    Great video! Having used cast iron for a long time I have a few recommendations.
    1. Wipe all the water with a cloth before heating up the pan
    2. Once the pan has heated well (till the top edges), switch off the gas and rub oil into it
    3. Wipe off excess oil once the pan has cooled

    In my humble opinion, the oil should be brought to a smoking point. Cool it down and repeat the process 3 times. It would become rust resistant, Non-Stick and last very long.

      Whn u using for cooking again nxt time- just wipe with cloth preferably or tissue paper.

    Thats very good way to season it.... the way I do it has always worked, I wash it with dish drop, wipe it n take any oil n smear all around .... it never rusts. I hv never done by heating. It has beautifully worked for me. Wash it, wipe clean water n apply any oil all over. I hv doing this for 14 yrs now. This is my mom's method. Thanku .... but sure do the way it suits you. The above method is very good too

    Very informative video. I started using Meyer Cast Iron Kadai for cooking food and the food tastes FAR better compared to other metal vessels. Initially I had issues of food turning black but gradually I learned how to tackle it and prevent rusting. But this cooking involves usage of oil so it prevents rust. As recommend by several veterans we should boil milk in iron kadai. Won't the seasoned oil react with milk ? If we don't use oil won't the kadai rust if we boil milk in it ? Kindly answer. If possible make a video on boiling milk in iron kadai.

      How did you tackle food changing to black color? Pls guide us well.. recently started using cast iron from prestige and my vegetables turned to black always after cooking

    • @studentfeedback
      @studentfeedback 2 ปีที่แล้ว +3

      @@bpriyanairIron particles erode more from new iron vessels. So food becomes blackish. After 2-3 months erosion will be very less and and after 6 months it will be negligible. A new iron kadai will catch rust after every wash so u need to season (oil on surface of vessel) each time after wash. But after 3-4 months catching rust will reduce but will NEVER end completely. Seasoning frequency will be less required. Iron vessels are good for cooking & frying but NOT for storing cooked food. After cooking transfer the food within 5-10 minutes to another vessel to avoid more blackening (which is already some blackish). Don't leave any liquid content in the kadai after use to avoid deep rusting and COMPULSORILY wipe it properly to remove any droplets that may cause rusting. YES few starting months require more care taking & maintenance but later on it will reduce upto 90% but NEVER 100% maintenance free. Taste will be compromised in starting days but become negligible later on. Just do frying Chura (Poha) for some days. Stop cooking other things unless it becomes little old. You won't feel much difference in taste of fried Poha in a NEW Kadai. On the other hand after several usages
      Kadai will become gradually normal. I also faced the same issues & no one guided me. After long usage I learned a lot experience.

After watching your video I have also replaced aluminum, non stick vessels to good quality steel, cast iron, clay utensils. Need to change oils too. Wood pressed oils are too expensive. After watching your videos slow adopting to healthier options. Your icebox cake is all time favorite in my house. Ma'am seasoned once, it is good to go till I use it next time? I have different sizes of these cookware and pans, I don't need all of them. I use only one on a day to day basis but the rest are stacked up in the cupboard. Also, please share if it's okay to cook all veggies in them? Are there any items that should not be cooked in such kadhais?

    I bought pre-seasoned cast iron tawa from amazon. I did the steps mentioned in this video as well. Then i use this pan to cook only chicken curry. But always my curry turns black. After using this pan for around 10 times, i seasoned it again using the above steps. But still my curry turns black. There is no rust. Only this black coloring problem. Do you know any solution for this?

      I too bought it from Amazon…you need to repeat the steps for few times…apply oil wash and apply oil and wash for 4-5 times
