It'd also be a lot easier if they didn't spread all of their stats around, if they were on a higher difficulty they would be toast. Health is nice to have but you really want most bosses, and frankly most enemies, dead fast so you don't have to use healing items or especially health potions on them.

its better to focus into one stat then spread so you do more damage

But if you spread it out more, you get more health, so it's better to do a little of both; get a lot of health, then you can focus one stat.
