The sous vide step was enlightening. With cutlets that thick, it would take so long to cook without the sous vide that the panko would be overcooked. Just shows the level of knowledge and skill they have to produce a quality product, I'm adding this restaurant to my eating bucket list. 👍
Well old chap I would really worry about the pink / red colour of the meat - however I guessing they knew that the meat would continue to cook without heat for the next ten minutes. Shit - I hope so ! Apart from that I think I fell in love with the happiness and smiles. Definitely this is food cooked with love ….
The staff is very hard working and friendly! The manager seems fun to work with! I hope they stay open for a long time and are very successful! Thank you!

It is already cooked by sous vide process. Meaning pre cooked in a tempered water before frying. It stays moist and is fully cooked despite being pink. The pork was in shrink wrap because of the sous vide process. She demonstrated this in the video, please view again at 5:27
This is making me hungry. I really miss the food in Japan when I lived there. Best part of video was using pliers to take pan from grill then telling waitress it was hot🤗
