- Fried Killer Spaghetti: the Italian Recipe That Breaks all Pasta Rules
Method:
In a saucepan add 1USqt/1l of water, 2 spoons of tomato paste, 10,5oz/300g of tomato sauce, 0,4oz/12g of salt and bring to a boil, then cook for 5 minutes.
Clean the garlic cloves and chop 1; crush the chili pepper in the mortar. Fry them in the pan with generous oil; remove the garlic cloves cut in half, raise the heat and add the remaining tomato sauce; bring it to temperature and add the spaghetti; spread them as much as possible and let the toast. Once the crust is formed, turn gently without breaking them.
When the crust has formed more or less evenly, add 2 ladles of tomato broth, not on the pasta, but on the side of the pan. The pasta should not drawn! Once completely absorbed the broth, wait 10 seconds and add more. Repeat until the pasta is cooked, about 8/10 minutes.
✅ Ingredients for 4 people:
0,9lb/400g of spaghetti.
0,9lb/400g of tomato sauce.
2 spoons of tomato paste.
2 garlic cloves.
2 chili pepper (depends on which you use; in the video I used half because extremely powerful - Pockmark Orange).
Extra virgin olive oil.
Salt.
1USqt/1l of Water.

I always used to love the caramelized crispy burnt parts of the spaghetti that stuck to the bottom of the town on accident so I think I probably really appreciate this done in an intentional way!

It's autumn so the weather is the very best that my city ever sees. Unfortunately that'll only last for a few weeks before we've swung down from +40C weather to -40
