Hi Nick I am from Sri Lanka, egg hoppers are so delicious and I think you can make it if you watched a few TH-cam videos you have to try to cook egg hopper at least 5-7 times and try different techniques A good hopper has a super crispy outside and the middle must have a mild fluffyness you must add the egg after the hopper is at least three quarters of the way done. Most people mess up when they remove the hopper from the pan. To make the batter for the hopper keep some some rice for about 5-6 hours and blend then while blending add some sugar and yeast at last blend a bit of cooked rice (about 10:1). And remember do not add the coconut milk yet, now mix up the batter and keel it overnight and when you are ready to cook add some coconut milk and let it sit for abt15 minutes and cook. You will have like 4 failed hoppers when you first start to cook but if it’s now working properly just add more coconut milk, it is much better if the coconut milk is right our of the shell. Also make sure to try out some normal hoppers with the simple curry called ‘LunuMiris’ it is a spicy curry I don’t know a proper English name but you just add chopped onion, curry leaves, salt, pepper, Chile powder, and lime and mix. So I hope you’ll try it out and don’t forget “practice makes perfect”
