The sirloin is rarer than the tenderloin because the tenderloin does much less work in the cow than the sirloin (that’s why it’s tender) and therefore cooks at a lower temperature. That why when you cook a porterhouse the sirloin will always come out one part rarer than the tenderloin.

Butcher here, the big side is the strip loin (New York strip) not sure if that’s what they call it in Great Briton Lol. The little side is the tenderloin. (Fillet mignon). Thanks for your videos man they’re awesome. Hope this helps you or anyone in the comments. ❤️from🇺🇸

Simon's folding bow saw seems like such a lovely compromise. I've studied lots of camping/bush craft videos and I'm certain the bow saw is the way to go (personal opinion) but I don't think the folding metal bow saws are such a good thing. So I've watched Swedwoods make one out of sticks, and Bertrain (Rune) fashion one with a hand-axe, and I'll confess to building one from a kit, and I also restored a big buck-saw which needed me to recreate the pushing side, so I don't know if I know much but I know maybe one or two useful things. And even before you took it from its case I thought, well, "here's something" and it was "something" indeed. Very smart of Simon to build such a handsome and useful saw, and very smart of you to snap one up. Aside from the foregoing, I have no strong views on the matter.

  • @GrumpyGrunt

That looked delicious, Andy. I'm amazed your salt block didn't at least crack.
It dawned on me...to clean off things like pizza stones, I will put them in the oven on a clean cycle (no chemicals, just heat). I think you could put the Titanium grate on a pizza stone or two in the oven, turn it on "clean" and let it go, the grate would get soft again and flatten back out. When weight is not an issue, stainless is the better choice for this application.

The T bone looked great (one side is sirloin and the other fillet) it was a big seller in the 70s 80s until we were hit with BSE (mad cow disease) and they banned us selling beef on the bone. You can probily make more money selling the fillet and sirloin separately but most flavour in meat comes from the bone.
    Keep up the good work

I have not tried this but it intrigued me. Take small squares of cloth and run them through crisco aka shortening or margarine and store in a ziplock bag that can be reused for more. Then wipe the surface of your rock before you put meat on or your pans then use the cloth as a fire starter the next morning.

Love all your videos, but have to say I enjoy the overnight ones more. Bang up job on the steak, love the way you cooked it.
