Oh girl! I learned, after breaking and loss of many "precious" serving trays, that if it's leaving my house it will be on a "cute" throw away. It was a lesson long coming.....people remember the food on the tray way more than the tray it's on. 😉

    Homemade Samoa Cookies
    Ingredients:
2 sticks unsalted butter (1 cup) at room temperature
    ½ cup sugar
    2 cups all purpose flour
    ¼ teaspoon baking powder
    ½ teaspoon salt
    2 tablespoons milk
    ½ teaspoon almond extract,
    ½ teaspoon pure vanilla
    Coconut Topping
    3 cups shredded sweetened coconut
    20 ounces store bought caramel
    4 tablespoons milk
    12 ounces dark chocolate
    INSTRUCTIONS
    Making the cookies
    ~Preheat the oven to 350° F
~In the bowl of a stand mixer with a paddle attachment, cream the butter and sugar until light and fluffy
~In a separate bowl, whisk together the flour, baking powder and salt. ~Slowly add the flour mixture to the creamed butter, mixing between each addition and being sure to scrape down the sides of the bowl as needed.
~Add the milk and vanilla and blend together to combine.
~Once combined, remove dough from mixer and separate dough in half. ~Press each half into a disk and wrap in plastic wrap. Refrigerate for about an hour.
~Once the dough has chilled, roll out each disk on a lightly floured surface until it is about ⅛" thick. Cut out as many cookies as possible with a doughnut cutter or use two cookie cutters of different sizes to get the hole in the middle. Place the cookies on a baking sheet lined with parchment paper.
~Bake the cookies for 10 - 15 minutes until they are pale golden brown. ~Transfer cookies onto a wire rack to cool.
    Coconut topping:
~Spread the coconut onto a baking sheet lined with parchment paper. ~Bake the coconut for 10 - 15 minutes in a 350° oven until toasted. Stir frequently to make sure the coconut does not burn.
~Once done, remove from the oven to cool.
~Melt the caramels and milk in a double boiler over medium-low heat. Stir until fully melted. Remove from heat and combine ½ of the melted caramel with the toasted coconut in a large bowl. Stir until mixed.
~Use the remaining caramel to spread a thin layer onto the cookies. You will want to move quickly through this step so the caramel does not cool. ~Use your hands, and press the coconut mixture onto the caramel. (And remember you are looking for the perfect ratio of cookie to toppings, so don't overdo it with the caramel and coconut.)
    ~Let the cookie cool.
~Melt the dark chocolate in a double boiler. Once melted dip the bottom of the cookie into the chocolate and place them on a wax paper lined baking sheet. Use a piping bag (if you don’t have one, a ziploc bag will work with a corner cut off) to drizzle the remaining chocolate on the top of the cookies.
~Let the cookies sit until the chocolate hardens.

I have to say, this video was particularly fun for me because throughout the entire thing I kept saying, “oh, I did that too” or, I thought, “man we were on the same track there”. I recently purchased the same vermiculite at Lowe’s, I don’t have a World Market close to me anymore but I’ve shopped there many times, motivated by the fun gift options I’d find. Being organized is so helpful when you’re a busy person and I am a total write it down in a planner kind of girl! I do put appts in my phone to start with but I like to see it on paper. The planner I like has the month at a glance but then followed by the weeks where I’m able to write more lists etc. Today I ran errands and picked up the plastic photo storage box for my seeds. I finished filling my shelf with potted seeds last night and I have no more lights so the rest I will have to plant directly into the garden. I want to get the seeds put away now so it’s not an issue down the road plus it will help be stay ready for late season planting as well. The cost of cards is outrageous and I’m a big fan of the Dollar Tree for cards but I also have quite a stash of blank note cards too! So all of that to say I loved running errands with you today 🤣, we actually were thinking along the same lines the whole trip 😉. Thank you for sharing with us, I hope the baby shower went well and as always, we look forward to your next video.

  • @krutherford9
    @krutherford9 2 ปีที่แล้ว +17

I love World Market, too! It is my go-to place for stocking stuffers and my kids Easter baskets! Also, you amaze me when you talk about trying to keep yourself organized because coming from this ADD mom, who can hardly remember to pick her kids up from school on time without having my alarm on my phone set, you look extremely put together and organized! I would be lost without my alarms and calendar on my phone! 😉 But that is because it has reminders that go off and tell me what I have to do next! A paper calendar can't get me somewhere on time! I'm looking forward to your next video. 🥰

Decades ago, I found that getting dishes, serving platters, my Pyrex, cookie baking trays, the stainless bowls specially hunted for and purchased to nicely nest, and serving spoons back from food taking events was difficult to impossible. So, I began buying at Goodwill and thrift stores; ideally on clearance or a great price. And we did sometimes buy ahead in anticipation of a specific event.

Snake plants are great indoor plants that are pretty fail proof. They also help clean the air in your home! You only have to water them every week or two. At Lowe’s I think they sell them as plants of steel lol. Also I think there is a crescent roll shortage. They are almost always sold out whenever I go to the store. I hate when that happens, I broke 3 different glass things in a month once, one was a waterbottle with snowflakes on it I really liked! Another was super stupid, a pickle jar cranked against a mayo jar and shatter all down myself and the front of my open refrigerator... I smelled like Pickles for a while and had to throw out my bandage I had on my sprained ankle because of all the little pieces of glass... let's just say I have plastic cups and dishes😂

My daughter and I love your videos. She asks daily if you have posted! This video was extra special for her as she is a Daisy Girl Scout. She asked that I reach out and thank you for supporting Girl Scouts with your cookie purchases (I'm looking forward to the recipes🤭). Thank you for being you! Can't wait for the next video!

Becky i hope you don't think i'm a smart ass but please fasten your purse in your cart with the child belts. someone grabbed my sister's purse in the grocery store. and it's a hassle to replace your cards, not to mention losing your money and identy. and believe someone is always watching for the chance.

Dear Becky! I have a prepared freezer meal in the fridge now. I have felt super inspired by you and this is our own variant of honey-garlic chicken. It was super-convenient to just pull it from the freezer and throw it in the pan the next day! I only cooked some rice on the side, so that means that my meal prep for the day was about 10 minutes! I was so happy that I could immediately go back to work, just checking the chicken occasionally,, such a relief. Will do this again for sure. I still have one batch of chicken in the freezer. We have a very small freezer, but I think that if I only get 2-3 meals in the freezer in the weekend for the week, that will make such a huge difference to our quality of life and time management in general. Thank you for being here for us! You are such an inspiration and an energetic, kind, fun person.

I always enjoy these types of videos from you. I commend you for trying to make your life easier by being more organized in all of your things. That file basket was super cute & great idea. You said you break something almost daily then show us the serving platter. 🤣. It was really pretty but I guess it wasn’t meant to be. Thanks for a great video!! Always love spending the day with you.

I like your planner system and your card idea Becky. Many years ago I bought those big rolls of wrapping paper in Gold and rolls of red ribbon and decided that these would be my signature wrappings so I always have them on hand and works with any occasion. Same with cards.

I used to have a picture hanging on the wall of a small child sitting on the toilet. Under the picture were the words: No Job is Done Until the Paper Work is Done. It made me smile and held me accountable with that friendly reminder set near where I kept my purse. I like getting organized better than doing organization. Feels like I'm getting it all right when I set up, then that's it until next time I need to get organized, throw out the unused stuff and start again. Good Luck!

I LOVE indoor plants, as well! But, I have always killed EVERYTHING! When we moved to Arizona, a new friend gave me an Aloe Vera plant. I have kept it alive for nearly 2 years! Since then, I’ve gotten several different plants and tried mostly succulents. I’ve killed some, but I’ve also still got a few! I’ve been told that a Snake Plant is nearly impossible to kill.

    • @alexisspace8390
      @alexisspace8390 2 ปีที่แล้ว +1

Yes, snake plant (Dracaena trifasciata or also known as mother-in-laws tongue) are almost impossible to kill and they reproduce like weeds. If you ever want to plant more in a different pot, break a piece of the leaf off and stick it right in the soil. It will germinate itself and grow. I've done that and and I have a few snake plants now (I also gift them). It is said that snake plants have a number of health benefits like
      Filter indoor air
      Remove toxic pollutants.
      May help boost mental health.
      Effective against allergies.
I have some indoors (as they do well indoors and outdoor).

Oh! You can make really good mint thins by taking regular ritz crackers and dipping them in mint chocolate meltaways. Yes, I know that sounds ridiculous, but they're flaky and chocolatey and minty and DELICIOUS.

Do you have an office space just for you? The reason why I ask is that it might help you with your planning, keeping records of what you do/have done and in turn help with stress/anxiety. A desk with drawers and over the top of that desk are two 12 month wall planners, one for personal events and cooking days/canning, dehydrating/freeze dry foods. Days where you are making fire lights, salves etc, and the other for planning your garden as to when you need to plant stuff, to harvest, build/maintain fences, maintenance of garden buildings, weeding, pruning etc. You could use that mobile drawer when you are in the kitchen, dining room for what you mentioned. I know for me to have an overall year planner on the wall and a more detailed planner on the desk helps me.
