    To anyone that is having issues with a flatter loaf, I have some suggestions. Firstly, I have made this recipe tons of times to figure this out. (At least 20 times now). The place where I live is pretty humid, and the flour absorbs some of that moisture. My loaf would never get as big as his, and when mixing, a majority of the dough would be in the bottom of the mixing bowl with the dough hook attachment just mixing the top half. Please take the advice of John first: Weigh your ingredients, and use bread flour (higher protein content than all purpose). I started lowering the amount of water I was adding, and arrived at 280 grams of water as opposed to the 310 grams he states in the recipe. My loaf now looks like his with a beautiful rise and texture. I lowered my water content by 10 grams per attempt. i.e.- 300g, 290g, 280g. Don't give up on this loaf! Easily the most delicious bread I have ever made.

      A good way to make the bread stand up tall and not spread sideways is to create tension on top of the loaf. I like to drag the bottom of the dough on a surface without flour and the top tenses up nicely into a tight dough ball.. Also, I noticed that the scores on the loaf were wider if I created tension.

      Thank you, yes I have been having the flat loaf issue despite attempting the tight tension as described below so will lower water content next time, current loaf is rising in the bowl so a bit late to do it today.

      That’s very interesting. I’ve been making bread for a long time, but today has been disaster after disaster. The dough seemed quite sticky. It was a new bag of flour. Also I’m wondering if to use the oven without the fan setting. Any ideas would be appreciate. Thank you

      In the nicest possible way, you are doing something very wrong. John is already using a low hydration, that's baker speak for low levels of water. With a good bread flour this recipe is a lot better with 350g of water and with a decent all purpose flour 325g would be a minimum.
      Damp air can lead to an increase of 3% moisture in your flour, and it will spoil rather quickly if it is more than that. So, perhaps you could reduce the water by 15g, but as John is low on his water anyway...
      Look to your kneading and gluten development. Poor gluten development is the most likely cause of your issue.
      I'm not criticising John here by the way, he bakes in a 1980's style and he does that well.
      And, whilst I am here, drop the oil and replace it with 25g butter. Butter helps the dough hold gas and gives a good mouthfeel to the finished loaf. Vegetable oil diminishes the ability of the dough to hold gas.

    Hi John.. I’m a trained chef also but never tried my hand at baking.. I’ve just celebrated my birthday on 8th November n decided to ask the wife for a mixer so I could try my hand at it a bit.. I looked on TH-cam for inspiration and came across your video at the top of the list and to say I was inspired would be understating it!

      John's bread recipes are the ONLY ones I will use! They are precise and the breads come out perfect! I started baking bread just 2 years ago! I had many failed breads but never a fail using John's recipes and measurements.

    Hi John made the old fashion bloomer loaf this morning, a request from my Son who was visiting today, wow the loaf was enormous, a real family loaf, it looked amazing, my Daughter in Law said it tasted brilliant. I've tried baking bread before years ago unsuccessfully, but since watching your TH-cam videos, the different types of bread I've made have turned out much better than shop bought bread.     At 71 years old, I have been baking for decades but I only stick to a few tried and tested recipes and ones I know work out well. Bread is one thing I rarely make as it intimidates me a bit. I'm making this bloomer recipe right now and although the dough is beautiful, it hasn't risen as well as Johns but my house is quite cool due to the time of year. I started it at 9am and it's just gone in the oven now so 9 hours! I'm sure it'll still be delicious and I will be having it with the homemade butter that I made yesterday which was a definite success!

    Thanks for such great achievable recipes. Real confidence boosters. You mentioned how your oven temperature heats higher than expected. Thats one of the biggest tips you gave me. I just got a new oven and getting used to it is a learning curve for everything I’m baking. One side is hotter than the other. Cakes and breads I’ve been baking with good success in my old oven are a bit of trial and error in this new one!

    I've never heard of a Bloomer loaf before, so I tried making this over the weekend and it turned out great. The loaf was quite a bit larger than I thought it would be! And it had such a nice crust and soft texture inside! Thank you again for another wonderful recipe!

    What I appreciate most about your videos and your instructions is that my attempts look exactly the same as what you present in your videos.       Hi, John, I made bloomers (2 times), both times is not like yours. I added 310g of water, my dough was too soft, bloomer little bit flat. (I use UK strong bread flour, as normal) Normally l make your bread, bun recipes. They come perfectly. I always try your recipes especially bread recipes. Many thanks.

      It is a sticky dough Aruni, but you should be able to easily handle it as the video clearly shows, the more you knead the dough the easier it gets, are you kneading it for the full length of time, that's very important to the finished bread are you using fresh or dried yeast? if you are using fresh yeast take 20 grams of water off the recipe, lastly have you tested your yeast?.

      I had a similar problem, and it was my scales and yeast. Try replacing the battery in your scales, and weighing everything twice, and getting finer yeast. I found the breadmaker yeast too coarse and would have lumps of it flecked through the loaf. Once I did that, bloomers rose a treat!

      Is your kitchen too cold ? When I made my first bloomer it rose above the rim of two pint pot but the second didn't rise as well but my third one was as good as first I made sure my kitchen was warm and I put it in microwave to rise (no draft) don't turn microwave on tho 😁

      Freestanding loaves are more challenging to get it to rise properly. Try using some tension on the top of the dough by dragging the dough towards you along the table to create a tight, smooth surface on top. That way, it'll rise up, not spread sideways.

    Hello John. Really enjoy the videos. I appreciate ingredients by weight, I learned that lesson in bakers math. I notice every time you pop something in the oven the Dutch oven is always there. Is this how you store it? If so, what effect does heating and cooling have on the seasoning?

      Dutch Oven, Whenever I've finish using the dutch oven I clean it and give it a very thin coat of vegetable oil, and store it in the bottom of the oven so the heat when I'm cooking other stuff keeps it well seasoned as in non stick.

    i cant tell you how greatful i am for your knowledge n your channel this is by far the best on you tube ...english proper baking .. ive made your muffins over n over n there incredible ...im gonna attempt this today ...and ive been wanting your books for ages i tried on my phone but something went wrong then my partner was gonna do it on the computer then life hit n we had to buy a new car ouch thats been a little bit of a drain but ive finally saved the end payment n i get to finally get my hands on your books ... he's doin it now as i write this .... thank you for all your awesome knowledge ....just wanted you to know your channel means the world to me ...my grandad was a very special man he's passed now unfortunately but all his stories stay as fond as ever he used to bake n always said how baking from supermarkets is cheating n i couldn't agree more ...i used to work at asda n none were from scratch all came in on boxes ...like the doughs already done n frozen so i get what he means ..he used to tell me alll his wonderful stories back from his time .. army baking and all by hand then onto his shops getting up at 3am to make sure the shop had beautiful breads that used to queue right down the road ...i wish proper shops came back not like today anyway enough waffle from me ...wish me luck on this bread ...my first ever loaf .... practice makes perfect ...had your muffins for tea last night... john this channel is awesome but boy my waistline is gonna suffer ha ha ill only eat 1 piece of bread tonight ....yeah and the rest 🤗🤗....it didn't turn out i tried hand neading it what a disaster haha ill try again next week with my stand mixer ...i love hand neading them muffins ohhh what different dough ...ive received order confirmation for your recipe books 😀😀

      First!! go through my 4 main bread making rules below, especially 2 and 3.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here th-cam.com/video/HWpSbYV96_c/w-d-xo.html

    Hi John. Thank you for what you do. I've made 4 of these bloomers now to your exact measurements, rise times, cook time, all of it. And they are the best bread I've ever had. But while they all ended up full-size length and width, they were only 2 -1/2" - 3" thick! I'm hand kneading the dough for at least 10 minutes but even then it doesn't seem to take on the completely smooth and elastic exterior of the ball. I've been very careful to shape the loaf so the seam is under and the outer surface is smooth and it's oval-y. But flatten out, it does. In any case, we all love this recipe as well as the no-knead white bread. Cheers.

      @@JohnKirkwoodProFoodHomemade black bread sounds interesting, can't wait :-) In Germany black bread is made from coarse rye flour mixed with a little wheat or more, depending on the region. Has to be fermented well. I bake mine in the dutch oven. The crunchy crust depends on the wheat content. Less wheat, less crunch.

    So handsdown I made the very best bread I have ever had. And my brother wouldn't have been able to take the loaf out and play hockey with it like he did when I was a teen I wanted a perfect bread to try adding polish to and found that recipein John's cool book.. Swapped out melted butter for oil (personally don't like olive oil) this word out to be the most favourable bread I've ever had! Soooooo good. Ty so much! 💓

      Just a little extra information to help you along if you do try these baguettes.
      Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here th-cam.com/video/HWpSbYV96_c/w-d-xo.html

    I just try your recipe but with all purpose flour and it came out pretty good. I try Paul Hollywood’s blooming bread and it didn’t come out as well. I think I didn’t have measurements which you were great with the information. Thank you.

    I'm so excited!. I cut the bloomer dough in half to make 2 smaller loaves. I spread them with a little butter and sesame seeds and I SCORED THEM. It's very first time to score bread.

    I didn't know where to start John. So many great recipes to choose from. So I started with the Bloomer, and it turned out amazing! Thank you for helping me make my first successful bread!
    I've tried several times over the years and had mostly quite terrible results. I can't wait to try the French baguette and Ciabatta recipes.

    Thanks for this fantastic bread recipe. It was delicious. At first I thought I messed up with the measurements coz my scale is not as fancy as yours. While my dough was at d mixer I’ve been mixing it for more that 10 mins and was still sticky and stick at d sides of the bowl. I was so scared. But I floured it more on the counter while kneading and it worked. Proofed it for 2 hours than d usual hour. It stayed n rises well. Thanks John!

    Have taken up baking since watching your amazing videos John and have made a good few of your recipes and love all of them.     Hi John, Good day to you from Chicago area! Many of nights I watched your videos when I was sick and couldn’t do much of anything else. Always “planning” on making one of your wonderful looking breads! Got a bit better and went to local home store and purchased every thing I might not have had ie plastic shower cap lol and scale and other things of course than I got a lil bit better and started working again and bought a fan assisted double oven! Oh I’m going to make some great bread! Then life happened and it was work home sleep. I woke up in the middle of the night your channel popped up, sad to say it’s been nearly a year. I realized I have to stop and smell the bread. Your methodical voice calms me. You could do ASMRs and do well. Thank you for doing you!!

    This bread came out/was fantastic👌
    I recommend to put it back in the oven at 200degrees for a couple of minutes if you dont eat it right away. That way it really got a perfect crust. My husband loved it👏

    Also, John... I baked 6 loaves for a church potluck today after service today... I came home with crumbs and rave reviews! (I gave you credit!) It might be a difference of climate or flour... but I had to back off to 280g of water. I live in Colorado, USA.

      Well done with the recipe Stu, and I'm pleased it was a success. But you shouldn't have to change the recipe no matter where you live, 30 grams less water is a huge amount to lose in a small recipe like this. The dough will be very sticky at the start but it gets much easier to handle after the kneading.

    This looks very delicious. It reminds me a little bit of what we have here in the United States. We call it a Vienna loaf. Sometimes you can put sesame seeds on top or not. But it looks absolutely delicious. When I was in England, I tried a commercial version of this made from the Sunblest Bread Company. I don't know if they're still in existence, but it was very good.

    I have now made this loaf twice, the first time was delicious with an amazing crust but I shaped it badly so it spread sideways so then had to transfer it to a tin. Next time I did a bit of research on getting the bread tension right and wow what a loaf. As per usual I used my bread maker to do all the hard work and I finished it off and baked it, really delicious and I guess the oil made it last very well, thank you again.
