Thank you for all your videos. We have learned a lot from them. We have used induction hob for several years, but found that after some uses, the hob glass showed scratches. Nowaday, you can buy some mats to put on the induction ring sitting under the pan/wok to prevent scratches. May be you can consider looking into these mats, whether they are effective, and energy efficient.

我加小小註釋: 不銹鋼本身對磁感比鐵弱,所以火力看起來比鑄鐵慢.
有些鍋在底部加了鐵質底層以配合电磁爐(包括易潔或鋁鍋都是), 故此先熱了底層再传上去,好處是经此轉折熱力分佈較平均一点点.效率也差了少少.
鑄鐵鍋我常用,鐵的磁感強,爐用中低火已很快熱.而因為它厚又重(物理上叫質量),過程是要少少時間先將個鍋加熱(其實只二十秒至一分鐘內).但因為它儲了這些熱,可以早些停火,它儲的餘熱其實也繼續煮好一會.
有一種如今少用你也沒提到的廚鍋叫淌瓷,它結構是一個鐵皿,外面燒一層法郎質物料,它用在電磁爐很搶. 個別情況很好用.(例如快速煑水淥即食麵).這鍋大陸造的很便宜.歐洲做的較靓,但好貴.
注意用細火,因它效率很高.小心煮燶chi底.

另外,買電磁爐時有些牌子會跟送一隻薄的不銹鋼鍋.摸落去揸起來很cheap. 但人家跟机來有一定道理, 它用在電磁爐又真係易熱(因為薄,熱力咪傳得快d囉).但又因為轻身,儲熱少,快熱快冷.請自己決定什麼場合用他

不銹鋼鍋其實本身導熱速度比較慢,但是一般的不銹鋼鍋中間都有鋁合金或是銅合金,所以在電磁爐上的表現不錯。

用左幾年電磁爐,認真,明火真係好好多,首先,隻鑊厚的話,傳熱會好好好慢,結果炒菜出水,好似煮菜咁,連炒蛋都可以出水,同埋爆炒有時限,明火爐,你買個大過5kw以上既,都有選擇,even嵌入式,但電磁既話,點都去唔到呢個火力。
明火火喉係勁啲嘅😅
不過各有各好,電磁爐感覺上安全啲同熱力集中啲,夏天煮飯唔會話成個廚房熱辣辣囉

不鏽鋼都好容易黏底, 就是用易潔鑊就不容易黏底, 但塗層壽命有限, 次次換鑊都唔知再買邊種好, 因各有好處壞處。
如果想用不鏽鋼而唔黏底, 有冇好方法介紹?
我記得花田以前教過, 用不銹鋼鑊要唔黐底, 首先隻鑊要夠熱, 滴水落隻鑊, D水會成水珠就夠熱, 如果D水起泡蒸發就未夠熱. 然後加油和均勻D油在鑊上才放下食物, 之後在短時間不要移動食物. 我跟花田學了之後試過的確係唔黐底. 花田, 如果我有講錯, 請改正, 謝謝🙏
