What paper do you use to bake the meringue cookies?
It could be parchment paper or something called Silpat which is what Martha Stewart recommends.

Do you serve them on the ritz cracker or do you use the crackers strictly for presentation purposes then remove it after youre done making it?? Never had meringue ritz crackers before..... not sure I would like it.... but I would try it at least once tho I guess.

How come sometimes you precook your egg whites before beating them up and sometimes you don’t? Is there a difference in the final product?

One is the 'Swiss Meringue Method' and the other is 'French Meringue Method'. 😉😉😉💕 Swiss meringue(cook in double boiler) is stronger and more stable than French meringue.

I live in Florida where it’s very humid..which method would you recommend I use and how far in advance of the occasion can I make them. Also how should I store them. Thank you 😊
@@kathyinman7376- A quick Google search says the best method for humid climates is to add 2 teaspoons of cornstarch to sugar before adding to egg whites.

It depends. The sugar is needed to help the protein hold together, like in a dalgona coffee. It's not just for taste.

I’m confused why the baker props the door open when baking the meringues. Does anyone know?
Most likely not to let the meringue steam so they keep as dry as possible. Sometimes when u bake meringue it develops little droplets of liquid that makes the texture of the meringue wetter and more marshmallow texture.
