I grew up in a Mexican family….my mom made tortillas and cornbread…and was a great cook….and the only food she ever baked was ham and turkey for the holiday! Lol…I on the other I hand learned to cook and baking became a passion so my kids got to enjoy all the baked goodies!

Update to my previous post...made these and added Ghirardelli Milk Chocolate Chips and they were excellent! Very flavourful, perfect ratio of peanut butter (I used Jiff), and they are thick and just melt in your mouth. This will be my go-to recipe here on out. Absolutely LOVE them!! Thank you Martha!🙏🩷🙏
I was looking for some reinforcement here before I skipped the fridge myself. ty for comment. she made it seem optional if you wanted to offer the cookies while they're still hot in a time sensitive way. I'm assuming refrigerating is not ideal for anything besides timing temp/freshness...
My Mama always rolled the dough balls in sugar before marking with fork. I made them today, but used white sugar, pinch of salt, and cinnamon mixture to roll before baking. SO good!

The best peanut butter cookies I've ever had. I didn't do anything fancy. I didn't use unsalted butter or fresh baking soda. I simply used what I had which was real butter and baking soda I had in the fridge and they were great...

I like a peanut butter cookie that you can actually taste the ritchness of peanut butter. They were a little more flourish... I was able to make about 32 cookies... Baked at 350 for 15 minutes..
I like using 1/2 rice flour and 1/2 wheat flour it makes a lighter cookie. If you are cooking for gluten free folk's use all rice it makes them really nice. Lol. ✌💞🇨🇦 KEH

My mom was a pagan cook--everything was a burnt offering. She bought our desserts at the grocery store. There was at one time a department store in downtown Youngstown that had a little diner on the 2nd floor and they were famous for a Boston cream pie, which is actually a yellow cake with a custard filling and a thick chocolate ganache coating. She would go get one once a month.

I skipped the extra half cup flour like someone else suggested. I didn’t have light brown sugar and used dark brown instead. 350 degrees 12 min. These were SO GOOD. So much better than the Betty Crocker PB recipe!!! Next time I will try it with the light brown sugar and extra 1/2 cup flour.

Does sifting make them drier? I didn't have sifter so used a whisk. I think I whisked too much because they are too dry. The taste was good though! I can't decide if I should skip the sifting next time, or use less flour. Either would probably help with the dryness.

Roll the peanut butter in sugar, and also use sugar not flour when you are pressing down the fork

I wondered how unsalted butter would make any difference....as she does add 1/4 t. of salt anyway. ??
It's just preference, most recipes call for unsalted butter so that you can control the amount of salt in the recipe.

Sifting flour takes out any clumps and makes the flour fine.
If your cookies are dry try more butter.
Water the fork and you save on the flour!
i use sugar to do the criss cross NOT flour!
