish word? We were part of the ottoman empire for some 300 years and inherited many Turkish cakes like charaak (moon cakes) and baqlawa, and we even have a dish called kebab, but different from the standard one. It's basically French fries thrown in a meat/chicken and chickpeas white sauce , with a mixture of egg and parsley added at the end .

    I really appreciate this video and I just finished making a batch! I cheated with the spicy sauce and added cayenne pepper instead, and also added some orange bell pepper because i had a few ready to be consumed. Instead of cilantro I had some basil. I really just wanted the excuse to use LOTS of garlic. I am not disappointed. :D

    Shakshouka is actually Tunisian and it does have a meaning. Now I don't know which came first, but we refer to something that is a mix of a lot of things and usually becomes incomprehensible in result as shakshouka. For example you can be studying maths and a lot of variables come into play so you're like "ekh this is becoming shakshouka!"

    I am from Cochin ...all the way down South of India .....we do make a dish similar to this but we add turmeric ginger cumin seeds or pd ...instead of cilantro it us curry leaves ....less tomatoes but a bit of coconut vinegar

    My late-night Canadian-Shakshuka recipe;
    *red onions*
    *green onions*
    *peppers* sizzled in tomato/basil sauce with *ham/preferred meat* (cook first with oil/onions/peppers)
    then add *egg, garlic, pepper, spices* topped with *mozzarella* and preferred-garnish (bit of kief). :)

    THANK YOU for this simple and delicious recipe!!! I've made it several times now using home grown tomatoes and it gets better each time. At first, I didn't have the two magic ingredients (SMOKED paprika! and Harissa). I tracked them down at a middle eastern grocery (along with some Bulgarian feta cheese :). What a difference! It's got a smoky, spicy, complex flavor that's remarkable. Thanks for this wonderful recipe.

    I love to make anything with eggs.
    Scramble eggs with tomatoes, scramble eggs with shrimps, scramble eggs with oysters, scramble eggs with onions, scramble with beef, etc.
    Yep! Am a EGG person.
    But, will try this style too, looks so yummy ! 😋

      This. I understand the tennants of the american "Paleo" diet, but I can't imagine eating Shakshuka without some kind of bread. Not trying to make any Paleo dieters regret their decision to live healthy, but spoon this stuff on top of a crunchy toasted slice of wheat or rye caraway seed bread and the texture contrasts and flavor contrasts are a dream.

    I watched this before and made it tonight for dinner. I confess I used tinned tomatoes and added red n yellow peppers. With basil and parsley (had them home grown). Was ab fab!

      this should be served with bread I totally agree on that point!! And let the egg be cocked a little bit more. So you don't get sick because it is too raw.

      you should make your own Harissa paste. Best recipe is Chef John Food Wishes. I substituted the Fresno Peppers with yellow Hungarian Peppers (chile güerito) and that taste AMAZING as well.
      it freezes beautifully.
      so does the shakshuka sauce , mi us the eggs.

    I loved this last show as I did the other ones because it also had the most essential features to make it fun, amusing, interesting, and perfectly harmonious with how I catalog my thoughts and remember sequences of steps while cooking. At the end of your teaching, I often have a nice mental map that your fine teaching style helped me construct in my head.     I make it with cumin, dried coriander and chili flakes. Can't find the chili paste.
    And as a small note: it's pure medicine for a hangover.

      They cook with the tomato heat just cover the top and let them cook in, they are arent crude, just creamy, but yeah some people dont like it.

    I think this recipe is universal, as a Brit this was my recipe breakfast / meal as a child especially when not feeling well. didn't have a fancy name, 'eggs and tomatoes' but more or less the same, without the olives and with more butter, still enjoy it

      Mr, Turkish, when you add to the mixtures of onion, (not garlic) tomatoes and eggs any other veggie it is NOT Shakshuka. You can name it whatever you want in Turkish. And for your info, The Original is from the Syrian cuisine and was taken from there.

    Ohhhh MY GOSH!!!!!
    I just made this as per your recipe , even down to the cast iron skillet.
    The only things I changed are.
    1. I put about 3 teaspoons of hirassa in.
    2. Used Greek pitted Kalamata olives.
    Other than these two things the recipe was identical. I have to day this is one of the best most addictive tasted me and my partner have ever enjoyed.
    Thanks so much for the recipe , this is going to be one of my go to breakfast recipes from now on.

      Na it doesn't seem to , I mean it's a bit dry after the cook but you just wash it and apply a thin layer of vegetable coating and it's fine.
