    When I first started eating mochi about 30 years ago it was baked. It was from Eden soy brand and came in a block that you had to cut and bake. It would puff up slightly and I would fill it with peanut butter and brown rice syrup.

    I am not really into mochi, but the crunchiness of these you baked sound interesting to my taste and I might try to bake them too ;-)

    Looks like they willmake great "road travelling" snacks. Especially if they had a topping (sesame, peanuts, etc)

    I was given a big pouch of date paste from a middle eastern shop (I think the one I was given was Saudi Arabian in origin). I wonder if that would work? I use it in my breakfast cereal and I think there's no added ingredient - it's just dates, pasted!
