Maggie C Yes it is a crusting buttercream and even though you don’t see it in this video there are dowels within each tier. Then after it’s all stacked I hammer a wooden skewer though the center of the cake through all three tier. I have other videos hat show me measuring the dowels and stacking cakes.
Lety Ca It’s a Viva smooth paper towel and no it wasn’t frozen. I let the icing set for a few minutes so that it dries a bit before applying the paper towel to smooth it

I use VIVA paper towels to smooth out any imperfections in the icing. I have some other videos on my channel where I explain why I’m using them. Please feel free to check those out!

Heather W. There’s nothing wrong with freezing the cake as long as it’s wrapped properly. My customers seem to hate the idea of freezing cakes because they’ve all heard of cakes still being frozen in the center when cutting them. I normally bake a day ahead and wrap them in plastic wrap and if I feel like it’s too soft/crumbly I will sometimes chill it for just 30 minutes to make icing it easier
I also have a newsletter I send out with recipes on baking & cooking that’s free if you’d be interested and each week is a new recipe and video tutorial. And that works out I even have a Patreon account with more instructional videos and LIVE chats!

candy cane The icing is a vanilla butter cream. It’s equal parts unsalted butter and high ratio shortening with pure vanilla extract and a little water to get it to a consistency that is spreadable. As far as the cake goes just use your favorite chocolate cake recipe and substitute buttermilk instead of water and add a little sour cream to help maintain its moisture.
