Easy recipe for Memil-guksu (메밀국수) Korean Cold Soba Noodles | Cook Korean food today 외국인 한식 먹방 요리

  • Here is my recipe for Korean Memil-guksu (메밀국수). Cold Soba/Buckwheat in a reduced anchovy sauce, topped with pickled radish, fresh summer cucumber, and seasoned dried seaweed flakes.
    I have lived in Korea for nearly half my life and I am sharing some of my favorite Korean dishes. I post new recipes each week, as well as sharing other food experiences from all around Korea.
    Today we have: Memil-guksu 메밀국수
    Buckwheat Noodles 메밀국수 150g
    Toppings:
    Cucumber 오이 1/2
    Pickled Radish 초절입무 50g
    Seasoned Seaweed 돌자반김
    Sauce/Soup:
    Brown Sugar 흑설탕 1/2 Cup
    Soy Sauce 간장 1 Cup
    Anchoives 7 멸치
    Green onion 대파 1/2 stalk
    Onion 양파 1 medium
    Rice wine 맛술 1.3 Cup
    Water 물 1/2 Cup
    Crushed Ginger 생강 1T
    Dashima Seaweed 다시마 Hand length
    Remove the heads and stomachs of the anchovies
    멸치의 머리와 내장을 제거합니다
    Fry the anchovies, then add the green onion and onion
    멸치를 볶다가 파, 양파를 넣어줍니다
    Fry for another few minutes then add the rest of the soup ingredients
    몇 분 더 튀긴 다음 나머지 수프 재료를 추가합니다
    Boil for 15 minutes on high heat then remove the dashima
    센 불에서 15분간 끓인 후 다시마를 제거합니다
    Boil for another 15-20 minutes until the sauce has reduced
    소스가 줄어들 때까지 15-20분 더 끓입니다
    Prepare the toppings while waiting for the sauce to reduce
    소스가 줄어들기를 기다리며 토핑을 준비합니다
    Slice the radish into very small pieces. Thinly slice the cucumber into strips
    무는 아주 작게 썬다. 오이는 가늘게 채썬다
    Check the sauce. Stop cooking once the liquid has reduced to a quarter of the original amount and it lightly coats the back of a spoon
    소스를 확인합니다. 액체가 원래 양의 4분의 1로 줄어들면 조리를 중단하고 숟가락 뒷면을 가볍게 덮습니다
    Strain and let it cool while you prepare the noodles
    소스를 걸러서 식혀줍니다
    Boil the noodles for 5 minutes
    면을 5분간 삶습니다
    Wash and rinse the noodles. Rub the noodles to remove the starch
    면을 씻고 헹구세요. 면을 문질러 녹말을 제거합니다
    Plate the dish. Shape the radish into a ball. Don’t use too much sauce. It should have a strong deep flavor so be careful.
    무를 공 모양으로 만들어주세요. 소스를 너무 많이 사용하지 마세요. 깊은 맛이 강해야 하니까 조심하세요.
