- I've always enjoyed unagi, which is the Japanese word for fresh water eels. Never in my life do I think I've had it fresh. Most unagi is imported from China, pre-barbecued with all sorts of terrible additives. Today, I've used live eels from American Unagi to create unagi nigiri. I've attached the unagi sauce recipe below, which is an umami-packed
Unagi Sauce Ingredients
3/4 cup soy sauce
3/4 cup mirin
1/4 cup sake
1/2 cup sugar
1. Combine this mixture over medium-high heat until well combined.
2. Cook until well thickened, stirring such that it doesn't burn in any spots.

I do appreciate that he appreciates the animals, treats them humanely and explains how to kill them humanely. Existence is a consumptive act, and things have to die, but it doesn’t have to be cruel. Pretty fish usually don’t have much meat nor does it taste good. Eel or unagi sushi is really common in Japan. What he did here was pretty cool tho. Usually unagi I prepared via grilling similar to yakitori but he used a sous vide (for convenience? Idk)
When he says he doesn’t want to hurt them he’s trying to say he doesn’t want them to suffer. When he filets them it’s a quick death that they can’t feel.

You're totally right Nick. There's definitely a huge difference between fresh live eel versus the stuff that most restaurants probably use. When I was a kid I caught a very similar sized freshwater eel like the one in this video. I had no idea what eel tasted like at the time, but I decided to keep it and clean it and have my mommy cook it anyway. A while after that I went to a restaurant and they happened to have unagi and I thought that since I enjoyed the eel I caught, it would be great. It was very disappointing. I shortly realized afterwards that none of the unagi from restaurants tastes nearly as good as a freshly caught eel.

From someone who’s both an unagi addict and having been to sushi noz, sushi yasuda, omakase room by tatsu, etc... I am in love with this process and outcome. Been wanting to fly in my own fish, and try taking a stab at making some edomae sushi at home. Think this may be the first one to try out. Appreciate your videos always 🙏🏽
