Love that y'all appreciate pastor! The pineapple is traditionally part of that taco and the 2nd tortilla is called la copia (the copy). In Mexico, tacos al pastor where first introduced by the middle-eastern immigrants and they are called "tacos arabe" (Arab tacos). Then the Raza made it into Al pastor. Tacos Arabes are still live and kicking in
"Al Pastor" means "in the style of the shepherds," because the locals were copying the shawarma rotisserie cooking style favored by the Arab immigrant sheepherders.
It was originally lamb meat though (“al pastor” translates to “the shepard’s way”). Pork was more plentiful in Mexico so they used pork. And Mexicans marinated the meat.
This is exactly the thread I was looking for! I always knew what “Al Pastor” meant literally, and that it meant should be lamb, but I didn’t understand why it meant the meat would be pork instead. Thanks! Also, now I’m starving lol

I am Mexican and I found something OK at Manchester, Arndale Market. Is called Panchos Burritos. Decent enchiladas and tostadas. Cochinita pibil is a must there
@AwesomeTea I believe roti uses wheat flour and other common ingredients in the west. Masa corn flour for tortillas, and other Mexican foods, though requires more than just corn alone. The corn has to be aged to maturity then dried completely. After its dried its cooked with calcium hydroxide powder and water in a process called nixtamalization. The softens the kernel hull, and makes the inside of the kernel starchy. After that it's cooled, and then ground into masa dough. In Mexico it's not hard to find these ingredients--Mexicans make tortillas daily. However outside of Mexico, particularly in places with few Mexicans, it's more difficult to source, particularly the calcium hydroxide. There was a reason that when corn was introduced to Europe, and they adopted it as a staple, some developed the nutrient deficiency known as Pellagra. Europeans never learned about the nixtamalization process. Nixtamalization enables vitamin B (niacin), vitamin C, and calcium among other nutrients to be easily absorbed by the body. Together with rice and beans (other Mexican staples), the trio forms a complete vegetable based protein.
@@danmur2797 That's true for corn tortillas, but we also have... wheat flour ones. Flavor wise they're just thinner roti. You get different types of wheat in different parts of Mexico, but the general recipe doesn't change much.
My guess is that the truck has a tray where you can pick additional things to put on your taco. Limes, cooked onions & peppers and other sidelines were probably just missed by the guys.

In case anyone wanted to know the reason al pastor is called what it is, is it's basically "shepherd style". The locals in Mexico saw Lebanese immigrants essentially making shawarma, and they started making tacos in a similar style, ironically with pork which Muslim immigrants would not have eaten, but it was originally made with lamb. The tortilla were pita bread. It was invented in I think the 1920s or 1930s.

Pineapple, is one thing people are every opinionated about, even in the realm of foods which are already a very opinionated topic. Those who do not like pineapple (for whatever odd reason), are typically very vocal and candid about their dislike of this fruit. Why? Who knows really.
from Spanish, "shepherd style" tacos al pastor, or tacos de trompo is a preparation of spit-grilled slices of pork originating in the Central Mexican region of Puebla and Mexico City, although today it is a common menu item found in taquerías throughout Mexico. The method of preparing and cooking al pastor is based on the lamb shawarma brought by Lebanese immigrants to the region. Al pastor features a flavor palate that uses traditional Mexican adobada (marinade). It is a popular street food that has spread to the United States. In some places of northern Mexico and coastal Mexico, such as in Baja California, taco al pastor is known as taco de trompo or taco de adobada. A similar dish also from Puebla that uses a combination of middle eastern spices and indigenous central Mexican ingredients is called tacos árabes.-

Tacos Arabes are still live and kicking in
Interesting. So that must be why the shawarma rotisserie is used.
@@khetto1 yeap, exactly! That's 💯 inspired by our middle Eastern bros
I lived in Southern California for 18 years, mostly in San Diego, and this is exactly what I miss the most after leaving. Not the "big box" style of TexMex, which I love, but the corner taco places. I call it SoCalMex. Best carne asada. Loved seeing you guys enjoying this food.
SoCalMex. Love it. As a SoCal resident born and raised, ima have to "borrow" this phrase.😄

There’s actual taco spots like this in Texas. It just depends what city and neighborhood you live in. In Dallas , you’ll find spots like this all over oak cliff.
You guys gotta make a Mexican friend to talk about the different foods because I was shocked that you guys were shocked about the pineapple on al pastor.
Seriously! I wish they had brought a Mexican friend along too to tell them about the food and culture. I was cringing when they called it Hawaiian taco and Hawaiian quesadilla 😅

You should always eat a taco with cilantro, onion, lime and salsa! In other places in Mexico they add a pico de gallo with it and tastes amazing as well! 🤌🏼🤤
I have the dirty penny/soap gene for cilantro, but in salsa that taste is gone. No clue how the tomato acid melds with it and makes cilantro palatable.
unless it's really high quality carne asada and then i want nothing spoiling the taste besides maybe salsa.
Depends on the taqueria and how they preferred. Ive gone to one that only cilantro and onion, others cabbage, frijoles and top the salsa.
I like when they have the little avocado sauce too
I'm Mexican and I don't like Pico de gallo
I love how Steven stares suspiciously into the taco trying to figure out where the pineapple went

Hawaii made pineapple globally accessible through first canning technology. But pineapple has a Central and South American origin.
The extra tortilla on the tacos can also be used to make another taco with all the bits that fall out of the original tacos. BONUS TACOS!
an experienced taco eater doesn't need to do this. experienced taco eaters can also eat a hard shell taco without making a mess.
Everytime I see Steven.. I would shout... EEEMOTIONAL DAMAAAGE. 😅
Great episode again guys!
For a time he didn't think he was that popular. He was letting people know he and his crew had an announcement at a Con. So many people took the time to shout EMOTIONAL DAMAGE! Take photos with him, and let him know how great and funny he is. 😊

Look authentic Mexican food is the absolute best food that exist. Im so lucky I've lived in Texas my whole life and get to enjoy their culture. The best places are the taquerias in the gas stations. Many are their own home recipes. They also make their own salsa and its so damn good.
As an American from Southern California that’s currently living in England and can’t find decent Mexican food anywhere… this video simultaneously makes me so happy for them and also so bitterly disappointed. 🙃
I am Mexican and I found something OK at Manchester, Arndale Market. Is called Panchos Burritos. Decent enchiladas and tostadas. Cochinita pibil is a must there
The ingredients can't be that impossible to source. Ok, probably not genuine handmade tortillas, but something close enough to enjoy.
@@donicarobinson24 If they can source roti locally then tortillas shouldn't be such a major logistical challenge.
The only criticism I had of any of this is the lack of limes. :( Lime is an essential topping!
My guess is that the truck has a tray where you can pick additional things to put on your taco. Limes, cooked onions & peppers and other sidelines were probably just missed by the guys.
I think the trick to these gentleman, is that they literally show and embody the joy that people have when exploring enjoying foods. They normalize new things, while being honest, but even if things aren’t spectacular, they still just appreciate what they’re eating, and why they’re eating it! Their simple and genuine excitement and joy makes me hungry every time lol
This is amazing! I’m an Arab American who loves latinax food and culture, I lovee this ❤

As a Salvadoran it was hilarious to see Josh so confused about al pastor tacos having pineapple. It's a given to any latino lol. Also, those are my fav tacos, I eat them weekly at any mexican restaurant in El Salvador.
Yeah, here in Texas we consider having pineapple salsa more of a Salvadoran or Honduran thing.

Pineapple, is one thing people are every opinionated about, even in the realm of foods which are already a very opinionated topic. Those who do not like pineapple (for whatever odd reason), are typically very vocal and candid about their dislike of this fruit. Why? Who knows really.
I didn't know that was an us thing haha but I guess it makes sense since it's not very traditional

from Spanish, "shepherd style" tacos al pastor, or tacos de trompo is a preparation of spit-grilled slices of pork originating in the Central Mexican region of Puebla and Mexico City, although today it is a common menu item found in taquerías throughout Mexico.

Fun fact: Hawaiian Pizza IS A CANADIAN INVENTION, created by Sam Panopoulos at the Satellite Restaurant in Chatham, Ontario in 1962. Inspired in part by his experience preparing Chinese dishes which commonly mix sweet and savory flavours, Panopoulos experimented with adding pineapple, ham, bacon, and other toppings.
Is that why in America on Hawaiian pizzas we put “Canadian Ham” on it?
