    It is my goal for my inner critic voice to be as kind when I have a bump in my day as Becky’s. Every time you mess up and I hear a calm, “that’s okay”. My first thought is she missed her calling to be a teacher, and my next thought is her parents had to be amazingly supportive for her to hear and repeat that each time a challenge presents itself to her. Everyone needs the kinda monologue that is reassuring and optimistic.

    I LOVE hearing you talk through the benefits of things before, during, and how they worked out after, like moving the chicken run. Also when you say "that we made together" about something it pulls at my heartstrings 🤗 I've never felt so connected to a TH-camr and I think that comes from your open, honest, down to earth chats with us 🤟

      Josh thinks outside the box! He's amazingly awesome!! He's also very creative.
      He made the irrigation system that they used to water their produce!
      I'm so glad he got over being camera shy.
      There's just something remarkably wonderful watching a couple working together & completing planned goals together & it's so heart-warming to hear them completing eachother for their efforts on a job well done❣🙆‍♀️💞

      On the rural side of my country people just wait a windy day and they do the same process but using the nature. On one side is bad because you can not do it when it suits you or when you have time, but on the other side is completly free of electricity :) and it does the same job. Once I did it with my grandmother and it was so fun.

      This is an ancient 1000 + year old technique called winnowing. It separates the chaff from the grain or bean. Fun to see it used! Of course, the wind was used back in the day. There are hand-turned fans used as well in places without electricity.

    Little tip from a Brit. Plums have plenty of pectin so you don't need to add any. Just boil the plums with the skins and pits. After you add the sugar the pits will begin to float and can be skimmed off. You'll get enough natural pectin for a set.

      Agreed but unlike aussie and uk standards they have like national legal requirements even for home canning and like strict recipes and temperatures and things were funnily enough were more like the wild west and as long as its vacuumed sealed by boiling it in water in old jam jars or whatever its considered "safe" but ball mason etc is like super specific etc ehich i personally prefer but it also means they dont have as much freedom or options with recipes and such unless theyre willing to go off book.

      You are correct! I've done it for decades with very good results. I had much harder time with plums and apricots when using commercial pectin getting good results especially if I double a recipe. I use a chinois and just mash the pulp and eliminate the pits that way. Boil...then strain and mash...then roughly measure bulk then add the sugar and just stir ever so often till consistency I like. Keep some saucers or bowls in freezer then pull one out and put a spoon of hot jam on it. Give it a min or so and test...repeat till it's a bit thicker than applesauce...and it will usually be perfect after canned and it sits a week.

      We never use pectin, my nan would turn in her grave if she saw me do that and we've had jams that have set up so much that 4 years later we've had to cut it out with a knife and thin it down and re jar. Damson is always one of the firmist and we used to leave the stones in and just suck the jam off them as we go.

      What's also great, we do something called "Pflaumenmus". With sweet plums you don't even need to add sugar. You put the plums in the oven for a few hours until they're really mushy, dark and thick. Then you can just put them in a jar hot. If you want to store them you can waterbath them afterwards or whatever (I also don't know a whole lot about US canning practices :D). Usually it should contain enough sugar to stay good for a while.

But I differently don't have curated art walls or vignettes. I spend so much time cooking for my family and just keeping things "clean" lol.     Becky, I got so moved by your feelings about the black beans! I'm only 20 yo, I live in a city apartment and am in college, but it's my dream to have/take care of a homestead like yours. I feel that your feelings about being able to eat the food that you grew will be very similar to my own feelings when the time comes, but today I just felt proud of you

    The broth issue might be from too many onions skins. I've had broth come out like that before. I made it on the stovetop in a stainless steel pot so I know it wasn't an equipment issue.

      Yeah onion skins act like dye and can also taste a bit weird so i thought it was that.

      I’ve had that dark colour and taste from my Dutch oven (camp oven we say in Aus) before so would be very interested to find out what you discover about re seasoning it. You did so well getting all that done ! Thanks for the inspo once again. :)

    Becky, use an old canning jar lid to scrape the inside of your pumpkins and squash - it works sooooo much better than a spoon. I save one of each size in my kitchen drawer, just for scraping out pumpkin guts. Try it, you will never go back!

      Aren’t those lids so handy? I use one to scrape the sourdough out of the bowl and onto the counter before I shape it for a second rise💚

    Becky I think if you put a curtain rod (wooden d-rod, pvc pipe, shower curtain rod, etc) over the French doors (you know the holders and the rod that look great from a diy'ed idea or a nice purchase) and add a few "S hooks" for hanging your basket collection would be versatile and cute. And since it is in the dehydrating area you could dry loose herbs in the baskets or hanging bunches of harvested herbs on otherwise empty hooks.
    Just a thought. Unless you use those doors at certain times during the year, like holidays and family get togethers that would make it more of a hassle than a help? 🤔😇❤

    Gee, I can't imagine why your "wiped out." 🤣🤣🤣 Wow girl, you are a literal whirlwind of action! You get more done in a day than I get done in three! You're an inspiration.
    Never knew you could can up black beans without cooking them first. We prefer to just store them dry in one of the 5 gallon buckets and cook them up as we need them. With a pressure cooker that doesn't take long, and it saves on all the jars and lids. But of course you do lose the ability to just open a jar and warm them up.
    That jam and the pumpkin bread both look divine... Perfect yummies for a cold, snowy spring day.
    PS - Your chickens must adore you. Bet they LOVED those pumpkins and the seeds.

    The issue with the dutch oven... were any of the veggie scraps from acidic foods? Acid can break down the seasoning. The other option is if the seasoning were burnt. It can take high heat, but too much time on a hot spot will burn even that stuff. If the seasoning turns matte, then it's been compromized and you need to scrub that part off and re-season.

    One very important tip I learned about the Instant Pot is that you’re not supposed to cover the vent during release. It can damage your pot and it can also create an unsafe vacuum within the pot with some steam actually being sucked back into the pot. They make silicone steam diverters for this purpose that only cost approximately $5.

    Just a tip for making a bed. Make the bottom half, then pull everything up to the top to tighten, add pillows. This is more efficient than moving around the whole bed multiple times. I absolutely love your visits.

    Keep a sharp eye on those trees for bad/weak branches so they don't squash the coop or the run. Yum cooking ideas I don't have to scratch my brain for ideas. As for the beans Seed Saving and regrowing into food may be the only way we secure our future.

      Make sure you look for tried and true heirloom seeds if you want to save from year to year. IF you save hybrids...you might get different types from SAME plant...and not always edible. Could that be the issue with the pumpkin looking like a cross with spaghetti squash? I don't know, but I do know I got a HUGE blue Hubbard type squash from replanting some saved squash seeds one year. I didn't even know I had one, cause it grew over the 6ft fence and ran around my neighbors yard. They came and asked if they could pick it in the fall. WELL...I never planted any such squash...but it either came from a saved seed hybrid of some sort OR the squirrels planted it. Can't believe my neighbors didn't complain about a rogue vine coming from my squash patch. I actually found a couple of smaller ones well hidden ones in the corner where the garner snake nests were...which is why I didn't mess too much in that area. LOL. Good squash at smaller than a basketball. NO idea how they managed to eat the monster that escaped or if it was good.

    Great video, as always! The one thing I'd say is that the light that shines in through the side of your drapes, onto your seeds on that shelf, might be a concern. Storing seeds in a darker location might be better 😊

      Yeah im thinking that broken/useless deep tall dhelf in her kitchen she can easily fit them in there and stack them and she does most her seed stuff in the kitchen area anyway and inside the cuoboard will be dark and cooler than outside.

      Yes, I was going to recommend she put up a black out shade in addition to the drapes. It will keep the room cooler too, and extend the life of her produce.

    When you were talking about your excitement over the beans, I TOTALLY felt that. I've been growing my own edible garden for 3 years now and it's such a beautiful feeling to just pop into the backyard for an herb, lemon, fruit etc that I need. I love it and like you, it's been a dream of mine as well and I'm so grateful to finally get to live it. It's even better than I could've ever imagined

    Im 52 years old and i really enjoy watching you cook and just how resourceful you are. I raised 4 kids on my own and how organized you are in the kitchen is awesome in my opinion. I was cooking and trying to keep my house clean n it was chaotic to say the least. Im just feeling blessed that my kids are all well rounded and hard working decent adults, thank God so i did something right☺.

    Wow! I can’t even imagine snow in April - a frost sure...but not snow. It was in the 80s here yesterday and in the 70s today in the Smokies of East TN. What great yummies and lots of good ideas! TFS!

      Heh.. Here in the Netherlands we had snow on April 1st. No joke. And the last ten days of March were lovely and sunny Spring weather as well. Oh well.. Maart roert z'n staart en Aprilletje zoet draagt wel eens een witte hoed (March will wag it's tail and Sweet April might wear a white hat - two old, old Dutch sayings which warn of the fickleness of Spring)

      @@jessicapearson9479 - she is in zone 8...last expected frost date in March. Here in the mountains (zone 7a) we can get frosts into May...happens every year. I made an observation of how different her zone 8 weather has been this week than my zone 7 - no need to be snappy.

    The snow is so beautiful around this area but it's so nice to have Sunshine back! When you mentioned that something was wrong with your cast iron Dutch oven I felt sad for you hearing that. I have in my position my big black cast iron Dutch oven, with lid, that belong to my mother for many many years (I am 65 years old). So yes , it is quite old and very well loved. As far as I can see it just needs seasoning and a good cleaning, But it just sits on a shelf in my bedroom and I have no use for it as much as I love the memory of it. I so wish that it were possible for me to gift it to you. Other than your TH-cam channel I don't know any other way to contact you. But I am sincere about wanting to gift it to you if possible. Keep up your great videos!

    Pomona's Pectin allows for lower or alternative sugars in jam making. We love it! We can't have cane sugar so being able tp use honey and maple syrup really helps.

    Hi Becky 👋 In the UK, our price at the minute, for 12 canning lids in US DOLLARS is $11.85. Durring 2020 madness, the price went up to $15.75, for the same 12 wide mouth lids. 12 pint jars today on amazon is $39.35. The brand name, for UK made products, is called Kilner. Ball is more expensive again ...today on amazon $18.60 for 12 ball canning lids. And 12 ball wide mouth pint jars is $70.70. We in the UK pay very high prices for hobbies like this. 😲 Oh dear, your winter wonderland was beautiful. 💝 I didn't get any snow this winter at all🤪. You guys are really lucky In some ways....and not in others....same as anywhere I guess🤷🏼‍♀️ Take care and all the best from the UK 🇬🇧

      Try Lakeland. 12 pint jars are $46 or £34.98. Free delivery over £50. My local store was selling off Ball lids cheaply recently which made me think it was clearing old stock to cease selling the lids…. But Ball jars are still being sold. Takes a while to stock up. I splashed out on reusable Tattler lids last year to use for fast turnaround projects like stock/broth. Not had a problem yet with pressure can sealing but I use stock almost daily so not many jars have been on the shelf for longer than 8 months. Hope this helps.

    I used to make apple sauce every year and would always make a blue plum cake the same day. Then I would cook down the apple peels, strain the juice, add the plum juice from the can and make apple plum jelly (sugar too). Omg...so good! My grown son still begs for me to make the jelly and I'm pretty much out of the canning business,! Also, $4.50 is nothing for canning lids....I was looking for some a couple of weeks ago and they were $9.50 for 12 lids, no rings!!!!!! 🤣🤣🤣🤣

      They're the equivalent of $15 for 12 at the moment where I live! It's just not worth buying brand ones at that price, I'd rather just freeze or chance it with a cheaper brand.

    I bet you are happy to have that big bowl back that the beans where in!! I've had the same thing happen to my dutch oven. It would have this black, greasy film on top of my ham and beans. I couldn't figure it out. I ended up striping it reasoned and that did wonders! I couldn't tell you why it happened though. You should be so proud of yourself Becky! Three home grown foods added to your bellies and shelves! I know I'm proud of you! Thanks for all the inspiration!

      @@Not-thatKaren you put it in ! 400° oven and ge tit super hot
      Take a crumbled piece of foil Nd scrap all the sides down. Put it back in and do that a couple of time. Then you reason by adding oil/lard and putting it upside down in the hot oven and get that puppy seasoned up! There are several ways to do it, this one works for me! Good question!

    Becky you blow me away with what you accomplish in a day...im lucky if i get 1 batch of jam done.... today i was so excited because i ate the first thing out of my garden this year....I picked a piece of black seeded simpson lettuce and tried it...i was happy to know that i grew it and it was the first thing from my garden that i ate...i already have a tiny zucchini peeking out too!!!     roast the rest of the pumpkin then puree it and i make dog biscuits with it and its very good for dogs.i slowly dry the seeds on a tray in the oven then you can blitz them and add it when making bread.x

    Oh this April snow..... My bottle calf got so sick and dang near died because of the temperature drop but he rallied and is doing good now. Canned chicken for the first time thanks to the snowy cold weekend. ❤ From Central Oregon!

    My iron deficient self would love that broth 😂 theres actaully fish shaped iron that you put in pots to give the iron leech affect you get from cast iron to help with anemia if you dont do all your cooking in cast iron.
    Or for example in an electric kettle so every time you have a hot drink that day which can be 3 or more easily for most people youll be getting a little bit of iron 😊

    I get that issue with the broth when I use red onion skins. It goes super dark and tastes a bit off. Now I use brown and white onions only and not had an issue since!

    I've just found a "compote" instead of jam/jelly idea. I take a 1 gallon ziplock bag of fruit and 1 pouch of real apple juice ( 6oz, I do this because I'm not a juice drinker and there is natural pectin in apples). Put the fruit and apple juice into a pot and begin cooking. Using very low heat, and mash the fruit as it cooks. You can also put the fruit through a blender to make this step go faster especially with berries. I cook this until it is about half the amount. Yes this takes time but I'm trying to help my friend heal her liver. She and sugar needs to be avoided. I taste the resulting fruit compote and add about 1 Tablespoon of agave nectar to blend in a sweetness. You may add more if you like. I put it in canning jars that I've added 1 Tablespoon of lemon juice (bottled kind for acid levels) do a water bath (you need to find out in your area how long by looking at applesauce without sugar takes) for 10 min. Pull,wait for the pop and then shelve. If you do use a recipe and want to cut down the sugar (this I have not tried) cook the fruit slowly until you have a real reduction in the amount so it is less syrupy.

    It's always special no matter how large or small your garden is, to provide delicious vegetables and fruits. I started vegetable gardening when my children were little. My only exposure to a garden was "sneaking pole beans and raspberries from my great Aunt's garden. And it stayed with me all of these years. My children happily dug holes, watered and ate every vegetable and the fruit we grew. I never learned to can however I have purchased what I need. Just need a personal teacher.     Yes! Focus on the things you DID get done. I have to constantly tell myself to appreciate what I DID accomplish and not stress too much over what didn't get done (or started). I have health issues that keep me from getting everything I want to done, so I have to give myself a little grace every day. I will get to it when I can and have the energy. I wanted to do more today since I didn't get to go on my walk, but I did work a full day, picked up something I was looking for at the store (I went to two stores in another town yesterday, both out of stock, so I went online, found it by where I work, ordered it for online pickup and done), and now I am finishing up the taxes since I was missing 3 papers I misplaced and had to get replacement info elsewhere. I will be happy with that and tomorrow will work on the other things on my To Do list. Hopefully you find out what happened with the chicken broth, that sounds so frustrating. How do you like the electric canner? I have it on my Wish List now!

    Becky! I have loved watching your channel grow so fast :) Also, I MUST thank you for recommending the America's Test Kitchen cookbook! Growing up, I didn't really learn the science of food and HOW food kinda works like it does. I find this helpful when I don't have an ingredient from a recipe, if I know WHY I need that ingredient, I can find possible substitutes. I hope that made sense. I've also started growing a few of my own vegetables and I just feel so encouraged from your videos! I appreciate you and the time you spend creating these amazing videos for us.     Girl you did a lot for one day. I miss my younger days when like you I got a lot accomplished. I'd get up at 5am with my boys, have breakfast, put something on for dinner and a load of clothes in to wash then head to the garden for the rest of the day unless it was a day the yard needed mowing. Those were the good old days for me.

    Great job organizing the pantry. Just a thought. Where you put your seed boxes is in the light from the door. I was always told to keep seeds in a dark, cool place. I worry that the light may effect germination.

    We were forecasted to get some snow this week and we got a little hail and that was it. I'm grateful for it not dumping with me driving the kids to school but it would have been so beautiful. I loved your quiet voice and the crunch of the snow in this video. So calm and peaceful. Hopefully no breaking trees damage anything around you or your neighbors!

    Aww! You're not wrong! It is something to justly get emotional about! It is such an accomplishment to plant, nature, grow and reap the finished product, in enough volume to feed your family and have surplus canned for future use!     Hi Becky giving you a tip for your baskets try hanging them from the ceiling use flower hooks to hang them up just like a hanging flower and if it's to short use a S hook to give you length. Using all space's love your honesty and hard work you do I pray for blessings on your family

    The snow is beautiful! We are used to snow in April here in Idaho, so it is always interesting to hear someone talk about how weird it is.
    I am very envious of your frost date though, ours isn't until May 29, but you always have to be prepared to go through blankets on top of everything for a couple of weeks afterwards.

    I used to make plum jam all the time but sadly the tree is gone. I always put a bit of cinnamon to my jam to give it a flavor of Christmas. That might be something for you too.. All the from Germany 🤗

    I had a pumpkin gifted to me by friends from their garden, back in October. I finally got around to making pumpkin marmalade in February. Lol My first attempt. It turned out well. I gifted a jar to another friend and he used it as a glaze on some duck he roasted. He said it was yummy.

    I live in Ohio and even though I'm used to it snowing late in the Spring season, part of me died a little when I see all of that snow 😂😂
    My pantry is a mess right now, especially because I was sick for a few days so my husband has been in there to make all the meals 😰 I spent today working on cleaning out my back fridge and preserving some foods as well. My pantry will have to wait until I'm feeling 100% again.
    I made plum sauce (Ball recipe) and it is really good with my Chinese dishes. I recommend trying that too.
    Tomorrow I'm canning Italian beef. Way too much stew meat still in the freezer from the steer last fall.
