Butter Chicken and Paratha (two ways)

- My daughter was home from College for Spring break and I made one of her favorites - butter chicken and paratha roti--my own version. Nothing says home like a mom's cooking and she thoroughly enjoyed it. In this video, I also show two results for the same dough, so watch till the end. You will be amazed. This is also a great opportunity to use all those spices in your spice collection! Hope you enjoy this delicious combo as much as we do.

Ingredients
Serves 6 - 8
To season:
3 lbs chicken, cut into large pieces, boneless thighs or breast
1 tbs minced garlic
2 tbs minced ginger
2 tsp salt
1 tbs Kashmiri chili powder, or regular chili powder
1 tsp turmeric powder
1/2 tsp cumin
1/2 cup yogurt
To cook:
2 tbs oil or ghee
2 tbs butter
1 onion
1 tsp whole cumin
6 cardamom pods
2 black cardamom pods, optional
1 cinnamon stick
6 cloves
1 can crushed tomatoes
1/2 tsp turmeric powder
1 tsp Kashmiri chili powder, or regular chili powder
1/2 tsp roasted cumin
1 tbs minced ginger
1 tbs minced garlic
2 tbs butter or ghee
Salt, to taste
2 cups heavy cream, or to taste
2 tsp kasoori mehti, optional
Fresh cilantro, chopped,

Really nice recipe, at the end of the chicken cooking, usually you sprinkle in a little crushed, dried kasuri methi (fenugreek/methi) leaves and that’s the defining flavor of butter chicken.

Yom. I would have seared the seasoned thighs whole and after they cooked then cut them smaller to simmer in the sauce. That way less pieces of chicken to deal with in the pan(s) initially.
