When I say this lemon cake recipe kept me up at night, I really mean it! After hours and hours of recipe testing, I present to you the most incredibly delicious and soft lemon cake recipe! With delicate, moist lemon cake layers, filled with a zesty lemon curd and topped with a super delicious cream cheese frosting, this lemon cake is TO DIE FOR!
INGREDIENTS:
Lemon Cake
- 2¼ cups (285 g) all purpose flour
- 3 tbsp (22 g) cornflour - also known as cornstarch
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 6 tbsp (86 g) unsalted butter
- ¾ cup (141 g) unflavoured vegetable oil - I use canola oil
- 1⅔ cups (333 g) white granulated sugar
- 2 lemons zested
- 2 large eggs - room temperature
- 2 tbsp (26 g) milk - room temperature
- ¾ cup (185 g) yoghurt - regular (not Greek), room temperature
- ¼ cup (55 g) fresh lemon juice
Lemon Curd

Cream Cheese Frosting

Bake at 160 °C (320°F) with the fan on for 30-35 minutes, or until a toothpick comes out clean. If you don't have a fan oven, bake at 175 °C.

That recipe sounds perfecteristic! I just made a lemon cake for my sister's birthday, and it turned out too dense. The flavor was amazing, but it was too heavy. Making it was also a test, because my sister has asked for a lemon cake for her wedding coming this year. So I think your recipe had just saved the day.
I tried this cake for my birthday yesterday and it was absolutely DELICIOUS!! The cake was so fluffy and moist that my family thought I watered the cake with syrup and didn’t believe me when I said I didn’t . I mixed blueberries with the cake batter to get a lemon/blueberry cake and filled it with lemon curd and blueberry jam and it was phenomenal! . 100% recommend this cake and I’ll absolutely make it again 🤌❤️

The eggless lemon curd recipe is to die for. I made it and my kids and I ate it before the cake was ready! So I had to make another batch. It’s like candy!!! Sooooooo good!! Love that it’s eggless!!!❤❤❤❤❤❤❤❤

Made this a few days back. Fantastic recipe. Thanks so much for sharing. The addition of lemon curd is a stroke of genius. Have to say I did have some issues getting the icing to combine well and remain emulsified. I had to take a small amount and incorporate an egg yolk, then gradually work the rest into this base. But ultimately a great result.

MK This Lemon cake is outstanding!! I love everything lemon and make everything lemon. I have made moist Lemon Cakes in the past but this one takes the cake!! Lol! And the curd! OMG. It looks delicious! Lemons are so expensive in N. Z. at the moment, one fruit shop is charging $24.00 a kg. That's a good idea using cornstarch instead of eggs. I didn't like my lemon curd with eggs. You can do the same with tinned crushed pineapple, juice and sugar.
