WHAT I EAT IN A DAY - SUMMER EDITION!! (WHOLE FOOD PLANT-BASED!)

    WFPB Pancake Recipe
    (makes 5 to 6 pancakes)
    1/2 cup oats
    1/2 cup whole grain - buckwheat or barley or millet
    5 pitted dates
    2 tablespoons flax
    2 teaspoons baking powder
    1 cup plant milk
    1 tablespoon apple cider vinegar
    1 teaspoon vanilla extract
    Any Herb Pesto
    1 large bunch basil or parsley
    1/3 cup walnuts
    2 garlic cloves
    1/2 lemon, juiced
    1/2 to 1 teaspoon miso
    2 to 3 tablespoons water
    WFPB Tofu Tikka Masala
    (Serves 2 to 3)
    1 (14-ounce) firm or extra firm smoked tofu
    2 cubes crushed garlic (1 tablespoon fresh garlic, chopped)
    1 cube ginger (1 teaspoon ginger, grated)
    8 ounces soy yogurt
    1 tablespoon lemon juice
    1 tablespoon funegreek leaves (amzn.to/4aufNyo)
    1/2 teaspoon turmeric
    1/2 teaspoon garam masala
    1/2 teaspoon chili powder
    1/2 teaspoon ground cumin
    1 teaspoon paprika
    1 tablespoon+ 1 teaspoon miso
    1 (14-ounce) can chopped tomatoes
    1/2 cup water for cooking
    1/2 cup cilantro, chopped
    Cook for 15 minutes☺️

    Pancakes, sandwiches, a masala and melon milk. Voila! It has been quite enjoyable playing around with whole food plant-based. I think it's just a fun challenge for people who like to cook..like most people can make foods taste "delicious" when you get to use whatever you want - fry it, smear some frosting on it, melt some cheese on top...child's play!😜 But healthy eating is not all or nothing. Hopefully you like a few of these recipes and just start incorporating it into your meals. Slowly the whole gut biome changes and then IT dictates what you'll like😀 Anyhoot, hope you all are having a nice weekend and stay kind!❤

    OMG, I love pesto too!! Those pancakes were SO good when I tried them! Everything that you made looks so delicious lol

      I spoon pesto on top of a lot of stuff 😂 -- and most people think you need to drizzle a ton of olive oil on top but you don't. It can just be lemon juice and a bit of water😊

    I make my own soy milk using a ‘vegan revolution’ milk maker. Just soaked soybeans and water. It cooks and blends the beans and water. You do have to strain it at the end, bit it;s no biggy. Costs me about 36p a litre to make.

    I have been buying herbs in two or three bunch lots, washing, chopping or mincing them, and freezing them the day of purchase for 20 years. I save the stems of parsley, dill, and basil for soup stocks (cilantro stems are palatable and get minced with their greens). It's the best way to keep them. Enjoyed seeing what you eat in a day, because your diet is more restrictive than mine, but these recipes are easy and doable (I know the Tofu Tikka is). Thanks for posting 🙂

      Thank you so much. Music makes SUCH a big difference and I hope everyone goes and checks out the artists I include in the description too. I kind of scout all around all the time and am like, "yup that could work on a cooking video....or a vlog...or just general chill time"😂

    The Oatley organic oat milk is just oats and water. Nothing else. Or make your own oat milk to use immediately.

    this was so fun! i also live in the united kingdom so it is interesting to see / hear makes that i recognise. also, please do keep us updated about your blender! i was considering a vitamix a while back but didn't end up going through with it. i hope that you can find something that you like! take care.

      Thank you!! And yes yes I'll keep you all updated if I find a stainless steel one. Honestly it's one of the best buys I've made. I have had it for years and I make all my various grain and seed flours with it. But yah the container is a bit beat up and replacing it is pricey.
