    椰丝馅料: -
    材料:
    新鲜椰丝 - 200克
    椰糖 - 100克
    黑糖 - 20克
    清水 - 130毫升
    盐 - 少许
    玉米粉桨 - 1汤匙玉米粉+适量水拌匀
    班兰叶 - 2片(打结)
    做法:
    1) 椰糖和黑糖倒入清水, 中火煮至糖溶化。
    2) 加入椰丝和班兰叶, 炒出香味。
    3) 加入一小撮盐调味, 继续翻炒。
    4) 椰丝炒到比较干后, 加入玉米粉桨, 让椰丝有粘性。
    5) 取出班兰叶, 盛入碗种待冷备用。
    面团(包子皮): -
    材料:
    包粉/普通面粉 - 300克
    酵母 - 4克
    泡打粉 - 1/2茶匙
    玉米油 - 16克
    清水 - 大约160毫升
    幼糖 - 25克
    做法:
    1) 除了清水以外, 把所有材料倒入盆内混合均匀。
    2) 慢慢加入清水, 用手揉成团。继续在工作台上揉大约5-6分钟,盖着修面10分钟。
    3) 10分钟后,继续在工作台上揉一会儿便可以揉出光滑面团。
    4) 放入抹了油的玻璃盆内发酵至双倍大, 我用了40分钟。
    5) 发酵完成后, 按压排气, 平均分成10份, 揉成小圆球。
    6)擀成旁边薄中间厚的小面片, 包入椰丝,按照自己喜欢的方式捏出皱褶。
    7)发酵20-30分钟。水滚后, 中火蒸15分钟。蒸好后, 等5分钟才打开盖子。

    [Coconut Steamed Buns Recipe]
    Coconut filling: -
    Ingredients:
    Fresh shredded coconut - 200g
    Palm sugar - 100g
    Brown sugar - 20g
    Water - 130ml
    Salt - a sprinkle of
    Corn slurry - 1 tbsp of corn flour mix with some water
    Pandan leaves - 2 pcs (knotted)
    Method:
    1) Pour palm sugar & brown sugar into water, cook over medium heat until sugar dissolves.
    2) Add in fresh shredded coconut & pandan leaves, fry until fragrant.
    3)Add a sprinkle of salt, continue to fry it.
    4) Add corn slurry when the water is absorbed, to make the coconut a little bit sticky.
    5) Remove pandan leaves, serve in a bowl & let it to be cool.
    Dough (Pau skin): -
    Ingredients:
    Pau flour/ plain flour- 300g
    Yeast - 4g
    Baking powder - 1/2 tsp
    Corn oil - 16g
    Water - 160ml+-
    Caster sugar - 25g
    Method:
    1) Mix all the ingredients except water.
    2) Add in water slowly, knead into dough by hand. Continue to knead on worktop for about 5-6 minutes, then cover it & rest for 10 minutes.
    3) 10 minutes later, the dough will become smooth with only little time kneading.
    4) Place the dough into a glass bowl (apply some oil) to proof until doubled in size, I use 40 minutes to get the proofing done.
    5) Once the proofing done, press on it for degassing. Equally divide into 10 portions, make them into small ball dough.
    6) Roll out into a thick at middle but thin at edges slices, wrap in coconut filling, pleat at the way you like.
    7) Proof for 20-30 minutes. Once the water is boils, steam over medium heat for 15 minutes. Open lid only after 5 minutes.
