The elote looks amazing! It reminds me of a Canadian treat - poutine (originated in Quebec). Instead of corn and mayo, poutine is built on crispy fries and uses gravy. But, like elote, there is an endless variety of meat and cheese that can be used as toppings. I'm getting hungry. Anyway, thank you for this tour of Aguascalientes. I would love to visit!
I know both, chaskas and poutine but the taste is not even close... this cotn is grilled and regrilled with mayo and cheese and then goes in a pan and more cheese and many other stuff lol this place includes meat but the "traditional chaskas" don't call for it, although it's super clever that you saw a similarity :)
It would be easier to understand you if you would take off your mask when not really close to others, as I am a "lip reader" and get nothing from your comments.

aguascalientes is the cleanest city in mexico and has the lowest crime! I was born there and miss it very much
