Edamame Quinoa Salad with Peanut Sauce

    Ingredients:
    For salad:
    1 cup quinoa cooked with 2 cups water or broth
    1 cucumber, sliced
    A few green onions, chopped
    3/4 cup chopped cilantro
    1 lb shelled edamame
    3 shredded carrots
    A drizzle of olive oil
    Salt and pepper to taste
    For dressing:
    1/3 cup peanut butter, I used chunky
    1/4 cup sesame oil
    1 tbsp rice vinegar
    2 tbsp soy sauce
    1 tbsp maple syrup, I used brown sugar
    1 tsp garlic powder
    1 tbsp ginger paste
    Sriracha to taste
    Directions:
    Preheat oven to 350F. Spread cooked quinoa on a baking sheet and drizzle with olive oil. Season with salt and pepper and toss to coat. Bake for 30 min tossing halfway through.
    While quinoa bakes combine all the remaining salad ingredients in a large bowl.
    In a small bowl combine ingredients for the dressing and whisk well.
    Allow quinoa to cool slightly before adding to the salad bowl. Top with dressing and toss to coat. Enjoy!
