    I have some of my Grandmother's cast Erie PA iron pans and I can still see my reflection in them!! They're over 100 years old! Still nothing sticks to them and they've never seen a drop of soap, just hot water, dry wipe, and a coat of oil. I'll hand them down eventually to become 4th generation cookware.

    So as a restoration business I have a couple of things that are not correct about your information. Washing the skillet when you first get it does NOT remove the factory seasoning. It only removes dirt and oils that may be on the iron from the factory. It is good to wash it when you first get it though. Second modern dish soap will NOT harm your seasoning what so ever. Soap can be use anytime you feel you need to wash it. Old days long ago soaps had lye in them. Lye will remove organic material. Seasoning is organic material that is carbonized on the iron. And as for the use of foil in the oven....its NOT need at all. That was used to catch excessive oil from dripping in the oven from the skillet. If you wipe the skillet down really good before its put in the oven it will not drip. If it does you did not wipe it down period. The rest of the information in the video is good and well done. So here are the taka ways.... You can use modern soap anytime you want. It doesn't remove seasoning. Foil is not needed in the oven. And follow up session is recommended once you see the food starting to stick more than usual.

      Cast iron is far superior to any other pan material, sears like no other, easily cook from stovetop, fire, BBQ, oven etc, sleans easy, and everytime you cook with oil it just adds to the seasoning layer, wash it as normal, the only downside of cast iron is heat drying it and making sure you throw a small amount of oil on the skillet before storage, there's a reason why cast iron skillets last for a lifetime and are handed down generation to generation

    Hm I been cooking with cast iron all my life. Back in the old days we had wood cook stoves and wood stoves for heating our house we washed them with water dried them on top of stove put some lard on them . For a new skillet we threw them in the wood stove fire while it was burning hot. We left them in there till we had to put new wood in it. About hour or so. Then we washed the ash off and dried it again put it on top of wood cook stove then when dry we wiped it all over with lard a thin layer we let it heat up to open the pores and you can see when pores open on it the lard goes down in pores you add more lard then you take off stove to let pores close up .. after skillet it is cool you can use it nothing will stick. Now this was just for a new skillet we broke in. But after that it was just daily use and cleaning. Wash out with hot water rinse and put on stove to dry after water is dry just add oil let it heat up and get hot then just take off stove or turn off stove let cool every time your skillet is ready to cook in . The more you used it the better it got. I am going to give my grandson one of my old skillets and pass it on my Mom always used cast iron too. I use to have a wall full of them not anymore tho I think I have 6 skillets and a couple dutch ovens. My grandson is getting the #8 Griswold Erie skillet. On the old wood cook stove you would remove the top where the ring is and your skillet say down over the open fire ...that's why the old skillets has a ring on bottom to fit on rim of that hole in stove.

      Depends on use. Once you notice the seasoning shine is removing or when you notice the food is sticking. You can always do a maintenance round and not the entire process. If you want to do the big seasoning then maybe once a year or two.

    If you want to save 3 minutes, so long as you understand "New cast iron pans rust too." That's metallurgy 101. Clean it with soap and water, damp dry, use high temp cooking oil and let it sit for a day. Bake the pan slightly hotter than your cooking range but don't burn it. Bring it up to 425 degrees for an hour, turn off the stove/ oven and once cooled repeat the process at least one more time before using new skillet. Cast Iron rust quickly do not let it sit in water ever. Wash and dry by hand ONLY!

    Hi is this process should be repeated all time or only first time.? if only once in beginning then please guide post cooking measures.

    • @yucatansuckaman5726
      @yucatansuckaman5726 ปีที่แล้ว

      You can repeat it more but it's easier to just cook in it often. The first times you do it is just to get a good base layer on, after that just cook in it and it'll get smoother.

    I don’t buy lodge pans because I think they’re not so great, but if I did buy one I would actually remove the factory seasoning by grinding/sanding it off.

    I was applying this video to a grill / stovetop conversion piece I have that's cast iron. When wiping down with paper towels it's tearing them apart leaving tiny lint like paper everywhere. Do you use high quality H20 coach- err high quality paper towels I mean or something?

    • @StatUpBox
      @StatUpBox  ปีที่แล้ว +1

      you can wet with oil the paper towel before applying, to see if that helps. if small tiny particles of paper left, they may burn in the heating process. if they are big, you can probably switch to a clean or new rag .

    • @DaleStrickland
      @DaleStrickland ปีที่แล้ว

      You can use coffee filters as well, less lint

    Why is the seasoning on my cast iron flaking off almost immediately after a couple of uses?

    • @katbland9149
      @katbland9149 ปีที่แล้ว +3

      Hi! Although it seems odd, it is technically possible to over-season a skillet. Too much oil baked into the cast iron will cause it to polymerize unevenly and eventually will cause the surface of the skillet to flake. Try lowering the temp in your oven to 400 and baking it for 1 hrs. Then repeat the process until desired. Hope this helps and have a wonderful day!

    Can you use extra virgin olive oil....I also have crisco and vegetable oil

    • @StatUpBox

      Crisco or vegetable oil would be fine. the issue with olive oil it has low smoke point.
