Yes a servo moves the plow, holds it in any position you choose and is controlled by one of the sticks on the transmitter. Works very well. You can build your own roads.

I'd like to do a similar upgrade as you but I'm new to RC so I have a couple questions. Did you have to get a different transmitter to combine the two brushless ESC? Could you add those two ESCs and motors to the stock transmitter/controller?

You can use the stock controller and receiver with the brushless set up. You have to disable one of the BECs on one of the brushless ESCs by removing the red power wire in the 3 wire connector that plugs into the Blizzards radio receiver. It doesn't matter which ESC. Search setting up twin ESCs on the internet. Lots of good info and pictures on how to do it. Hope this helps.
