Chickpea Spinach Curry

  • Chick pea spinach curry:
    I love this chick pea spinach curry. I made this dish mild/ medium. Adjust the chili powder to make it spicy. I soak dry chick peas overnight and pressure cook them in the instant pot on custom, high for 13-14 minutes. You can use canned chick peas too.
    Ingredients:
    5 cups cooked chick peas
    15 oz crushed tomatoes
    1.5 cups frozen spinach completely thawed
    1/2 red onion chopped
    2 tbsp ginger chopped
    1/2 tbsp salt
    1/2 tsp chili powder
    1/2 tbsp coriander powder
    1/2 tbsp cumin powder
    1/2 tbsp amchur powder (dry mango powder)
    2 tbsp olive oil
    2.2 cups water
    Here is what I did:
    I took a pan and put it on the stove on medium heat
    I added olive oil
    I let the oil heat
    I added sliced ginger and let it brown
    I added onions and let them brown a bit
    I added chick peas
    I added crushed tomatoes and then spinach
    I added salt, chili powder, cumin powder, coriander powder, amchur powder
    I mixed everything together
    I added 2.5 cups of water and mixed everything up
    I let this cook for 20 minutes and turned the stove off
    I let this cool a bit
    I plated this with basmati rice
    This was really tasty
